  1. I love your idea but I can also see why your adviser would be nervous. The people who come to your house don't know it's gluten-free because you don't tell them, but the people who come to your restaurant will know. A percentage (my bet is it would be a fairly large percentage) won't even try it because of that. And celiacs alone can't support it. Even if...
  2. The numbers I remember are that 30 percent of the population has one or more of the genes. Only 1 percent (or less) of the population develops celiac disease. And to confuse things even more, a tiny percentage of people with celiac disease or gluten intolerance don't have the genes. richard
  3. Bacterial overgrowth will mimic celiac disease, although I don't know if it keeps the Iga levels up. You might ask your doctor about bacterial overgrowth and whether your daughter should try a probiotic. Not sure if it's advised for one so young. Somewhere out there I've seen a list of possible other causes for an elevated Iga but I can't find it. richard

    ARCHIVED Allergen Bill

If any of the top eight allergens are present in any form they will have to be clearly listed. richard
  5. Best Foods mayo is definitely gluten-free. Don't toss stuff just because it has an ingredient that you've been told we have to watch out for. Sometimes, as is the case with vinegar or annatto, we don't actually have to worry about it. Other times, such as with natural flavors and modified food starch, we DO have to watch out, but the vast majority of time...
  6. A couple of points: If you have a child with celiac and you haven't been tested, you should be. ALL experts recommend that ALL first-degree relatives be tested, even if you don't have symptoms. All mine were and my father was positive. Siblings, parents and children should all be tested. Unless you have all first-degree relatives tested for the genes...
  7. If you have celiac the standard advice -- and the only advice I'd ever give -- is to never ever eat anything you know has gluten, including communion wafers. Nobody REALLY knows how much it takes to cause damage. There are people who react severely to something as small as a wafer, and others who can eat a sandwich with no obvious problems (but still might...
  8. I can only repeat what I just said earlier in this thread -- cows have a totally different digestive system. Something like wheat is so changed that it's either not present or has been changed into something harmless (I forget which). Research scientists say it is harmless. Comparing something like wheat with hormones is apples and oranges. Completely different...
  9. Never been a problem for me. richard
  10. I concur that cow's milk is not a problem. Remeber that cows have 4 stomachs and theiur digestion differs significanlty from our. Dairy researchers and veterinarians at the university where I work have confirmed this. richard
  11. This is an area with varying opinions. One study suggested that delaying gluten beyond normal intoduction actually increases the chances of celiac. Another study indicated that children who continue to breastfeed past the introduction of gluten are less likely to get celiac, although no one knows whether that continues into later life. There's a similar...
  12. I'm missing it here. Is your 4-month-old diagnosed with celiac? I didn't think it was possible to definitely dsiagnose a child that young? Also, if you 2-year-old is getting ready for testing you should be feeding gluten much more than three weeks. 12 weeks is the minimum I hear. richard
  13. None of us can guarantee you that some unknown hot chocolate is gluten-free, but all that I've checked have been. Stephens, Quick, Swiss Miss. richard
  14. Top celiac rexperts and the NIH say ALL first-degree relatives should be tested. My whole family did this and my dad, with no symptoms, was positive on everything. richard
  15. GOOD NEWS!!! This is a lesson for all. Refractory sprue is rarely an acceptable diagnosis. In almost all cases, something else is happening. richard
  16. 18 months ago I was at Yankee Stadium and when I asked for a hot dog without a bun the woman looked at me like I had three heads. Now, when I ask for the "low carb burger" or no bun at other places, no weird looks. Believe me, two years ago, people at McDonald's and other places were telling customers they COULDN'T give them a burger without the bun. It allegedly...

    ARCHIVED Health Insurance

Calico jo, you should be able to get the reasons from your doctor without an appointment. If not, you need a new doctor. richard
  18. All distilled alcohol is gluten-free unless gluten is added afterward. I would feel safe with the Bombay but do not have documentation showing it is gluten-free. You can go to bombaysapphire.com and there's a place there to see ingredients. There's also a contact link but it wasn't working when I was there. Thes are gluten-free, according to the manufacturer...
  19. If you've gotten sick eating popcorn at different places then there's definitely something else going on. If it's the same place, you need to check it out thoroughly. I go to one theater that uses real butter. richard
  20. Unfortunately, this is your call. It sounds like to me, even as sick as you are, you don't want to give up gluten unless you have some hard proof it's a a real problem. If that's the case, you need to try to keep eating it at least until the blood tests. If the blood tests are positive I'm not sure you actually need the biopsy, but the doctor might insist...
  21. I generally don't do gluten-free bread but I know quite a few people (including the chefs at glutenfreeda) who swear by the Gluten Free Pantry French bread mix. The two women who run Glutenfreeda stopped trying to come up with their own mix and just started using this mix as a base and adapting it for all sorts of things, including pasta. richard
