1st B-day Cake Recipe Needed For A Very Allergic Child

My friend is asking me for a recipe to make a cake for her lil ones 1st b-day. The baby is having severe reactions to a ton of foods....here are some of the one I know she is severely allergic to cake can not have: no wheat, no corn, no peanuts, no peas, no rice, no dairy

Any ideas I can pass along to her???

I don't have a recipe for you... but, I would think that some of the cake recipes for Passover would fit the bill - if she can have eggs. They are essentially potato starch and lots of eggs - sort of like a sponge cake.

You might do a search on this forum for Passover foods, and also do a Google search because I'm sure there are plenty of recipies out there.

Of course, others on the forum will have a recipe or two for you, I'm sure.

What about a Namaste mix?

Here's a recipe that is great.

1 Cup Garfava flour

1/2 Cup Potato starch

1/4 Cup Tapioca starch

1/2 teaspoon Xanthan Gum

2 1/4 teaspoon baking powder

1/4 teaspoon salt

3/4 Cup granulated sugar

1/2 Cup Spectrum brand Canola Oil spread or 1/3 Cup cooking oil

2 teasoon gluten-free vanilla

1/2 cup silken tofu

grated lemon peel of 1 lemon

1/2 cup boiling water

cooking spray

Oven at 350. lightly coat 11X17 pan with cooking spray. Sift together flours, xanthan gum, baking powder, salt. Set aside.

In food processor cream sugar, butter (or oil if using) vanilla, tofu, lemon peel. Process on hihg till smooth. Add boiling water and process on hihg again till mixed completely. scrape sides down if needed. Spoon batter into pans and bake 25-30 minutes. Cool for 10 minutes before frosting.

If you want sugarless cake, substitute 2/3 cup honey or pure maple syrup and reduce boiling water to 1/3 Cup. Reduce heat to 325.

Namaste cake mixes are incredible and they do not contain any gluten, wheat, corn, soy, dairy, nuts, casein or potato.

I love the chocolate cake mix.

Echoing Artgirl....the label of my Potato Starch has this recipe. IF she can have eggs it actually sounds really yummy.

2 1/4 teaspoon baking powder---can be from corn

1/4 teaspoon salt---can have corn derivatives (iodized salt)

3/4 Cup granulated sugar

1/2 Cup Spectrum brand Canola Oil spread or 1/3 Cup cooking oil

2 teasoon gluten-free vanilla (corn derivatives)

1/2 cup silken tofu (don't know...but could likely have corn in it?)

grated lemon peel of 1 lemon

1/2 cup boiling water

cooking spray-can be corn derived

Just an FYI....I was severely reacting to corn at one point and just wanted to share this info.

If you have been consciously or unconsciously avoiding gluten because of the discomfort it produces then it is likely that your blood antibody testing for celiac disease has been rendered invalid. Valid testing requires regular consumption of generous amounts of gluten. The other strong possibility is that you have NCGS (Non Celiac Gluten Sensitivity) which shares many of the same symptoms with celiac disease but does not have the autoimmune component and thus does not damage the small bowel lining. It is 10x mor common than celiac disease. There is currently no test for NCGS. Celiac disease must first be ruled out. Some experts in the field believe it can be a precursor to the development of celiac disease. Having one or both of the primary genes for developing celiac disease does not imply that you will develop active celiac disease. It simply establishes the potential for it. About 40% of the population has the genetic potential but only about 1% develop active celiac disease.

      TTG blood test and total IGA tested on many occasions which have always remained normal, upper GI pain under my ribs since 2022. I had an endoscopy in 2023 which showed moderate gastritis. no biopsy’s were taken unfortunately. genetic test was positive for HLADQ2. extreme bloating after eating gluten, it’ll feel like I’ve got bricks in my stomach so uncomfortably full. the pain is like a dull ache under the upper left almost like a stitch feeling after a long walk. I am just wanting some advice has anyone here experienced gastritis with a gluten issue before? thank you

      "Conclusions: The urinary iodine level was significantly lower in women with postmenopausal osteoporosis, and iodine replacement may be important in preventing osteoporosis"  Body iodine status in women with postmenopausal osteoporosis Low iodine can cause thyroid problems, but Iodine deficiency will not show up in thyroid tests.  Iodine is important for healing, its job is to kill off defective and aging cells (Apoptosis). Skin, brain fog, nails, muscle tone all inproved when I started taking 600 mcg (RDA 150 - 1000 mcg) of Liquid Iodine drops. Some with dermatitis herpetiformis, Iodine exacerbates the rash.  I started at 1 drop (50 mcg) and worked up to 12 drops, but I don't have dermatitis herpetiformis.

      Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶
