  1. I adore Greek yogurt. I used to make my own....after the yogurt was done, you put it in cheesecloth over a straner and all the liquid drains out and the yogurt gets thick. Have you tried anything like that with coconut milk yogurt? Also...you didn't say....does it have a coconut flavor?
  2. My brothers and sister are totally resistant to the idea of testing. When my gene test came back with the celiac gene (expected, since my mom is celiac) and a second, gluten sensitive gene...now THAT was a huge surprise. My dad died in 1989 (cancer....bladder!!) and we had no idea at all. However, in retrospect, my mom can now see the connections (after...
  3. I've had dairy problems my whole life and as a result, I'm always avoiding dairy. Several years ago when I went on the Atkins diet for 6 weeks, I ate about 2 oz. of hard cheddar cheese a day and was shocked as heck that I didn't appear to react to it. Since on that diet I was only eating protein things (meats, eggs), minimal veggies, no dairy other than...
  4. Hmmm....how do I feel? Well, I think denial is one aspect of it. I got the tests so I'd know for sure. And now that I know I'm trying to ignore what I know! I spent my childhood with a celiac mom, although she was finally diagnosed around the time I got married, in 1969 so my childhood was spent sort of observing her symptoms, although kids are kind...
  5. I'm using the Smart Balance Omega Plus spread, which specifically says "gluten free" on the container. It says it has less than 2% whey, and also has some soy, but I don't seem to react to it. I don't use much...mainly just a tiny bit to cook my scrambled eggs in, and that's it. I'm extremely senstive to casein, also soy, but this one works well for me...
  6. OK, I've had the tests, I know I should be totally gluten and dairy free. So I eat properly for awhile, and then I feel so much better that I break down and eat something with wheat. Like last night I stupidly bought a Sarah Lee pecan coffee cake and ate 4 small pieces of it. I knew I'd have trouble but I did it anyway. Three hours later I was in horrible...

    ARCHIVED Constipation

Eating is such a headache for me. I can't eat dairy so that cuts out a lot of possibiilities. And tuna seems to upset me for some reason....maybe the added soy or something. I also like fish that doesn't taste fishy, but I hate cooking it. When I can find resh Atlantic salmon I get that....I have one of those little George Foreman grills and it works...
  8. RE: "Yes, I bought some Bob's Red Mill Raw Whole Flaxseed awhile back, got really excited - until I took a spoon full and realized it still has the husk on it. So the grinding is definitely something I'm going to try for this stuff. So does the Prizzey's brand that you buy still have the husk on it?" Pizzey's was the first golden flaxseed I ever tried...
  9. You are very lucky to have a doctor who was open to the idea, and when realizing she didn't know a lot she actually went to find out about it. Unfortunately, a lot of doctors don't bother with it!
  10. re: "Can gluten sensitivity create a sensitivity to casein?" I don't think so....you are either casein sensitive or you aren't. I belive the celiac situation can create a lactose intolerance, though, which seems to be a temporary condition...i.e. after the intestinal villi heal thru a gluten free diet over a period of time, then the healed villi can...
  11. Perhaps I'm understand it all wrong, but I would think if you are only lactose intolerant then you COULD possibly eat dairy later. But I was tested as casein sensitive, and like with gluten, I should NEVER eat dairy. And like with gluten sensitivity, casein sensitivity never goes away. Maybe I'm wrong about this, though... Do you use any particular...
  12. Besides gluten and dairy, I pretty much avoid soy even though I didn't test postive to it. I also get sick from potatoes (which I love) and cooked tomatoes bother me sometimes, although I don't think raw ones do. I also avoid fried things.
  13. I was absolutely positive I was intolerant to soy. Soy sauce kills me, but of course that is due to the presence of wheat in the soy sauce. But I tried soy milk in my cappuccino one time, and that messed up my system too. After I got all my Enterolab tests back, I did the egg/yeast/soy test, and it all came back as negative or normal. Go figure. But...

    ARCHIVED Bananas

Way back when I was getting a lot of allergy testing done for my son, I remember his allergist saying no one should eat any one food every day...that most foods should be on a 4-day cycle...especially the foods that are often allergy causing foods. I have a friend who loved strawberries, but one spring she ate quite a lot of them, every day, and one day...
  15. I'm just curious about what prompted you to get tested in the first place....were you having some symptoms? Your results were somewhat similar to mine, except that I showed up with one celiac gene and one for gluten sensitivity. And the dairy didn't surprise me all that much because I've always had terrible digestive problems with dairy, more so than with...
  16. Apparently huge numbers of people have no symptoms, but are nevertheless getting intestinal damage. Some people don't find out they have celiac disease until they are diagnosed with some sort of cancer...for example, the intestinal cancer rate of celiacs is 33 times greater than the rest of the population. Many people don't get symptoms until adulthood...
  17. I'd suggest taking matter into your own hands and get the Enterolab full panel test....it will test for antibodies and autoimmine activity, and also for malabsorption. Plus you get a more detailed gene test, and one for casein sensitivity. I found out that I had both the celiac and the gluten sensitivity genes, AND more important, that I am casein sensitive...
  18. Why not just do the Enterolab stool test? It supposedly picks up much more than the blood tests do...with the added plus that you don't have to be currently stuffing yourself with gluten to get an accurate test. I think a lot of us make this diagnosis thing more difficult than it has to be. And let's face it....doctors with their traditional and often...
  19. I was browsing in Barnes & Noble last week and came across a book which looked fascinating....so I bought it and have already read it twice and have highlighted the dickens out of this book! The title is "Mastering Leptin", and as I read about leptin I realized that here is another topic (like celiac disease!!) that virtually no doctor seems to understand...
  20. I'd really recommend getting and reading every word of this book which I recently found....called Mastering Leptin. Leptin is something which, like celiac disease, is poorly understood by doctors, and it seems to play a very important role in weight loss. This book is fascinating. Here's the amazon link: Open Original Shared Link
  21. I was in the bookstore yesterday and came across the SCD book....so having seen a lot of mention of it here I bought it. Absolutely FASCINATING reading....I read the whole thing in an evening. Only problem for me is the inclusion of a fair amount of dairy (especially the yogurt) which I unfortunately have to avoid. Otherwise, I'd love to try the diet...
  22. There seem to be a number of doctors/researchers who are pushing for the elimination of the biopsy as the main diagnostic tool. Blood tests can be unreliable. Enterolab's stool tests claim to have a much greater diagnostic capability, but that has not be accepted yet by the broader medical community (unfortunately!!). There may be occasional reasons for...
  23. Some articles I've read say that many doctors would actually like to eliminate the designation "celiac disease" and call the whole thing something like "gluten intolerance" or "gluten sensitivity." These doctors consider the condition to be a spectrum of reactions, ranging from no observable symptoms (yet possible intestinal damage could still be occurring...
  24. A few years ago I tried the Atkins diet (similar to South Beach diet) and this was before I knew I had celiac. I was trying to lose about 15-20 lbs. that just wouldn't budge with other means, including careful diet and tons of exercise (6 days a week!!). On Atkins I felt pretty great and easily lost weight. In retrospect, I realize it was due to the total...
  25. Keep in mind that you have a daughter who was diagnosed positive; she got her gene from one of her parents, and it could have been from YOU! So you are right to be suspicious about your own symptoms. It might be useful to test yourself to see if anything is going on.
