ARCHIVED Apt. With Nutritionist Last Night
CMCM replied to danikali's topic in Coping with Celiac Disease
Dani....remind your parents that you got a GENE from one or both of them! I knew my mom was celiac, so I half expected to get a gene from her....but my big surprise was that I had TWO genes....one for celiac and one for gluten sensitivity....so my dad had something going on too! Also...were you diagnosed by the Dr. Green who wrote that new book "Celiac... -
ARCHIVED Apt. With Nutritionist Last Night
CMCM replied to danikali's topic in Coping with Celiac Disease
Big Sigh! Well, we all know doctors, and most likely nutritionists too, just don't like to admit when they don't know about something. OK, so give them credit for not having encountered someone with celiac disease. But here's my question: When they encounter the possibility, when they have a PATIENT telling them stuff they don't know much about... -
ARCHIVED Kinnickinnick Donuts
CMCM posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I ordered a bunch of stuff from Kinnickinnick (can't remember how to spell it). I tried one of their chocolate covered donuts tonight...and it was actually very GOOD. A real treat in this gluten free desert! I also got their plain bagels....toasted half and added some butter....not bad at all (not great compared to a "real" bagel), but fairly passable... -
I don't seem able to eat very much at one time any more (in terms of volume). For me, a binge doesn't inolve all that much food. Tonight I had a salad, some beef slices, and then I tried some stuff from my box from Kinkinnick...a half a bagal and one of their choco covered donuts (yum!). That was too much food as it turns out, and now my stomach hurts...

I actually find a lot of gluten-free items up here. We have two health food stores that stock various items, and I've even found a few specifically gluten-free foods in our local market. And the health food stores are very accommodating...they say as soon as I get a list of requested items they'll see what they can get. They say there are a fair number...

I think you just have to make peace with it. I suppose the hardest is for the person with NO symptoms at all...it would just be hard to accept that the condition actually exists. If you get really really sick, I would think it's easier. Then for the group in the middle, there's perhaps a bit of struggle. I do find it's getting easier for me. I don't...

ARCHIVED Bread & Bread Recipes
CMCM posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I'm really missing toast with breakfast. I got some of the rice-pecan frozen bread, and it's OK but not that exciting. I'm wondering if anyone can recommend a....dare I ask it....fairly good bread, either already made or a mix or whatever....one that doesn't fall to pieces and which will toast nicely. ALSO....is it worth trying to do anything in a... -
I always figured I was lactose intolerant because you can read about it so much, and there are lactaid pills, etc. Supposedly 75% of people actually are lactose intolerant! So in the process of my celiac testing I find out I'm also casein sensitive. Now I'm wondering if I could actually be BOTH at the same time??? And how would one figure this out?

ARCHIVED New With Questions
CMCM replied to angxmas's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
As a baby I was much like your daughter. My mom couldn't breast feed, I couldn't drink cow's milk, I had terrible colic for months, and finally I was able to drink goat's milk. So my whole life I always knew dairy was an issue, but I actually didn't consider the celiac thing as a reason for my digestive problems. My mom was diagnosed celiac back in 19... -
ARCHIVED Who Here Has Not Been Tested?
CMCM replied to Linda352's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Linda....at the point where I became suspicious that I might be celiac, I KNEW I would be bypassing doctors. This very site made me aware of other options. Being a person who just "had to know" more definitively, I sprang for the complete Enterolab tests, which for $349 gave me far more information that I ever would have gotten from my local clueless doctor... -
ARCHIVED Genetic Testing
CMCM replied to mamaw's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Why don't you do the Enterolab gene test? It's $149. They send you the swabs, you follow directions in getting the sample (from your cheeks, inside your mouth) and send it back. Quick and easy! With this doctor's attitude I wouldn't give him a penny. The money paid to Enterolab goes to their Intestinal Institute. -
My teen son works at our local MacDonalds, and I asked him about the fries. They do have a dedicated fryer..BUT...he mentioned that one evening a couple of the employees were trying to create a fried apple pie similar to what some other restaurant has, and they stuck one of the apple pies in the french fryer so there you go...possible cc from the crust of...

