I'm looking for ideas on what to have for breakfast. Does anyone have any ideas that they would like to share?

Eggs, bacon, omelet, Enviro-Kids cereals (available at health food stores), yogurt (we get yoplait), you can order breakfast items from knickknick or from www.celiacspecialties (their donut holes are delicious), gluten free pantry has a pancake mix, there are several Atkins bars that are gluten-free (off the top of my head I know that Atkins cinnamon breakfast bar is gluten-free). Hope this helps~

What I often have for breakfast:

homemade blueberry muffins

homemade banana bread

soy yogurt (I'm CF as well)

smoothies

rice cakes w/ peanut butter

omlette (weekends!)

cream of buckwheat, Bob's Mighty Tasty Hot Ceral, rice bran, or quinoa flakes (or some combination thereof) w/ soy milk, honey, and cinnamon

We cook breakfast meat on the weekends and then just fix eggs and some rice bread with jam for each day and re-heat the meat.

almedingen: I am on the Selected Carbohydrate Diet for Celiac, ibs, etc. This diet is more restrictive than most. I am also lactose intolerant. I have various mixtures of meat and vegetables along with mushrooms, bananas, natural brand of peanut butter or almond butter. I just eat the latter by dabs or tsp. Lima beans cooked to a mush make kind of a cereal like food if you like limas. Cheers, Ruth S.

Think outside the box here.......who says you have to have "breakfast food" in the morning? Why not some leftovers from last night, or some soup if that would tast good? You are a "special" person, so do something special for yourself and eat what tastes good to you when you want it. Some of the suggestions that have been made are good too. I am going to try them.

Cream of Buckwheat cereal w/chopped apples, blueberrie, etc.

Mesa Sunrise cereal w/dried fruit bits and soymillk

Cranberry Sunshine cereal w/soymilk

Egg custard (made with milk or soymilk)

Plain ff yogurt mixed w/vanilla or caramel syrup on top of melon or other fruit

Chocolate Chip Banana (or Pumpkin) Flaxmeal Muffins

Flaxmeal pancakes or waffles (same recipe)

I'm going to try some of the bagels and english muffins suggested. Also, I didn't realize the malt-o-meal corn burst cereal was gluten-free. Cool!

My kids like Fruity Pebbles and I'll sometimes mix a little of this with Corn or Rice Crunch 'Ems for them. Why can't some of the non-sugar intensive, regular cereals be gluten-free? <_< (Or, hey, here's a stretch, maybe a gluten-free cereal with FIBER? Please, if anyone knows of one with lots of fiber, let me know! My past favorite cereals were all whole grain twig or stick thingies. :rolleyes: )

<_< i bought a box of cranberry sunshine cereal made by kashi and was told it wasnt made on dedicated lines so it wasnt safe for us--is my cereal the same as the one you are talking about--it looks so good, but i have been afraid to try it :( --its funny, i never ate much cereal before i went gluten-free and now i love to have it--must be it didnt agree with me all along ;) thanks--deb

Deb, the first cereal I bought after diagnosis was the Cranberry Sunshine as it was on Trader Joe's gluten-free list. I ate the whole box and never got sick. This is the first I've heard that it's not safe for us. It's very yummy but I've switched to Mesa Sunrise as it's more filling. I also love the quinoa flakes that you make like oatmeal, hot and add brown sugar and raisins and chopped walnuts. I like it better than I ever liked oatmeal!

If you can find Lifestream Buckwheat Waffles (gluten-free, of course) in your organic or healthfood store's freezer I urge you to try them! I can even pop one in the toaster and eat it plain on my way to work - they are that good!

I must avoid soy and dairy as well as gluten, so for breakfast I have:

Peanut butter (Adams No Stir or Whole Foods Whole Kids) and fruit spread on gluten-free bread or English muffins or occasionally rice cakes with fruit;

Chopped hardboiled eggs mixed with mashed avocado and gluten-free/SF mayo in a white corn tortilla wrap with fruit;

Turkey ham slice or sausage, fruit, and gluten-free/SF/DF banana date bread or other fruit breads;

Fried eggs in olive oil, gluten-free toast with Smart Beat (gluten-free/SF/DF) margarine and fruit.

