Since I can't eat cheese, I have made my pizza crusts foccacia style. I put olive oil, oregano, salt, pepper, hot peppers, etc, on top, then bake. I then cut them up and dip them in olive oil and balsamic vinegar.

Oh, great idea!!

Viola, glad you like the cinnamon/sugar idea....I may make that tonight. Ended up trying chocolate chip cookies again last night - tasted good, baked not like a cookie should

I LOVE Chebe crusts- yummm! Vydor Scope- have you tried Namaste pizza crust? Very similar to Chebe taste wise (but it's not pre-made so you need to do a little mixing- easy enough) and I am pretty sure it is egg-free. It's goooood! Really good.

tried a couple fo mixes, dont remember which ones.. not massivly impressed with any.

Namaste is another line of really good products. I did not care for their cookie mix, but I don't know if it was the olive oil I used instead of vegtable. It can give a strong taste. Their cakes are AWESOME and they don't have egg in the mix, so you can use egg substitute. They are casein free, gluten free, egg free, and soy free!

Nini-I made the cheese sticks the other night and they were AMAZING. definitely made my night. Before all the "big" chains came out with them, there was a chain that sold them (and still does) called Gumby's. Many are in college towns (like PSU!). I cannot tell you how much money I spent on those, esp late nights after going out! Pokey sticks are the best....these at least give me the idea that I am still young, cool, in college, and not Celiac (wait, I'm out of college, work long hours, and a very sensitive Celiac.....haha!) :D

What a great thread! Thanks for all the great ideas. You know what my problem is.....I have one Kinnikinnick pizza crust left in the freezer. Did you hear me? ONE crust I've been saving until I just couldn't wait longer. (Nearest Wild Oats quit carrying them and haven't placed an order). So, here I am with one crust and so many ideas. I may have to cut it in 1/8's and try them all

Here's a different idea for pizza>

1 gluten-free crust

1 can gluten-free mushroom soup (if thin it may need a tad of thickener added)

1 box frozen spinach ( chopped & drained very well)I squeese mine by hand

garlic powder to your liking.

spread the mushroom soup on the crust, put spinach on top of mushroom soup

then sprinle with garlic or any of your favorite spices.

bake as usual.

enjoy!

I live on their stuff. I'm in the same city as they are so I can get all of their products. The pizza crusts are a lifesaver and we have cobbled together many a meal basedon them. The oreos are so good, the first time I had one I cried, thinking I was doing something I oughtn't. I adore their donuts. This company had changed my life for the better. I applaud them heartily.

(But I still hate all Celiac safe "bread" - even theirs).

I'm with you, there bread is disgusting. I can't wait, I'm going to Kinnikinnick for the first time tomorrow.

I've never tried these oreo's you guys' speak of, though I don't know if I can eat them. I've had their gingerbread cookies (I don't know if they ship them or not) which taste like normal cookies I think. Their lemon meringue pie is good too. I don't like their bread though, I find it overly sweet. But I'm heading there tomorrow so I gotta check out these oreos.

I got the buns....I think they were basically like the Engish muffins. Both are great! This is unusual with gluten-free bread products, but both the buns and muffins are THICK....and have a soft nice quality. I always toast the English muffin (split in half--so big I can only eat a half at a time), but I thawed the bun and made a hamburger and it was quite good....my only complaint was that it was actually too thick for me!

I ordered the pizza crusts but haven't tried them yet. I'm glad to hear they're good! :P

I also thought the hamburger buns were too thick, but very good. I would like them better

if they made 6 buns instead of 4 and then I think they would be perfect. I thought I died

and went to heaven. We go camping and I was wondering how long would they keep it

not kept frozen? We don't have a freezer in our Popup Camper.

Thanks mamaw! I love this idea and my dd loves spinach!! I'll have have to try it if I can find a safe mushroom soup.

Hey Vincent ~ I can't use the premade crusts b/c of egg and rice but I found one that is really easy to make. It's at Carol Fenster's site... Open Original Shared Link I use the oil/water/bp as the egg replacer. Your son would probably love it. I just make a bunch at one time, bake them and then freeze them.

CeriA and all others

SPINACH PIZZA

I also sometimes put real bacon bits on top of the spinach . I know others who

put cooked burger on it but I like the bacon bits better . Of course the vegan would not use any....

Just another idea.

I went there today and bought bagels, K-toos, a bunch of other stuff, but the thing I was looking forward to the most was a pie. I can't wait to try it. I love this store. The K-toos are awesome and I don't normally have a sweet tooth.

Nini-

I just had the best dinner, thanks to you! I finally tried your garlic cheese bread with the pizza crusts! Yummy!!! I had white rice tinkyada spaghetti with spag. sauce, the garlic cheese bread, and broccoli! Ohhh...I'm craving the leftovers that I put in the fridge for my hubby!! I can't believe how good the crust turned out. Thank you for posting that picky-eater-friendly recipe! I'm gonna have to order more pizza crusts!!! (Kinnikinnick should owe you money! :) )

Guest nini

LOL Mally'smamma! glad you enjoyed your dinner! See, I DO know what I'm talking about (SOMETIMES!!!! LOL) j/k

have you found the Ian's Allergen free kids meals yet? My daughter absolutely loves them and she's pretty picky.

Kinnikinnick Order Question:

I know that they ship frozen. Do you have to be home to receive the shipment or is it ok on your doorstep for a few hours? They're shipped frozen, but what is the shipping, packing process? Thanks!

