Chicken And Smoked Gouda Wrap

For those of you that know I am trying to be good and eliminate dairy/casein, move along, nothing to see here! Nothing to see :ph34r:

A very unscientific recipe, but I took a 1/2 of a chicken breast that I had already baked (baked with olive oil, garlic, and sea salt) and I shredded it, then added about a tbsp of mayonaise or so, and mixed in 1/2 cup of shredded smoked gouda cheese. Then I piled it on to a Food For Life rice tortilla and put it in a 350 oven until the cheese melted. Took it out, rolled it up and cut it in half, and yum!

What are everybody elses favorite wrap/sandwich fillings??

I'll have to try that. We've got some smoked heaven in the fridge!

It's not a wrap, but I like to smear an extralarge smear of Nutella on a warm plain Glutino bagel...something about that choco-hazelnuttiness sometimes it only makes it as far as the knife :ph34r:

this sounds deLISH!! Am going to get some gouda.

I don't make many wraps because those darn tortillas are so small. :angry: But I do use Havarti Dill cheese a lot, pile that on top of things like Columbus lunchmeats, mashed pinto beans, whatever, on top of my new favorite Whole Foods bread (the white sandwish), and make more of a "melt" in toaster oven....

yes, definitley need more wrap ideas. And why can't they make the corn tortillas bigger? :huh:

Sounds soooooo good. I used to love gouda, havarti, monteray, cheddar. Havarti was always my fav though. We can't cheat. Don't want my allergy getting worse. :(

Try making a smoked Gouda, chopped up prosciutto and left over boiled potato omelette. Top with sour cream and fresh chives, or your fav. salsa.

And I want to go out to eat in a restaurant?.....and pay money for a baked potato????? <_<

Nooo the Food for Life rice ones are huge. OMG they are great...how I miss them so :(:)

I like hummus, avocado and some chicken or turkey with some herbs de provence (lol that sounds so snobby), sea salt and pepper...sometimes the addition of red leaf lettuce and even some carrot and cucumber sticks is yummy. Or instead of hummus I make that ranch type dip out of cashews mmmm

or black beans with rice, avocado and salsa (okay yeah that's like a burrito).

What does gouda taste like? In terms of cheese, think i only know what raw goat cheese tastes like. I'm guessing there are some yummier cheese options out there (not that I'll try them, I'll just live vicariously through all you peeps who cheat on the casein free diet LOL :P )

Hey!!!!!!!! I am trying Mango :lol:, Dairy/casein free is new to me and I fell off the wagon alittle bit, but I'll get back on and be the dairy/casein free queen like you :) Cheese just calls out to me, really loudly......

I don't know how to describe gouda, I'm not exactly a cheese expert......um, it's really good :lol: , sharp, I think? And smoked gouda, to die for! I guess it comes down to personal taste.

I can do the same sandwich dairy/casein free, no cheese of course, just chicken, mayo, some fresh herbs, and carmelized onions, yum.

The round about point of my thread to show some of the newbies you don't have to give up your sandwiches and wraps just because you can't have gluten filled breads, flat bread, tortillas etc., that was one of the biggest things I felt deprived of at first.

Susie, I love havarti! I like the herbed havarti....you know, from way back in the day I was eating cheese of course :ph34r: ......and I second Mango, the Food For Life Rice tortillas are HUGE, perfect for wraps.

Richard, what is Nutella exactly, chocolate and hazelnuts, or something like that? It seems Giada from the Food Network uses it frequently in her recipes, sounds interesting.

Uh oh is that my title? :unsure::lol: I'm working on it really...trying to be more open-minded about cheese LOL. Not in the sense of eating it...just thinking hmmmm...that must be a nice thing for other people to eat haha

I think I posted this recently but I have to give another shout out to Corn Thins. You can make any sandwich with Corn Thins instead of bread and not go wrong :):)

It's like chocolate frosting flavored with a bit of hazelnut. Giada put it on grilled pineapple in one show. I tried it too -yummy! You can put it on anything (it's chocolate for god's sake!). You don't know what you're missing! :o

If I remember correctly, I think I stole the recipe from Tarnalberry's recipe thread. It's basically water, raw cashews, lemon, italian herbs, dill, salt, garlic and onion powder in a blender. I can't remember the measurements at the moment but they don't really matter so much...you basically just mix and blend according to your taste. It's reallyyyyyyyyyy good. I put it on everything...including Tinkayada pasta to make a yummy CF/gluten-free creamy pasta sauce. :)

Nutella is yummy but I suspect it has a fair bit of sugar in it.

I'd like to find some large corn tortillas, perhaps that will be my mission this week, I was going to say today but then decided to be realistic about it. :lol:

Corn tortilla, chicken, avocado, red onion sliced thinly with a little mayo and mustard and as long as I don't think about the smoked gouda, which would be very good added to that, I am okay.

I found a new cheese just before I realized I couldn't eat dairy, a smoked applewood cheddar, ah, memories of cheese. :lol:

Joanne Stepaniak's book The Uncheese Cookbook has a recipe for Gouda as well as many other cheeses. I got the book from the library once, but I haven't made anything from it because I have to buy the nutritional yeast flakes. Has anyone tried making 'uncheeze'? How does it come out? Is the mozzarella good?

Now that I read all these I can't wait to make a wrap. Where do you get a rice tortillas. Never heard of them. I'm always looking for new recipes, since I cook alot more than I used to. I wanted taco bell today nacho supreme. any one know a good nacho sauce ?

      Thank you. I must have misinterpreted a study or something. Thank you for the clarification. Much appreciated. Almost three years into my celiac diagnosis and I'm still learning new things.

      I wasn’t clear, glucagon and gadolinium were intravenous. I drank about 5 cups of the prep during 45 minutes. I feel very tired now, probably partly because I was nervous, and partly because I had to fast for 6 hours beforehand and wasn’t very hungry when I got home.

      That seems at lot of solution to have put threw you when you already have bowel issues , I will phone them tomorrow because it's sorbitol I have reactions too, thankyou for the input how do you feel now ? I'm not sure I can keep still for that long with my back issues either unfortunately I didn't know it could take that long 😕

      The solution I had to drink contained sorbitol and mannitol. I was in the MRI, lying on my back, for about 40 minutes. I was given glucagon partway through, and a gadolinium contrast agent. After I got home there was some diarrhea from the prep solution.
