Yeah I normally keep mine sauce super dry too because I usually use it for spiralized noodles but I added some water to this for the noodles to absorb. -

OOo I made the house some lasagna last night. Switched out regular pasta with the Tinkyada lasagna noodles. oh my!!! I followed some online suggestions instead of the box directions. I only boiled the noodles for about 2 minutes then too then out and lined them on the counter. I ran then through my olive oiled fingers so they wouldnt stick to each... -
Pasta is an easy cure. Tinkyada makes A GREAT rice pasta. If you only cook it al dente it doesnt taste like a bunch of those terrible corn/quinoa ones either. I made a beautiful lasagna last night and every person in the house was very, very happy. You can order this stuff online if you cannot find it in your grocery store. That being said, I hope they...

My SO plans on bringing his kitty over from Germany. It is currently living with his parents. We will be feeding her Royal Canin. His father is a Veterinarian and is the lead guy for RC in Germany so I am given NO SAY in the food his kitty will eat. hahaha I will be getting a kitten soon too and I refuse to pay the price tag on RC so I was looking at Blue... -
ARCHIVED Gluten Free Bakery
MycasMommy replied to Ennis-TX's topic in Gluten-Free Recipes & Cooking Tips
Ahhh this is great. I often think about doing this. Though grain free, not just gluten free. I do not have any advice for cost savings but DO NOT GIVE UP. keep on keeping on, even if it seems bleak at points. The people who make it and are really successful tend to be the ones that are the CEOs (the owner of the business). Just keep plugging along. ... -

MycasMommy replied to Vanir's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yep, dont give up the gluten until youve been tested. Otherwise you will end up in the shoes of so many of us who KNOW something is wrong but now react to gluten and other things so strongly that it is impossible to have even a little, even for a day so we will never really know the problem. Is there any particular reason you are giving up meat or is it...- 18 replies

ARCHIVED Test Kitchen
MycasMommy replied to MycasMommy's topic in Gluten-Free Recipes & Cooking Tips
I saw Iceland girl made coconut crusted fried chicken. That is how i do it too. Coconut flour and shredded coconut. I am so glad you try it! Hmm I do not know about FRYING the yeast raised donuts, I have baked them though and they were fantastic. I am just committing my self to once a month going after a product sold packaged that I cannot handle and making... -

It may very well be the corn. That bottle doesnt SAY the vinegar is from malted barley. I thought it was safe too. Maybe it is, just not for me. I have read several different places where it says it does have the malted vinegar and others where it does not. I frankly do not know if I am super sensitive and the amount in it minimal so does not bother others... -
I am going to make a trial run at home made A-1 Steak Sauce. The original ingredients include malted vinegar (even though it says just distilled vinegar on the label!) as well as corn syrup. I will have to play around with ingredients and measurements to get a good consistency. I am going to make a simple syrup (sugar and water reduced) and try one batch...

Buffalo Chicken Sloppy Joes & Home Made Blue Cheese/ranch Sauce
MycasMommy posted a blog entry in Brynja's Grain Free Kitchen
All the flavour of chicken wings from the local pub around the corner. Topped off with a yummy, creamy "dressing" and carrots and celery on the side for extra dipping. This is just as messy as that Styrofoam container of wings, so get out the napkins! Its a heck of a lot healthier though. For the meat: 3 tbsp butter 2 lb ground chicken breast ... -
I just tried a bread that used sorghum as one of its ingredients the other day too. It was a trial as well. Yes it makes a big reaction. ONLY bread made of rice, coconut flour, almond flour is a safe thing for me. It seems that rice it the ONLY grain I do not have a reaction to and even then, sometimes it does not sit well. I have gotten some great grain...

I just wanted to chime in with this. Her parents, may in fact, being doing all they can to help her. She is old enough to go out in the world and stop at Subway of the Cookie Corner. It is a transitioning time and it won't matter if your parents are doing all they can for you at home. You have to do for you too. My 17 year old doesnt have a Diagnoses yet... -
(One of my students learning how to make guacamole) TEACH YOUR CHILDREN TO COOK! Like their life depended on it. It DOES! So I am just going to keep gluten-free and grain free recipes in this blog. I love to cook and since I have a severe and immediate reaction to gluten and corn and I just try and skip soy... I skip the grains. With the exception of...

ARCHIVED What Is Super Sensitive?
MycasMommy replied to jasonandsarah's topic in Super Sensitive People
You also may be sensitive to something else. Corn (in any of its forms) makes me just as sick as anything in the wheat family. While it would be (and most definitely IS) a PITA to edal with a strict elimination diet, it may be worth it to find out if it is something else. Maybe your daughter is not allergic to it but you are. Maybe have a trial run at SCD... -

ARCHIVED Paleo Diet... Did It Really Help?
MycasMommy replied to alesusy's topic in Food Intolerance & Leaky Gut
Ive been doing a version of paleo called Primal. Its still grain free, which is great for me as I am unable to do corn and most other grains whether I like it or not. I CAN do dairy. I have become a pro with turning all italian pasta dishes into magnificent beasts with my handy dandy spiralizer too. Anything a person can make with bread a person can make... -

Hmmm because she is almost 18 ( I only have 1), I just dont know If I should make her forst appointment with a doctor here in Seattle with a pediatrician or a GP. Which is more likely to follow her with this do you think? I am going to be a bit aggressive about testing either way. The big factor here is that my daughter KNOWS how sick I get but she isnt... -
ARCHIVED Literally Unable To Gluten Challenge
MycasMommy replied to MycasMommy's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I have taled to my surgeon about it. He is pretty much in agreement that I most likely now have celiac but that trying a gluten challenge would basically be somewhat deadly. There really is nothing to be done for confirmation. I am also one of the really lucky (or some would think unlucky is they dont want to stay eating properly) people. Its 2.5 years out... -
I asked specifically what were the ingredients in the crust made from. The waitress went and asked the manager. The only answer I got back was it is Rice flour. I only react to rice once in a while (gliadins are really low) and so I gave it a whirl. They did, indeed, have a separate, plexi glass enclosed, little area of the counter with all its own specific...