For those of you who saw my dilemna of only one crust....I debated and debated and finally used it for a pepperoni pizza, with spinach and mushrooms. I've been putting spinach on my pizza for years ever since eating a gourmet pizza with spinach on it. Love the stuff!

In addition to spinach, mushrooms, and bacon, for those who can have dairy, try a different cheese, such as feta and add some fresh sliced tomatoes before baking. YUMMMM!

:D

I haven't seen them yet... but I also haven't been back to the health food store yet. It's such a pain to go to - but a Whole Foods is opening not too far away in a week - so I can't wait to go there! Are those meals in the frozen section? I'll have to remember to look for them. Thanks for the suggestion!

Guest nini

yep they are in the freezer, Ian's does make a line of foods with gluten so just make sure you get the ones with the Allergen Free/Gluten free labeling on the front of the box.

This happened to me as well. What’s weirder is that within a couple hours of taking paxlovid it subsided. I thought maybe I got glutened but after reading your post not so sure.

Hi Tiffany. Thank you for writing your dituation and  circumstancesin such detail and so well writte, too. I particularly noticed what you wrote about brain for and feeling like your brain is swelling and I know from my own experiences that's how it feel and your brain really does swell and you get migraines.    Way back when I was in my 20s I read a book by 2 MD allergist and they described their patient who came in complaining that her brain, inside her cranium, was swelling  and it happened when she smelled a certain chemical she used in her home. She kept coming back and insisting her brain actually swelled in her head. The Drs couldn't explain this problem so they, with her permission, performed an operation where they made a small opening through her cranium, exposed her to the chemical then watched as she brain did swell into the opening. The DRs were amazed but then were able to advise her to avoid chemicals that made her brain swell. I remember that because I occasionally had brain fog then but it was not a serious problem. I also realized that I was becoming more sensitive to chemicals I used in my work in medical laboratories. By my mid forties the brain fog and chemicals forced me to leave my  profession and move to a rural area with little pollution. I did not have migraines. I was told a little later that I had a more porous blood brain barrier than other people. Chemicals in the air would go up into my sinused and leak through the blood brain barrier into my brain. We have 2 arteries  in our neck that carry blood with the nutrients and oxygen into the brain. To remove the fluids and used blood from the brain there are only capillaries and no large veins to carry it away so all those fluids ooze out much more slowly than they came in and since the small capillaries can't take care of extra fluid it results in swelling in the face, especially around the eyes. My blood flow into my brain is different from most other people as I have an arterial ischema, adefectiveartery on one side.   I have to go forward about 20 or more years when I learned that I had glaucoma, an eye problem that causes blindness and more years until I learned I had celiac disease.  The eye Dr described my glaucoma as a very slow loss of vision that I wouldn't  notice until had noticeable loss of sight.  I could have my eye pressure checked regularly or it would be best to have the cataracts removed from both eyes. I kept putting off the surgery then just overnight lost most of the vision in my left eye. I thought at the I had been exposed to some chemical and found out a little later the person who livedbehind me was using some chemicals to build kayaks in a shed behind my house. I did not realize the signifance  of this until I started having appointments with a Dr. in a new building. New buildings give me brain fog, loss of balance and other problems I know about this time I experienced visual disturbances very similar to those experienced by people with migraines. I looked further online and read that people with glaucoma can suffer rapid loss of sight if they have silent migraines (no headache). The remedy for migraines is to identify and avoid the triggers. I already know most of my triggers - aromatic chemicals, some cleaning materials, gasoline and exhaust and mold toxins. I am very careful about using cleaning agents using mostly borax and baking powder. Anything that has any fragrance or smell I avoid. There is one brand of dishwashing detergent that I can use and several brands of  scouring powder. I hope you find some of this helpful and useful. I have not seen any evidence that Celiac Disease is involved with migraines or glaucoma. Please come back if you have questions or if what I wrote doesn't make senseto you. We sometimes haveto learn by experience and finding out why we have some problems. Take care.       The report did not mention migraines.

Hi Jmartes71 That is so much like my story! You probably know where Laytonville is and that's where I was living just before my 60th birthday when the new Dr. suggested I could have Celiacs. I didn't go on a gluten challange diet before having the Celiac panel blood test drawn. The results came back as equivical as one antibody level was very high but another, tissue transaminasewas normal. Itdid show I was  allergic to cows milk and I think hot peppers. I immediately went gluten free but did not go in for an endoscopy. I found an online lab online that would do the test to show if I had a main celiac gene (enterolab.com). The report came back that I had inherited a main celiac gene, DQ8, from one parent and a D!6 from the other parent. That combination is knows to sym[tons of celiac worse than just inheriting one main celiac gene. With my version of celiac disease I was mostly constipated but after going gluten-free I would have diarrhea the few times I was glutened either by cross contamination or eating some food containing gluten. I have stayed gluten-free for almost 20 years now and knew within a few days that it was right for me although my recovery has been slow.   When I go to see a  medical provide and tell them I have celiacs they don't believe me. The same when I tell them that I carry a main celiac gene, the DQ8. It is only when I tell them that I get diarrhea after eating gluten that they realize that I might have celiac disease. Then they will order th Vitamin B12 and D3 that I need to monitor as my B12 levels can go down very fast if I'm not taking enough of it. Medical providers haven't been much help in my recovery. They are not well trained in this problem. I really hope this helps ypu. Take care.
