ARCHIVED Am I The Only One Who Feels This Way?
Lollie replied to glutenfreeheather's topic in Coping with Celiac Disease
Oh man do I ever know where your coming from. My dad fought a losing battle with cancer for a year and passed away this past Sept. I nursed him and was so sick myself. I got my dx just this past January, then my mom had a heart attack and has been in and out of the hospital for the past couple of weeks. I think the only thing that keeps me sane is allowing... -
ARCHIVED I Need A Wedding Cake
Lollie replied to gointribal's topic in Gluten-Free Recipes & Cooking Tips
I really like the namaste cake mixes. I get them at whole foods! I add a little cup of yogurt (per someone elses advice)! The are really good and I even had a small party for my kids, and served them as cupcakes.... the kids gobbled them up and so did the parents! Lollie -
I'm tired of having to go buy a tiny little bag of gluten-free All Purpose flour....it costs too much and there isn't much in there, so experimenting drags me down. So I am putting a call out to all of you great and experienced gluten-free bakers: PLEASE GIVE ME A GREAT ALL PURPOSE FLOUR RECIPE!!!!! I would greatly appreciate it! Lollie ...

I've always loved chocolate!!!!!!! I all of a sudden can't eat enough fudge! And before that wasn't really my thing, a little too rich, but now I can't make enough of it! Besides, chocolate releases endorphines in your brain to make you feel like your in love or happy......maybe with all the stuff we deal with, our brains are saying LIGHTEN UP!!!!! Eat...

I did once on purpose-it wasn't worth it. I think about it sometimes, but the pain just isn't worth the Krispy Kreme or cresant! lollie

I don't cook gluten stuff for my family. We all eat the same meal. I f we go out or if the DH is taking the kids for an evening out, then they get gluten, but at home ..... no gluten. lollie

Just a thought I have: Do you feel like you deserve to have the pain if you cheat? I ask this because sometimes, I chose to do things that I know will make me sick and cause me pain.....I deserve it. I know it is not at all healthy but I am working on it and through it. My problem is a weight issue, from way back when I could actually gain weight....

ARCHIVED Success With Pastry Dough
Lollie replied to Diosa's topic in Gluten-Free Recipes & Cooking Tips
I don't know what I did wrong! My pasties were a little.....pasty! The crust was greasy and really crumbly-but mostly greasy. I went back over the steps and I did it...... Do you have any suggestions on what I may have done wrong? The filling was great! Lollie -
I know! That's what makes me so mad! I was sick all those years, still am a little, and they never really tried to figure out what was wrong-just take these meds..... I truly believe that we have to take over all responsibility for our health. I never trust docs and I try to research everything on my own. I ususally know what the doc will say, or...

I'm glad your husband is supportive today! It really helps when you've got someone right with you to help you along the way! I agree that it was a good test! If your still feeling icky, try to drink alot of water- it will help your body flush out the gluten! Let us know how your test results turn out! Lollie

ARCHIVED Substitute For Roux
Lollie replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
I did it exactly the same- but I did have to use a little bit more liquid! I agree about the cornstarch, the gluten-free flour mix stayed true to what I was used to in a roux! Lollie -
i know! My doc actually told me about the growths in my stomach, said I didn't have acid reflux, but told me to continue taking the meds! i mean really, does that make any sense? Plus, I did more research into those acid inhibitors, and there are studies that say that extended use then stopping the drug, causes the pumps to over produce for a while...

You said you didn't have the GI problems on gluten-free? What were your symptoms prior to going gluten-free? What made you think you were gluten intolerent? I'm just asking because, I am pretty much self dx. I had tons of pain prior to the diet. I decided to get the testing-quite expensive, even with my insurance- and uncomfortable-I had the colonoscopy...

I have been having the same problem! I started the probiotics last week.....waiting to see. I used to be vegitarian- but my iron levels were just too low and I couldn't tolerate the iron pills, so I started eating meat. I really like talapia-I dredge it with finely chopped pecans adn season with fresh basil, salt and pepper. I lightly saute' it in a...

Hey! I'm in the same boat! I have taken prilosec/neium for 10 years......Never really helped. I take a muscle relaxer, flexaril, if it gets too bad. I have tried the Levisnex-but it didn't really help. So sense I get back spasms from time to time I always have some muscle relaxers on hand. I would strongly advise you to stay clear of acid pump...

ARCHIVED Boyfriend Doesn't Understand
Lollie replied to Celia the Celiac's topic in Coping with Celiac Disease
Hi! I just wanted to say, that your boyfriend is probably just worried for you. I know that my husband often seems uncaring or mad at me for some of the things I try. But, I know it is out of worry, not true insensitivity. He might just be uneducated about what it is the suppliments are meant to do. Try to involve him in your research and try to educate... -
ARCHIVED Dr. Prescribed Med For Abdominal Cramps......
Lollie replied to frustratedneicey's topic in Coping with Celiac Disease

ARCHIVED Substitute For Roux
Lollie replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
I use the Bob's Red Mill all peurpose gluten-free baking mix. I use it just I did flour. I t has worked out beautifully in everything I have used a roux for. Baschemel sauce, gravy, gumbo base.......I highly recommend using the flour mix for the consistency that you are used to. I find that the starches tend to have a more gelled consistency, which is... -
ARCHIVED Am I The Only One Who Feels This Way?
Lollie replied to glutenfreeheather's topic in Coping with Celiac Disease
I just tried the Whole Foods frozen pizza crust, it was great, besides not having to mix it up! Lollie -
According to the commercial I saw, which by the way is not the yogurt I bought, said to eat a cup a day for two weeks to see the difference. I decided to try because, well, yogurt tastes real good, it has calcium, and if it has a good benifit for my digestion, I figured why not try it!!!! Lollie

I thought I was nuts! I also get really bloated by the end of the day. I didn't before I went gluten-free but now I do! I was thinking it's my body getting used to the new grains that until now, I had never massed consumed?! But I really have no idea wy it happens! I'm just glad I have alot of pajama's to put on for supper! Lollie

ARCHIVED Got Lab Results, Could They Be Wrong?
Lollie replied to SuzieQ's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have to agree with everybody! But let me state for the record, I didn't get a positive on any of the tests, although I don't really know what the levels should or shouldn't be.....my doc won't call me back. But my point is, if you feel incredible better, that's your result. I was having all the GI symptoms, horrible bad pain, for ten years. The...
