  6. A celiac 11-year-old I know is now being home-schooled because he was begging other kids for tastes of their cookies, sandwiches, etc., and was actually caught stealing their food. I think the gluten for him caused a kind of druggie addictive reaction, and it was like a heroin addict being in a school full of users using heroin in front of him.

  9. I was going to suggest this, too! You could even add a bit of the pure maple to it before it's all the way empty (it is a little different-tasting from high-fructose corn syrup). Think about it--it tastes good because of the artificial maple flavor, which is a fairly close approximation of real maple flavor, close enough to be recognizable, anyway....
  10. Well, at least they were honest, accurate, and even knew to point you to a celiac website... I know a lot of people love Aunt Jemima syrup, but it's so full of disgusting chemicals anyway, not to mention high fructose corn syrup. Real maple syrup is SO much better for you (and I think it tastes better, too). Costco sells it very inexpensively.

  13. I just use the corn tortillas, but you have to heat them to make them pliable. Spritzing them with water and/or Pam seems to help, too. There are also rice wrappers sold in Asian stores--bit tricky to work with, but if you line them with a big lettuce leaf, they work really real.
  14. AFH, I agree with everyone else--I don't think celiac has been ruled out at all. I think the biopsy either missed damage that was there or else gluten is causing your immune system to attack other things besides for the lining of the intestine.     But if you already have a diagnosis of DH, you don't NEED any more testing!!!! DH is a definitive diagnosis of celiac.
