Xanthan Gum

Why does my body hate it so much? I know it's made from corn, but I don't have any problems with other sources of corn, whatsoever.

There was xanthan gum, practically last on the ingredients list, in my salad dressing monday night. I got SO sick last night. At least it's not like gluten - I feel fine the next day.

Sorry - just a vent.

Does anyone else have huge problems with it? Do you have other intolerances?

I have several other intolerances, including corn. But, I can tolerate the amount of corn used in one of the meds I take daily. I watch corn, but am not obsessive about it, and it works for me.

I do react to Bob's Red Mill Xanthan gum. Everything I used it in made me sick. But, I can tolerate the xanthan gum that is used in The Gluten Free Pantry mixes. I don't know why.

Patti, I'm glad that you don't have to worry about it a lot - corn on top of all your other intolerances would be a nightmare.

How is your plan going of eating rice or rice pasta once a week? Are you still doing that?

Yes! And it's going well. :)

Elizabeth, have you tried different brands of xanthan?

Elizabeth, I have just done a quick search on the net under xanthan and laxatives (as I had heard in the past it can be used as a laxative), and it says it can have a laxative effect on some people. But I wouldn't have thought the amount we use would be a problem.

But in having said that, I have always wondered why manufacturers would put a mild laxative in food that is designed for coeliacs who can have problems with diarrhoea. Go figure. I guess it could be because there is nothing else that will hold the cooking together like xanthan or guar gum.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