ARCHIVED Pf Changs In Atlantic City
CMCM replied to TinkerbellSwt's topic in Gluten-Free Restaurants
I love Changs! They just changed their gluten free menu a bit. I used to get their mango chicken, but that has been replaced by a dish called something like "Phillip's Better Lemon Chicken", which is wonderful too. I also had the "Budda's Feast" steamed mixed veggies (broccoli, pea pods, the tiny corn cobs, asparagus, carrots). But after having all these... -
ARCHIVED Do Your Kidneys Seem To Hurt?
CMCM replied to penguin's topic in Coping with Celiac Disease
I deliberately ate some coffee cake on Saturday, I think it was (very bad decision!). About an hour later the first reaction I got was an aching neck and lower back, arms too, and that was followed by pain and burning in my stomach. This lasted maybe 12 hours. I never used to connect my aches/pains with gluten...but I've spend a fair amount of time going... -
ARCHIVED The Paleo Diet
CMCM replied to covsooze's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Nancy...what is the recipe for lemon curd...I LOVE that stuff but haven't had it for ages. And how do you do the crepes? Also, about ghee...does that mean there would be no casein in it? Where do you buy it and how is it sold...in a can or something? Trader Joe's? -
ARCHIVED gluten-free Humus
CMCM replied to gointribal's topic in Gluten-Free Foods, Products, Shopping & Medications
I got addicted to hummus when I was living in the Middle East. The best is when you soak and cook dried beans, but I never have time to do that so I make my own... 1 can garbanzos, drained juice of 1 lemon lots of chopped fresh garlic..to taste about 1 to 2 big T of tahini 1-2 T olive oiil Mix well in blender, and add extra water in small amounts... -
ARCHIVED Rice Pecan Bread
CMCM posted a topic in Gluten-Free Foods, Products, Shopping & Medications
At my local market (!!!!) I saw in the freezer two loaves of Good For Life gluten free bread....a plain rice one and a rice-pecan one. Has anyone tried these? They seemed very dense and heavy. I'm looking for something that will toast decently. -
ARCHIVED Specific Carbohydrate Diet?
CMCM replied to PreOptMegs's topic in Related Issues & Disorders
Nancy...thanks for all the tips. I'm going to Trader Joe's today and get the milk, so maybe I can start it tonight. I still have some starter powder in the fridge, so I'll use that. -
I've been good today. But I cheated yesterday with one of my favorite junk foods....Sara Lee Pecan coffee cake. Sigh. And I paid for it big time last night. So I was very good today.

ARCHIVED Endoscopy & Biopsy Question
CMCM replied to yunalesca's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
For what it's worth, I recently read somewhere that the intestinal damage CAN be submicroscopic, and therefore would be missed. Presumably this would be an earlier stage of damage, and the damage would only be visible after it was more advanced. The blood test indicates activity, and you should take that seriously. How could following the diet for awhile... -
YUM....I LOVE banana bread. I don't think I've seen those mixes you mentioned. How do you make it...just a regular muffin recipe on the box or something, and then add the bananas? You don't have to do anything to compensate for the extra moisture from the bananas? I used to make banana bread which had almond flavoring and some coconut....to die for! ...

ARCHIVED Specific Carbohydrate Diet?
CMCM replied to PreOptMegs's topic in Related Issues & Disorders
Hmmm....since we're not dealing with actual milk here, I wonder if it's still necessary to let it go for 24 hours??? I don't like sharp tasting yogurt....previously I would considerably shorten the time so I could get a mild flavor. I wonder if it would be the same with coconut yogurt. -
Monica...I had to laugh when I read your comment that if you can't eat what you're in the mood for, you just don't eat. ME TOO! My husband thinks it strange...to him, if you're hungry you eat SOMETHING. But it doesn't work that way for me! As for how I cook, it's all gluten free but then my husband might eat breakfast with a piece of toast whereas...

Rachel....your comment about the eyes got my attention. My 20 year old son has been bothered by his eyes since he was about 6 or 7. We have tried everything imaginable...opthalmologists, neurologists, you name it....and no one can figure out why his eyes hurt. Of course, the end diagnosis is that he does it to himself. Where have we heard that story before...

Hi....I'm in Nevada City (in the foothills, between Sacramento and Lake Tahoe). I went to graduate school in Fresno, so I know the area (we lived in Clovis) ! Hang in there....I think it will get easier. I'm feeling overwhelmed right now too, but I have my mom as an example...and she learned to live with celiac quite well, all alone, with no support group...
