ARCHIVED Disneyworld Florida And Disney Cruises
dionnek replied to amber's topic in Traveling with Celiac Disease
I have been on both the Disney Cruise and to DisneyWorld gluten free, and can't say enough great things about Disney! They treat you like a queen (usually I"m used to be treateed like a lepor when I go out!). If going to Disney World, do what the first poster said and contact them now about gluten free options - they will send you a list of all the options... -
Hillshire Farms Kielbasa
dionnek replied to IdGirl's topic in Gluten-Free Foods, Products, Shopping & Medications
I eat the turkey ones all the time without a problem, so it probably is something else. Could it have been CC (with pans/spoons, etc.)? I never eat hotdogs for this reason - they give me headaches and tummy aches - think it's the nitrates. -
ARCHIVED How To Deal With Holiday Cookin/baking?
dionnek replied to LuvMoosic4life's topic in Coping with Celiac Disease
I agree with Cruelshoes - I refuse to cook with gluten flour. I LOVE to bake, and at first was devastated when I was dx with celiac 2 years ago, but I have adapted all of my "famous" recipes to be gluten-free and no one knows the difference. I still make sugar cookies at Christmas (gluten-free, of course), and banana bread and rolls and all the family birthday... -
ARCHIVED Gluten-free On The Go
dionnek replied to micahjelinek's topic in Coping with Celiac Disease
I use pancakes (Trader Joes frozen gluten-free pancakes or home made) to make pbj sandwhiches, and I use waffles or corn tortillas to make turkey/cheese sandwhiches/rollups. Fruit (fresh or canned), pudding, yogurt, gluten-free power bars/granola, rice cakes (NOT Quaker Oats brand) with anything on them, cheese and gluten-free crackers, hummus and carrots... -
ARCHIVED Gluten Free Bread
dionnek replied to Alz's topic in Gluten-Free Foods, Products, Shopping & Medications
Alz - I agree we are pretty pathetic here as far as gluten free offerings go, but we are getting better The only bread mix I've tried that actually tastes just like normal bread (I nver ate white bread though - just wheat) was Breads from Anna, but they are VERY expensive. I usually just use Pamela's wheat free bread mix (I use the oven, not a bread machine... -
ARCHIVED Storing gluten-free Flours
dionnek replied to munkee41182's topic in Gluten-Free Recipes & Cooking Tips
I'm with Lee - I store all most of my flours (potato starch/tapioca starch, white rice flour, baking powder/soda and xantham gum) in a sealed container in the pantry (and I live in hot, humid GA!) and have never had a problem. They keep for months and months (I don't use them quickly). The only thing I put in the freezer is the brown rice flour (just keep... -
ARCHIVED For Those Who Have Been To Disney World....
dionnek replied to jayhawkmom's topic in Traveling with Celiac Disease
Disney is the most accomodating place for gluten free travel that I know of (in the U.S., at least)! We stayed at the Pop Century hotel and I had gluten free pancakes, burgers and fries, and pizza, and all were yummy! They also had prepackaged gluten-free brownies in the gift shop - I stocked up on those! We went to a character dinner at the Grand Floridian... -
could you post some resources for this info? I find it very interesting (and seems to fit me to a T!) and would like to take something to my dr. about this....

ARCHIVED Hypothyroidism Improvement
dionnek replied to AllisonD128's topic in Related Issues & Disorders
I agree - you definitely need to monitor more than just TSH - you need to check free T3 and T4 (I think that's what they are called) also. I have Hashis (developed in 2004 with my first pregnancy) and have been on various levels of Levoxyl/Synthroid since then. Went gluten free in May 2006 with celiac dx and my celiac levels are now in the normal range... -
ARCHIVED Just Have To Shout For Joy!
dionnek replied to crittermom's topic in Parents, Friends and Loved Ones of Celiacs
crittermom, do you mind me asking what are your son's symptoms? I haven't been keeping up here, so probably missed it somewhere, but I was just wondering. My 3 year old daughter has horrible constipation (alleviated by Glycolax now) and had reflux as an infant, and my new baby has reflux really bad (however I am gluten free - dx celiac - and he hasn't had... -
Thanks for the info. I talked to my dr. and when I mentioned the mayo in FL, he said "no way". He said he can get me into the MN one, but I'm not ready to bite that bullet yet (I have a new baby and a 3 year old, and live in the south, so it will be a difficult task to go up there!). I'm still thinking about it....
-
Anyone? I don't need a celiac specialist - probably an endocrynologist. I just really don't want to go to MN!
-
My dr. wants me to go to the mayo clinic, and I see that there is one in Jacksonville, FL. Since I live in Atlanta, I would prefer to go there, but was wondering if anyone had any insight into it (is it as good as the original?). I have confirmed celiac dx, hashimotos, raynauds, insulin resistance, and PCOS, but dr. thinks I have something else endocrynology...

