This might be misleading--it is possible to be gluten intolerant and not officially celiac simply because the gluten intolerance has not YET destroyed enough villi in the intestine to give an undeniable diagnosis of celiac--YET.   7. There are many EASY gluten-free pizza recipes. Take your favorite sauce and mozzarella and use it to top gluten-free toast. stick it under the broiler for about a minute, and you have pizza!   18. I eat eggs for breakfast. Breads and cereals don't "stay" with me as long, and I crash an hour or two later, plus I get hungry.   22. Your best bet is the raspberry chipotle chicken salad WITHOUT the bread (don't let them put it on the salad or you will be eating gluten crumbs, which are enough to cause damage). I have been told that that dressing does not contain gluten and that the chicken was not marinated in soy sauce, but I have not seen the ingredients myself, so it doesn't hurt...
  23. You probably already know this, but there is wheat in most soy sauces--and if you are in Taiwan, likely you are eating mostly Chinese food, right? If you eat out a lot, you can ask for no soy sauce in your food.   24. These sound like symptoms of too-high thyroid to me. Perhaps you should have your thyroid checked? It is also possible that when you get glutened, your immune system attacks your thyroid, which then overproduces.
