  1. You're completely normal. I remember how hard it was the first Thanksgiving and Christmas. It's okay to grieve - you have had a loss. The only thing I can say is that it does get easier with time - but I know that doesn't help right NOW. Enjoy the foods that you can eat and enjoy family and friends and hang in there.
  2. Is it like a musty/moldy smell? I had that when I was on prednisone and discovered that I had a huge yeast overgrowth.

  4. I agree with Ursula, Beverly and Richard. I actually have a kidney disease that can be controlled with medication, but found that staying gluten-free keeps it in remission. I'd take the gluten-free diet over medication ANY day, for any of my health problems.

  6. I prefer rice flour gravy. I'm drying my bread for stuffing right now. I'm using half a loaf of Ener-G Light Tapioca bread and half a loaf of Trader Joe's Brown Rice bread. You could use any gluten-free bread. I cut it up into small cubes and then put it in the oven on 300 for 15 minutes and then I'll just keep watching it to see how much more it needs...
  7. Sorry I can't help you, but I would love to find such a recipe too! I've experimented with adding flax meal and Montina flour to a rice based recipe and it was okay, but not exactly what I was hoping for. I have such a hard time eating/watching my kids eat bread that looks like Wonder bread.
  8. I don't have the genes either, but am gluten intolerant. Please think long and hard about going back to gluten if you're having symptoms when you reintroduce it.
  9. I think it works either way. I toast mine because my recipe is based on the pre-packaged stuffing mix that has the crouton-type cubes. I don't want to have to figure out how to adjust the liquids. Whatever your original recipe says to do should work fine.

  15. All four of my kids tested negative, but the doctor and I agreed that one son should try gluten-free anyway. He has had great results. I know it's not all "conventional wisdom" (but it will be in 10 years), but try to limit sugar, eat lots of fiber (darn, no oat bran), limit fried foods like chips and fries, completely avoid trans fat (hydrogenated oils) and get regular exercise.
