I'm in the middle of that book now....it's extremely interesting and not something that has been discussed very widely in the media....the authors feel very strongly about their subject and make a lot of familiar comments related to the...ahem....nutritional incompetence of the average doctor. Their ideas about eating are rather different from all the fitness... -

Maybe you have additional sensitivities....casein (dairy), soy, starches? Eliminating gluten seemed to make my other sensitivities come to the forefront. And in the testing for celiac that I did, I found out I was also casein sensitive and can't eat that either. So I'd suggest looking into other things that you eat regularly and consider them possible... -

I have had periods of time in my life where I began to believe there wasn't a single food that agreed with me, and that included vegetables and fruits. Sometimes I think these gluten free "substitute" copy-cat foods are possibly worse than the real thing. They definitely don't agree with me. They are full of weird things, starches, lots of sugar. Not good.

I always thought carrots were fairly high in sugar for a veggie...which is why a lot of weight loss diets say don't eat them. OK. if that's true why is the SCD stressing them so much if we are to be careful with sugar???? It seems like we'd be better off eating some other vegetable... And Rachel...exactly how many carrots are you eating each day??? -
I also found "Breaking the Vicious Cycle" totally fascinating...it has a very good chapter devoted entirely to celiac disease, and it has some information that I hadn't read elsewhere. Very very thought provoking, to say the least. A different perspective on all this.

Carrie...you've got to get Dangerous Grains. It was actually the first book I read on this subject, and after having finished about 5 or 6 of them at this point, it's still the best and most eye-opening. Actually, it's a book EVERYONE who eats food ( ) should read. People need to know this stuff whether they are celiac or not! -
I'm not sure I'd subscribe again....I've been a bit disappointed with the content, and subscribing seems to generate a fair number of sales letters from them selling variou vitamins, etc. The newsletter is moderately interesting at best. Absolutely, I fit all the descriptions of asthma, although despite having very thorough testing on several different occasions over a 25 year period, doctors kept insisting whatever I had was not asthma. They were willing to prescribe the Advair inhaler, though, and at one period I had an emergency inhaler, too. What I can't remember is if during the summer... -

Sorry Ursula, but I don't agree with you. My regimen isn't a killer one (30-45 min. per day), but it came from the recognition that I did so much better with some kind of activity on a daily basis. My target cardio is 3 days, my weight days tend to be 2 days, and to get weight down I need to do cardio pretty much the 6 days. I use a heart rate monitor... -

My Enterolab results were very much like yours, and I got mine back just a couple of weeks before you did, so I haven't been at this long either! I'm finding the elimination of casein really hard. I sympathize completely, and I felt the same way at first. But you lose your feeling of helplessness by being very proactive....get all the information you can to begin with. I went into a flurry of reading like crazy to just find out everything I could. I read about 5 books which really really gave me the information which in turn gave me the resolve...

I subscribe to Dr. Susan Lark's newsletter...the March issue just came and it has a great big article on celiac disease. Nice to see it get some prominence. Dr. Lark feels gluten should be minimized even by people who don't have celiac disease.

Starches are also a problem for me, and fat isn't. Although I have to say I don't eat much fat anyway....just olive oil on salads and moderate nuts. That's about it. Beyond the wheat and dairy, once those were out of my diet it became obvious that starches (especially potatoes) and sugar were both no-nos. To lose weight you really have to seriously address... -

I have the gluten/casein thing going on too...and I'll say that I think the casein is harder than the gluten. Avoiding both these two rules out a huge universe of foods and leaves.....just a few plain, but very healthy things to eat. -

Grain products are HUMONGOUS....think of all the products...bread, cookies, crackers, an impossibly huge cereal aisle with the ridiculously overpriced cereals. I just could NOT do a challenge because I know how sick I would be. And for what purpose? You know, a lot of people have a lot of dietary limitations. My son is deathly allergic to peanuts, and that allergy cuts out most cookies, candy, chocolate, bakery goods....the list is long, and he has to read labels as much as I do....except that if he accidentally eats some peanut it could possibly kill him. OREO ALERT.....Did you know that at www.kinnikinnick.com you can order a box of cookies they call K-Toos, and the look exactly like an Oreo and taste pretty darn close. REALLY close! You can get used to it, and live with it. I gave one to my husband and he thought he was the real Oreo, they are that good!

One of my favorite things used to be poached pears with a Creme Anglaise sauce. Very easy....You'd just poach the pears in some water with sugar (can't have that now ) a stick of cinnamon, and a couple of cloves. Cook till tender, and let them sit in the water for awhile to absorb the flavor. The Creme Anglaise was a think pour-over sauce kind of like... -
I think one reason people don't get it is that we don't generally look physically sick or anything....and after all, they don't go into the bathroom with us to see what goes on there....
