Leftover (second pan) of Artichoke & Sausage Baked Ziti tonight but for lunch? I just pulled these twice baked potatoes out of the oven. Stuffed with sharp white cheddar, green onions, butter, sour cream, salt & pepper. OH MAI BELLY IS FULL!!! -

YEP! Notes: One LARGE onion will fill two olive jars or one spaghetti sauce jar ( I always make my own spaghetti sauce so I have to use olive jars). and they last for months of pickled onion happiness. OH SO YUMMY on pulled pork carnitas!! yesh! -

If you do decide to do a trial run off of gluten, it will take a few months, at least, to get it all 100% perfect. You may notice relief right away though. Your small intestine is HUGE and the damage may have just been undetected. That your GP and GI do not KNOW this is a warning sign that they do not know very much about celiac considering your blood work...- 7 replies

Brynja's Artichoke & Sausage Baked Ziti This one is not grain free. I used Tinkyada pasta. It is ONLY made from rice and it has GREAT texture. It is the only grain I have found that my body will agree to. If you are unable to have any grains, you can modify this with some carrot noodles spiralzed! I've done it that way too. It is SO EASY to make your own pickled onions though. Save a couple of jars from some other product with lids and wash them up well. I do a huge red onion (so it turns pink in the jar) with some vinegar and sugar, i toss in mustard seeds and coriander seeds.. hmm what else, a star anise, a little bit of cinnamon, and a sliced japapeno for the pretty. I did up an Artichoke and Sweet Italian Sausage baked Ziti (Tinkyada, I <3 you) and in the fridge, awaiting our drool, is a White Chocolate and Amaretto Cheesecake on a grain free almond/amaretto graham style crust. There is also a bottle of Tangello (Limoncello orange style) in the freezer to go with. -
I wish I could eat Udi's ! I am so glad they are making a regular big loaf size. Now you can make some wicked grilled cheese sammies!

I supplement folic acid twice a day every day. It always came back low before that. My vitamin D is always low too and I supplement the heck out of that to no seeming avail. The folic acid is working out well though. -

Actually, that is a great idea Bartfull. Go through the different restaurants there (or food carts?) and print off everyone's gluten-free menu options. Make 3 copies of it all. There are many restaurants at universal right? Open Original Shared Link All you can do is a little pre research, print out the avaiable options and hope for the best that she doesn't get glutened. The only other thign I can think of is that you DO pack a week of food in a cooler... if she is staying in any kind of hotel they should have a mini fridge...- 12 replies
