  11. I have baked this way before, substituting applesauce or prune puree/baby food prunes in place of the fat (butter or oil). It's been a while, but I think I did cakes, sweet breads, and drop cookies for the most part. I believe it's one to one substitution, but I'm not totally sure on that.
  12. Your menu sounds great. I made the pretzel salad a couple of years ago and it came out GREAT! It had been a traditional holiday/Christmas dish in our family for years too. I used Ener-G pretzels.
  13. White rice has less fiber than brown rice. Quinoa I believe has quite a bit of fiber, as well as some protein. If it's ok, there is a quinoa/corn blend pasta that is really tasty imo.   19. I use the Rapunzel Bouillon and seem to do ok with it. I like the flavor too. Andrea, mace is a spice similar to nutmeg. I think they come from the same fruit seed. Your chicken spice mixture recipe sounds good. What is the difference between yeast extract and nutritional yeast different?

  21. When I make peanut butter cookies (or anything with peanut butter) I always use the freshly ground peanut butter I get at the health food store, it's super thick and only has peanuts as the ingredients, but everything comes out fine. I actually prefer the taste, it's kind of rustic I think.

  25. I have had good luck with Whole Foods Gluten Free Bakehouse Sandwich Bread. I don't use it a lot but I made bread pudding with it last year and it came out fabulous. I also use it to make french toast and grilled cheese when my nieces come to visit, it really holds up well with these dishes when other breads have crumbled and fallen apart on me.