ARCHIVED Strange Symptom-- Flu Or Gluten?
dionnek replied to Lisa16's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Well, first of all, don't beat yourself up for making a mistake - we've all done it and you will make many more And this is the hardest time of year! I've learned to either go hungry at stuff like that or bring my own snacks - I won't eat anything that I don't know exactly what's in it and how it was prepared (i.e. cross contamination) anymore Second... -
ARCHIVED Any Good gluten-free Friendly Restaurants Outside Of Disney In Florida?
dionnek replied to Kara'sMom's topic in Gluten-Free Restaurants
Kara's mom - I just stayed at Pop Century last year and the food court there is great for gluten-free! Just tell one of hte workers your daughter needs to eat gluten-free and you need to speak to the chef/manager on duty about what she can have, and they will come out and talk you through what is safe. They make the gluten-free food separate (gluten free... -
ARCHIVED Ok..day 5 Of gluten-free..what's For Dinner? I Haven't A Clue.
dionnek replied to Kara'sMom's topic in Parents, Friends and Loved Ones of Celiacs
I agree with the other posters - it is much easier to just make one meal for everyone, and dinners are so easy to make gluten free! Chicken Parm: place boneless skinless breasts in baking dish, pour spaghetti sauce over (Bertoli or the one that starts with a "C" in a glass jar are gluten free - just read the ingredients) and top with cheese - bake at 3... -
ARCHIVED When Do You Introduce Gluten To Baby?
dionnek replied to Offthegrid's topic in Parents, Friends and Loved Ones of Celiacs
I have a 4 1/2 month old baby that I am strictly breastfeeding right now (I have confirmed celiac and am gluten free), and was planning on waiting until 1 year to introduce gluten (stick with gluten free baby foods for the first year) so as to build up his immunity. I'm confused then why they say you should introduce gluten between 4-6 months (or 6-9)? ... -
ARCHIVED 25 gluten-free Recipes That Even Gluten Eaters Will Like
dionnek replied to lonewolf's topic in Gluten-Free Recipes & Cooking Tips
Here are a few easy ones: "chicken nuggets" crush gluten-free corn flakes (I add garlic powder and some red pepper, but can do plain for kids); coat cut up chicken breasts with dijon mustard (or mayo if you like) and roll in crushed corn flake mixture. Bake at 350 for about 25 min. Heres something I made up last night that actually turned... -
Thanks everyone - it does sound like it could be a soy problem with me. I'm going to try not having any soy for a week or 2, and then have some soy milk and see what happens (I"ll do this at home of course!).
-
I have been feeling "off" lately - very dizzy and constant headaches along with a horrible 5 hours straight of V and D a few nights ago. I am wondering if I could have a soy intollerance/allergy. The night I was sick, I had eaten a bunch of gluten free food at a party, most of which was probably made with soy, and about half a year ago I had an "episode...

ARCHIVED Frozen Veggies - Be Careful!
dionnek posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I just thought I'd share my latest blunder for those newbies out there (all you seasoned celiacs already do this, I"m sure) - ALWAYS check labels! I bought some frozen green beans in butter sauce for my daughter (she wanted them b/c they had Sponge Bob square pants on the bag!) and, since I've successfully had the frozen broccoli in cheese sauce which is... -
I have 2 thoughts that I was looking into for myself recently - you mentioned you are taking anxiety meds - could dizzyness be a side effect? I have been taking zoloft for about 8 months, and just recently my dizzyness came back (had major dizzy spells/blacking out since age of 12 - I'm now 34, which went away when I was dx with celiac 1 1/2 years ago, but...

I just made your feta artichoke chicken (but I forgot to put the feta on top!) in a rice cooker b/c I didn't have the time to use my crock pot - just dumped it all in the rice cooker and turned on cook - it never turned itself off automatically like it does with rice, so after about 45min. I checked it and it was done - perfect and juicy! Just thought I...

ARCHIVED Gluten Free Party Ideas
dionnek replied to angel42's topic in Gluten-Free Recipes & Cooking Tips
At my sister's shower (I'm the gluten free one - not her, but since I was throwing it everything I made was gluten-free and just the cake wasn't) we had 3 ingredient peanut buttetr cookies (everyone wanted the recipe!), salads, fruit and cream cheese/marshmallow fluff dip (so easy), turkey and cheese wraps, roast beef and cream cheese wraps, deviled eggs...
