  1. I don't have this knowledge to relate to you, but I did a search on this board "blood tests to request" and came up with several threads on the subject. This one Open Original Shared Link lists these tests: Tissue Transglutaminase Antibody IgA and IgG Gliadin Antibody IgA Total IgA You might want to do the search yourself and read the other...
  2. Thanks for the link. Their website has a store locator and I found that the Wild Oats in Mission, KS has their products. I called and they have the tortillas. I'm going to try them out today! Those rice tortillas are terrible - they crumble and don't even taste all that good.
  3. I had a similar problem - diarrhea continuing after being gluten-free for a couple months. I FINALLY discovered it was corn sensitivity that was the culpret - and corn is in a lot of gluten-free flours and mixes. Even after eliminating corn, dairy, egg, etc., I still had ups and downs with the D - never really returning to normal. Someone on this board...
  4. Celery stuffed with cashew butter topped with dried, sweetened cranberries. Cucumber or zucchini slices topped with salmon or tuna mixed with mayonnaise and sweet pickle relish. Tortilla cheese chips. Spread chips on a baking sheet, top with grated cheddar cheese. Heat in the oven (350 F) until cheese begins to bubble. Cool on rack. (By the way, these...
  5. To answer your question. If I remember correctly, you can keep broth/stock in the 'fridge for 3-5 days, then if you return it to a saucepan and simmer for 5-10 minutes, you can extend the life for another 3-5 days.
  6. That's what I do, too. I would think that you could put everything in the crockpot and it would work just as well as on stovetop. I like to include dark meat because it give the stock a more full-bodied flavor than just white meat. When I plan ahead I purchase thigh/leg parts for the stock. A couple ways I make a little extra broth to freeze for later...
  7. I found a good cookbook at the library, published in 1997. 366 Simply Delicious Dairy-Free Recipes by Robin Robertson There are recipes for soups, salads, entrees, pizzas, vegetables, casseroles, and desserts. Although this is not a gluten-free cookbook, most of the recipes do not include flour or if they do, one could easily sub a G.F. flour for thickening...
  8. Sounds good. Is the chicken precooked?
  9. Lisa, I can surely understand your frustration with the doctor and his lack of understanding. I'm reponding to your comment about diagnosing yourself and your feeling that your problem is Crohn's. Before I knew my IBS problems were gluten/corn related, I found a book written for people with IBD and followed the diet plan - it helped emensely... until I...
  10. Same here. I only use a small amount added to other flours in baking or in meatloaf.
  11. My personal opinion is that it wasn't the sleeping that shortened the symptoms but that sleepiness was one of the symptoms and that your total reaction was not as severe as before. So by the time you woke up the worst of the reaction had passed. I've been almost a year gluten-free. When glutened, my symptoms are now quite mild and much shorter in duration...
  12. Anybody have an answer????
  13. Everyone's reactions are different. Some have no noticeable symptoms, some get very sick, others are somewhere inbetween. My symptoms have decreased when getting glutened and are quite mild and short-lived now. While it is possible that you might become more symptomatic from gluten after a period of time being gluten-free, you might not; and there's no...
  14. This is exciting news, indeed. Isn't it great to feel good again? I, too, am corn sensitive and didn't see real improvement until I eliminated all corn from my diet. I also went the Enterolab route rather than go to any doctor and fool with trying to educate them. I got my diagnosis thru the lab and I'm really glad I did. Happy 6-month gluten/corn-free...
  15. I have two gluten intolerant genes, so my son has at one of them. He is nearly 40 and has shown no signs of any problems with gluten - and he has had gluten all his life (I only found out about my own intolerance this year). At the time, I was more concerned about diabetes as my sister developed type I at 9 yrs old and died from it at 20. I kept a close...
  16. Well, I'm finally over 500 posts and was wanting to customize the Member Title (under my Avatar). I went to Edit Profile and filled in the "Custom Member Title" When I finished, I got a message saying that my date of birth was incorrect. Now, I didn't touch that feature. It still had the dashes in each box for DOB. I don't want to put in my birthdate...
  17. Not everyone is concerned. Having read your posts for several months now, I am confident that you and your wife are going to monitor him closely and wouldn't do anything that you felt would jeapodize your son's health. From what you have posted, it appears you're on the right track. And, oats will be so much easier to avoid than gluten. I'm glad to hear...
  18. ditto this is my all-time favorite flavor of "ice cream"
  19. Welcome to the board. I spent hours and days (for about three weeks) on the board, searching and reading. I learned SO MUCH in a very short period of time. Knowledge is power, and with it comes confidence. In my signature you'll see several links to articles and lists that are very helpful to the newly diagnosed - all from the celiac.com main site...
  20. It just reinforces the fact that we need to be fully aware, read the drug information, and make fully informed decisions... irregardless of whether or not we THINK the doctor knows what s/he is doing! I never trust doctors to know the ins and outs of the drugs they prescribe. I ALWAYS check with the pharmacist and read the inserts.
  21. That's good news. Now, if their frozen rice dream is also going to be gluten-free, I'll be a happy camper!
  22. I think the site probably has been mentioned now and then, but it's good to be reminded again. I went and took a look and found some recipes that I hadn't seen before. I especially like the reviews with each recipe - which can contain helpful tips, too. It's a great site.
  23. Good for you! My son is an avid bicyclist. He trains all the time and enters races - trail and crit (I think that's what it's called). Lately he's been doing diathalons (run/bike) and will be doing a triathalon later this summer (run/swim/bike). This is his fourth year and he's in cat 3 now. Do you race?
  24. It's a wonder it raised up again - usually one doesn't do two risings of gluten-free bread. If only I could have that problem, bread rising too much. But I have to bake egg-free and no bread ever turns out all that well without it. You should give the bread mix another try and watch it more closely so it doesn't get away from you again. I think the result...
  25. Congrads on the one year mark. I think we all should get a certificat of merit for our first year aniversary.