:D i always have quaker corn cakes for breakfast--my favorite is caramel corn cakes :P --recently i found cracker jack corn cakes and i loved them, so i went back and bought 2 more bags <_< well, guess what--i didnt realize there are 2 kinds of cracker jacks--both times i went to the store, there was only one style there, so i assumed :( which we should all know better :( anyways, i thought i grabbed the same kind--i ate them and then my sister asked me if i knew there are 2 styles------ :angry: dont buy the cracker jack butter toffee style--they contain barley--thank god, they didnt make me physically ill, but i am sure they are in there telling those little villi to lay down :angry: --i was so upset, i emailed quaker, havent heard a word from them ;) i learned a very good lesson that day--maybe i need to take an adult with me to read the ingredients for me :P deb

Just a note because I didn't see it here yet....

Van's Original Waffles are gluten-free, egg-free and taste great right out of the toaster.

Here's another thing I do for breakfast too....

On the weekend, I brown up about 1.5 lbs of ground beef or turkey, add a little seasoning, add some water or Imagine chicken broth and then throw in some frozen mixed veggies. Boil for about 5-10 minutes and stick it in the fridge. I also steam a pot of brown rice, put THAT in the fridge and then eat a scoop of the rice with the meat/veggies in the morning. I know it sounds funny, but no sugar rush, it sticks with me, gets in an extra serving of fiber and veggies for the day and tastes good. Add an orange a couple of hours later and I've got a bunch of my "suggested servings" before lunch!

About the Cranberry Sunshine cereal... According to the woman at my healthfood store, she says the company has changed their processing and the product is now made on dedicated lines (she told me this about a month ago.) They now sell the cereal as gluten-free (which means I get the 10% gluten-free product discount :rolleyes:) I've had two boxes of it so far and not had a single reaction (I'm one of those quick to react people, so I'm assuming...) I love this cereal. I mix it with the Mesa Sunrise.

My healthfood store is Healthway. They have a policy (here anyway) that if you are GI and buy gluten-free foods, you get a 10% discount. :D

I make this almost every weekend. It is really yummy and reheats well.

Hash Brown Breakfast Casserole

Makes 4 servings

4 slices bacon

2 cups frozen shredded hash brown potatoes

1/4 cup chopped onions

1/4 cup chopped green peppers

4 eggs

1/4 cup milk

1/2 teaspoon salt

Dash pepper

1 cup shredded cheddar cheese

Preheat oven to 350 degrees.

Cut bacon into small pieces (about 1" wide).

In a large skillet cook bacon until crisp. Remove bacon from pan and set aside.

In same skillet with bacon drippings combine potatoes, onion and green pepper. Cook uncovered, over medium low heat about 8-10 minutes stirring occasionally until potatoes are crisp and browned. Remove from heat.

In a small bowl, beat together eggs, milk, salt and pepper. Stir in shredded cheese.

Add the egg mixture to potato mixture in pan. Stir so all is combined.

Put potato mixture in a greased pie tin or shallow baking dish.

Bake at 350 degrees for about 30 minutes or until lightly browned.

      I had the same thing happen to me at around your age, and to this day it's the most painful experience I've ever had. For me it was the right side of my head, above my ear, running from my nerves in my neck. For years before my outbreak I felt a tingling sensation shooting along the exact nerves that ended up exactly where the shingles blisters appeared. I highly recommend the two shot shingles vaccine as soon as your turn 50--I did this because I started to get the same tingling sensations in the same area, and after the vaccines I've never felt that again.  As you likely know, shingles is caused by chicken pox, which was once though of as one of those harmless childhood viruses that everyone should catch in the wild--little did they know that it can stay in your nervous system for your entire life, and cause major issues as you age.

