We have done mexican, build your own tacos or tostadas. Some times I prefer to have mexican style chicken or beef on lettuce. If you put out cheese or sour cream for condiments, you can put them on another table/ space. (You would want to keep those items chilled so it would not seem odd.) You might have to keep a food journal. Note the time of anything you put in your mouth. Including tooth paste/ cosmetics near enough to your mouth. It will help figure out if you have any other food intolerances. It can also help to figure out if you just have a cross-contaminated ingredient or pan. My guts were such a mess it was hard to eat any grains... -

Gluten reactions after going gluten free brought on vommitting for me. I even started vommiting from other intolerances that became apparent after removing gluten from my diet.

I was on thyroid medication for Hashimoto's thyroiditis for 10 years before going gluten free. I was able to cut down the dosage after going gluten free. -

Years ago I read everything I possible could about Celiac and found there is about 30% of Celiacs who are considered IGA deficient. For your general peace of mind, go through testing with the pediatric gastro. There are a few things that can cause the same symptoms as Celiac or gluten intolerance.
