  3. Alamaz, for anything dairy in the recipes I posted, just substitute rice or almond milk, and add a tablespoon of vinegar if the recipe calls for buttermilk. You could also use soy sour cream or soy yogurt and thin them out with whatever milk substitute you have, and I bet coconut milk would taste even better than regular milk! Who needs cows, anyway...

  5. The only gluten-free breads I would be sure to avoid are the Food For Life brands--they are horrible. They're dry, heavy, mealy, and they crumble at a touch. Here is an easy recipe for a challah-type loaf, adapted from Robyn Ryberg's Gluten-Free Kitchen. It's not the highest-rising bread I've ever seen, but it sure beats any pre-made store-bought loaves...
  6. I think Alton Brown did something like that on one of his shows. When the batter is thick and pasty like that, I have found that if I add extra liquid, it turns out just fine and is easier to work with, at least, for that focaccia-type flaxmeal skillet bread and for pancakes.

  12. I have much better results using a glass baking pan (both for loaves and for 8 x 8 focaccias). Also, make sure that your yeast is NOT quick-rise--gluten-free flours don't support that kind of fast rise for some reason. You can also try cutting back a bit on yeast or sugar. or adding a little more liquid.

  15. I have not seen any studies showing ANY other cause of flattened villi other than celiac. In fact, flattened villi is considered the "gold standard" of diagnosis of celiac. I would guess that whatever genes are associated with RA are also associated with celiac disease, as so many here have had RA symptoms and/or diagnoses, and their symptoms disappeared...

  19. There is a soy sour cream and soy cream cheese, both dairy-free--maybe those could help substitute for your cheese ingredients? Also, many delicious cheeses are made from sheep's milk--can you have those? Maybe you could just make your favorite recipes, but use Tinkyada and cheese substitutes?
