Yeast Questions !

I have a few questions about yeast. I'm confused as to whether all yeast are naturally gluten-free or there a different types of yeast. I want to do more baking but not sure which yeast is safest. I recently used the Active Dry Yeast, and I did not react well to it, tremendously bloated. Has anyone else had any negative reactions ? I've recently seen a gluten-free product that list the ingredient as "gluten free yeast", so does that mean that some yeast not gluten free?

Can anyone explain what yeast is , how it's made, and what types are used out there? Is yeast generally a bad thing for Celiacs? Have I been using the wrong product for baking?

Brewers Yeast-not allowed-has gluten in it but they don't know how much.

Autolyzed Yeast- gluten-free and broken down by it's own enzymes derived from baker yeast, almost always.

Baker' Yeast-allowed for us.Condensed dry cells of fungus grown on sugar molasses.

Nutritional Yeast.- safe for us.Grown on molasses, sold as a nutritional supplement and sometimes called brewers yeast. Comes in powder or tablets.

Tortula Yeast-allowed for us .Dried primary grown yeast, used to create a bready, savory flavor in food products. Can be used as a carrier in spices and food products.

Rusia -- If you're still out there. My Hashimoto's/Hypthyroidism was the first to be diagnosed, in 1985. Last was anemia, for which a real good GP/Internist referred me to an enterologist. in between that, peripheral neuropathy (which we don't share). You have a few more things going than I do, but I thought I also saw a sulpha allergy. Celiac disease could be the link.

Really appreciate your response on the Yeast issue; I've always liked yeast, sour dough, etc and would hate to give them up. You mention an allergy to flu shots, and yes I can concur on that; supposedly all you get is dead flu; if so, there's something in the vehicle of the shot that's making me and others sick. Cheers. Hh.

More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.

I hope you are on the mend soon. About 1 in 5 people who contracted chicken pox as a child go on to develop shingles in later life - it is not uncommon. There are 5 known members of the herpes virus family including chicken pox that commonly infect humans, and they all cause lifelong infections. The exact cause of viral reactivation as in the case of shingles or cold sores is not well understood, but stress, sunburn and radiotherapy treatment are known triggers. Some of the herpes viruses are implicated in triggering autoimmune diseases: Epstein-Barr virus is suspected of triggering multiple sclerosis and lupus, and there is a case where it is suspected of triggering coeliac disease. As to whether coeliac disease can increase the likelihood of viral reactivation, there have been several cohort studies including a large one in Sweden suggesting that coeliac disease is associated with a moderate increase in the likelihood of developing shingles in people over the age of 50. US 2024 - Increased Risk of Herpes Zoster Infection in Patients with Celiac Disease 50 Years Old and Older Sweden 2018 - Increased risk of herpes zoster in patients with coeliac disease - nationwide cohort study

BFree bread is fortified with vitamins and minerals as is ASDA own-brand gluten-free bread. All the M&S bread seems to be fortified also.