      Thanks for the info. I recently moved to CA from Wyoming and in that western region the Costco and Sam's /Walmart Brands have many nuts and more products that are labeled gluten free. I was told it's because those products are packaged and processed  in different  plants. Some plants can be labeled  gluten free because the plant does not also package gluten products and they know that for example the trucks, containers equipment are not used to handle wheat, barely or Rye. The Walmart butter in the western region says gluten free but not here. Most of The Kirkland and Members Mark brands in CA say they are from Vietnam. That's not the case in Wyoming and Colorado. I've spoken to customer service at the stores here in California. They were not helpful. I check labels every time I go to the store. The stores where I am are a Sh*tshow. The Magalopoly grocery chain Vons/Safeway/Albertsons, etc. are the same. Fishers and Planters brands no longer say gluten free. It could be regional. There are nuts with sugar coatings and fruit and nut mixes at the big chains that are labeled gluten free but I don't want the fruit or sugar.  It's so difficult I am considering moving again. I thought it would be easier to find safe food in a more populated area. It's actually worse.  I was undiagnosed for most of my life but not because I didn't try to figure it out. So I have had all the complications possible. I don't have any spare organs left.  No a little gluten will hurt you. The autoimmune process continues to destroy your organs though you may not feel it. If you are getting a little all the time and as much as we try we probably all are and so the damage is happening. Now the FDA has pretty much abandoned celiacs. There are no requirements for labeling for common allergens on medications. All the generic drugs made outside the US are not regulated for common allergens and the FDA is taking the last gluten free porcine Thyroid med, NP Thyroid, off the market in 2026. I was being glutened by a generic levothyroxin. The insurance wouldn't pay for the gluten free brand any longer because the FDA took them all off their approved formulary. So now I am paying $147 out of pocket for NP Thyroid but shortly I will have no safe choice. Other people with allergies should be aware that these foreign generic pharmaceutical producers are using ground shellfish shell as pill coatings and anti-desicants. The FDA knows this but  now just waits for consumers to complain or die. The take over of Wholefoods by Amazon destroyed a very reliable source of good high quality food for people with allergies and for people who wanted good reliably organic food. Bezos thought  he could make a fortune off people who were paying alot for organic and allergen free food by substituting cheap brands from Thailand. He didn't understand who the customers were who were willing to pay more for that food and why. I went from spending hundreds to nothing because Bezo removed every single trusted brand that I was buying. Now they are closing Whole foods stores across the country. In CA, Mill Valley store (closed July 2025) and the National Blvd. store in West Los Angeles (closed October 2025). The Cupertino store will close.  In recent years I have learned to be careful and trust no one. I have been deleberately glutened in a restaurant that was my favorite (a new employee). The Chef owner was not in the kitchen that night. I've had  a metal scouring pad cut up over my food.The chain offered gluten free dishes but it only takes one crazy who thinks you're a problem as a food fadist. Good thing I always look. Good thing they didn't do that to food going to a child with a busy mom.  I give big tips and apologize for having to ask in restaurants but mental illness seem to be rampant. I've learn the hard way.          I don't buy any processed food that doesn't say gluten free.  I am a life long Catholic. I worked for the Church while at college. I don't go to Church anymore because the men at the top decided Jesus is gluten. The special hosts are gluten less not gluten free. No I can't drink wine after people with gluten in their mouth and a variety of deadly germs. I have been abandoned and excluded by my Church/Family.  Having nearly died several times, safe food is paramount. If your immune system collapses as mine did, you get sepsis. It can kill you very quickly. I spent 5 days unconscious and had to have my appendix and gall bladder removed because they were necrotic. I was 25. They didn't figure out I had celiac till I was 53. No one will take the time to tell you what can happen when your immune system gets overwhelmed from its constant fighting the gluten and just stops. It is miserable that our food is processed so carelessly. Our food in many aspects is not safe. And the merging of all the grocery chains has made it far worse. Its a disaster. Krogers also recently purchased Vitacost where I was getting the products I could no longer get at Whole Foods. Kroger is eliminating those products from Vitacost just a Bezos did from WF. I am looking for reliable and certified sources for nuts. I have lived the worst consequences of the disease and being exposed unknowingly and maliciously. Once I was diagnosed I learned way more than anyone should have to about the food industry.  I don't do gray areas. And now I dont eat out except very rarely.  I have not eaten fast food for 30 years before the celiac diagnosis. Gluten aside..... It's not food and it's not safe.  No one has got our backs. Sharing safe food sources is one thing we can do to try to be safe.
