Buckeye Bars

We call them Buckeye Bars here in ohio, I don't know if they are called anything else in other places.

Melt 1 cup peanut butter and one cup casein free margarine in a med/large sauce pan. ( I use earth balance margarine).

When completely melted stir in 1 lb. of confectioners sugar.

Press into a 9x13 ungreased pan.

Next melt 2 cups enjoy life chocolate chips and 1/2 cup peanut butter.

Once Melted smooth onto top of peanut butter mixture.

I put mine in the freezer for about an hour to set then move to the refridgerator. They tend to sweat a little if out for over an hour so keep this in mind if serving to a group.

These are very good and I can never seem to keep out of them. I normally make half a batch if not serving to company.

I make these every holiday time when I can get the kids to come and roll balls ... a recipe makes a ton!! I freeze 'em and have 'em for months!!

Gotta love chocolate and peanut butter!!

I flippin love those things! Definitely agree, doesn't get any better than chocolate and PB.

By the way, both of my parents are from Ohio, and that's who I learned about "Buckeyes" (the candy!) from... so I wonder if it is an Ohio thing? Or is it b/c when you roll them into balls, they do kinda look like buckeyes... Oh well, who cares how they got their name, they taste good and they're gluten-free!!!!

      Thiamine interacts with all the other B vitamins.  Thiamine and B 6 make a very important enzyme together. With more thiamine and other vitamins available from the supplements your body is absorbing the ones you need more of.  The body can control which vitamins to absorb or not.  You're absorbing more and it's being transported through the blood.   It's common to have both a Thiamine and a Pyridoxine deficiency.  Keep taking the B Complex. This is why it's best to stop taking supplements for six to eight weeks before testing vitamin levels.

      Yes I took a supplement that had B6 in it, low dosage though. I've stopped taking that. B1 doesn't affect other B vitamin levels?
