Franceen, I can ditto your 2-3 hr label reading trip to W-M for the elusive gluten-free Great Value brand foods. I had similar results. I was really bummed, because I had gotten psyched for a treasure trove of new foods. The only thing I can add to the sparse list you made is the Great Value apple juice. Woo hoo! Yes, soy has been a big problem for me. I pegged that one quickly. Just within a couple of weeks of gluten-free I realized dairy caused a problem. I switched to Silk....arghhhh! I think the SCD would be great to determine additional intolerances, and I know I have them. I also think, from what I've read, that the SCD is very regimented. You're right, at least with a lot of processed foods! I'm not always successful, but I plan to try harder as of a couple of days ago. I did switch coffee brands about the same time this started. I moved from Community Between Roasts to Folgers Gourmet Supreme. But all folgers are supposed to be gluten-free, right?

Have you tried going to a very plain meat/veggie/fruit diet? I have found I do the very best with no processed foods. It's a little hard to do but it might help you. Really nothing processed other than perhaps a little salt/pepper on some broiled chicken. Then slowly, ever so slowly add back foods one at a time. I'm a fine one to talk if you look at...

I can only imagine the frustration you must feel. Why don't the tests reflect what your body tells you?? Who knows. Like the others are saying, let your body be the guide, not the tests. I've been gluten-free for about 4 mos. I have never once "cheated," but I have had several accidental glutenings. Going gluten-free began making me feel immensely better almost immediately. I agree with Darlindeb, a wedding is about the bride and groom. I personally would eat beforehand and afterwards. A wedding is not the time for me to promote Celiac awareness, nor is a time for me to feel crampy and otherwise sick. Not the same, but I was diagnosed with a duodenal ulcer (endoscopy) about 20 yrs before I was diagnosed with Celiac (endoscopy). I like the Pamela's mix. It's the only I've tried other than Van's frozen and that didn't go well. I even like the Pamela's pancakes as a bread substitute. Seems like they use almond flour and so they have a slightly nutty taste. Not quite like "regular" glutened pancakes, but yummy. -
