  1. In that case, here are some recipe sites in which you may find some "normal" recipes to follow (with fewer specialty products). There's an awesome recipe for brownies on the glutenfreegoddess site....I used whole almonds and used my cheapo electric coffee grinder to grind them into a flour. Turned out AWESOME. Open Original Shared Link Open Original...
  2. Like a few others, I am fairly asymptomatic....I'll feel tired, bloated and may get either D or constipation. I am guaranteed to be in a horrible mood for at least 3-7 hours.... I grew up in a house where my mother was always screaming (still is although better since being gluten-lite). I don't want to be that mother to my child. I've also lost all the...
  3. I couldn't tell you if the agave was high in salicylates or not. I can't imagine that it would be any higher than maple syrup as it is also a plant-derived sap. Hmmm....I haven't found any info on it either. I only know that it is also lower on the glycemic index than maple syrup. It's even deemed safe for diabetics. If you find out how it ranks, would...
  4. You can also use agave nectar as a substitute. I use it in baked goods and to sweeten lemonade or other drinks. I've also found that when used in breads, the bread rises better as it is not as sticky and heavy as honey. Plus, some varieties are very low on the glycemic index (at 16 or 17)....much lower than sugar, honey, maple syrup, etc.. The only thing...
  5. I agree with the magnesium and zinc deficiencies found in celiacs. But the ingredients in Centrum that provide these are precisely the ones which are found on Toxnet, HAZMAP and the other hazardous chemical sites. Plus, the sucrose in Centrum is made from asparatame....a neurotoxin. I've only researched 5 or 6 of the ingredients so far and it's a bit scary...
  6. We shop at a variety of stores as well. Marc's has been a blessing for getting fruits and veggies...many of them organic and at incredible prices. We also stick to whole foods as much as possible and I try to make big batches of foods to be frozen for later meals and snacks. Cabbage rolls, meatballs, spaghetti sauce, meatloaf, stews, chili....I make a...
  7. I agree as well about the dairy. If you run a search for Dr. Oski (a pediatrician), you'll find articles stating that over 50% of all iron-deficiency anemia in this country is directly caused by dairy consumption. Many people are intolerant and do not know it. We switched to rice milk. The Pacific brand is gluten-free and has a very similar texture...
  8. Yes, someone had posted that they were gluten-free. However, someone else had also posted some information in regards to some of the ingredients in Centrum that are toxic. I've been checking out Hazmap and a few other sites which offer toxicity information on chemicals being used in foods and other products and it is quite concerning. If you haven't purchased...
  9. It could take days, months...even a couple of years. It just depends on the individual and if you're dealing with a gluten intolerance only....or possibly multiple food sensitivities. Having 3 out of 4 blood tests that are positive for Celiac is a pretty big indicator that Celiac is indeed the issue. My dd was negative on her blood tests and I still...
  10. Yes, I do understand your point and I do agree to an extent. I have been working at educating my dd's teachers on this (as well as some of the parents in my dd's class). It is difficult to "forget" them as there does come a time when you either A) HAVE to send your child to school or seriously look into the feasibility of home-schooling. Life doesn't...
  11. Yep. Dumb people do suck. I am about to do the same thing with my dd as well since she also keeps getting exposed to allergens and gluten each and every time. My dd has a tendency to get really hyper and have trouble sleeping when exposed (the tummy aches are more of a rare occurence). She had been getting up at 6 AM every day since school began ...
  12. We also experienced the same issue and it was due to both casein and eggs. It took some serious revamping of our diet to accomodate a Gluten-free Casein-free diet, but it's been more than worth it. These days, I KNOW when dd has been exposed to casein or eggs based solely on her mood and behavior. It never takes long to backtrack and find a source of contamination...
  13. I COMPLETELY agree on that one!
  14. Thank you for the link on this. I do not use Centrum products and I don't feed them to my child either. It seems that since we began addressing the gluten and other food intolerance issues that the "logical" step for us was to keep things simple and not buy products that had ingredients we couldn't pronounce. For the poster who was looking for a...
  15. After a month of diet, it would be surprising (to me) that you aren't noticing any difference at all. I know that everyone is different and some people can take up to 2 years to get better...but NO difference? It may help if you double-checked all you are coming into contact with. Verify all your foods are gluten-free (including any rice mixes you...
  16. LOL! That's great news! And I can totally relate to you on this one because since I started the gluten/dairy/soy-free diet, I've lost over 40 pounds! The "skinny" jeans that I hadn't been able to wear in 7 years now fit quite nicely. And for Christmas, I've asked for some gift cards to my favorite stores because I fully intend on replenishing my wardrobe...
  17. "Well....we can't ALL be twinkie-eating lemmings!" "Don't worry, when you're older and incapacitated from eating junk, I'll pick you out a good nursing home and visit at least one a decade!" Or how about the obvious...."I didn't realize that you had recently graduated from medical school and had any grasp of gluten sensitivity and intolerance...
  18. If it makes you feel any less homicidal....my dh was famous for doing the same thing! lol! (Yes, I CAN laugh about it now as dd has been gluten-free for 2 years now and dh hasn't poisoned her in quite a while) I had to clean the house of all things gluten....minus his beer. That pretty much made the diet a no-brainer from that point on. lol! But Lord...
  19. That's not completely true...I saw a whole bunch of dairy and fat in there too! lol! JK! All food fights aside, this is a really good thread in the fact that it promotes thinking outside of the box and gives us all some new ideas to help expand our menus. I know that in the beginning, I was soooo focused on all of the foods that my dd couldn't have...
  20. With my dd, we did an elimination diet coupled with a food journal that documented foods, behavior, BMs, etc.. We pulled one food out for 4-5 days and documented any changes either positive or negative. Then, we'd introduce the food back in for one day and wait another 3 to see if and how things went. My dd cannot tolerate dairy, soy, eggs and food colorings...
  21. I'm with you on this one. With strong family history like that, it's much SAFER to just get them all on a gluten-free diet as opposed to waiting for a positive dx with blood/biopsy. To be honest, I'd probably be telling dh that if he wants the other kids tested, he needs to go in too. This does tend to be genetic and just because you have tested positive...
  22. Hi Amy! I'm glad that you found your way here as I know you'll get much more support and guidance. If you intend on following up with the biopsy, then going gluten-free now will not be condusive to what you are attempting to accomplish (as in get a positive diagnosis). However, should you go for the biopsy, I would highly recommend trying the diet out...
  23. I'm sorry that Crispix found its way into Ryan's hands! It's sad to say, but I've pretty much resigned myself to having to spend 2 months educating the teaching staff on Celiac and food allergies. Uggh! Such a pain. But what else can you do when life in a bubble is not a reasonable option? The best advice that I can offer you is to be as proactive...
  24. From what I have read, there is about 66-70% of kids with untreated Celiac Disease that also get diagnosed with ADHD. https://www.celiac.com/cgi-bin/webc.cgi/st_...-29104574600.43 The good news is, the gluten-free diet can reverse this. If not, then looking at other food sensitivities is important. The most common offenders besides gluten are casein...
  25. Celiac can cause all sorts of delays when untreated. I was going through PubMed articles last week and found over 40 articles connecting Celiac with neurological problems (which can also be tied to delays). And those articles were only by one researcher! In any case, I am sure that the diet will help tremendously and I'm also sure that an OT would be...
