I Have A New School Lunch Idea!

I'm sure this has been suggested a million times ..but for newbies like me... I'm excited anytime I hear of something other than a ham roll up to pack my DD for lunch!

Well, yesterday I bought some Llyods Barbeque (for the 1st time) for my DH...and as I was heating it up...I happened to turn the package over and it said GLUTEN FREE! I was SO happy...and this kind is soooo juicy with sauce I thought she might like it. So when she got home from school (she's 10)...I heated it up, spread it on a corn tortilla and sprinkled cheese on it and she loved it so much she took it today to school. Her teacher will heat up her food but I just did it in the microwave and put it in a small thermos....packed 2 tortilla shells, a baggie of shredded cheese....a snack pack of Mt. Olive garlic pickles and some yogos and she was set. She didn't even eat the yogo's b/c she was so full.

Walmart has the barbeque on sale right now so I'm sending DH back to get some more tubs so I can freeze them

I hope I've given at least one person out there a new idea....I'm just thrilled about it. :D

Thanks for the heads up. I'll check it out. My son's appetite has doubled this year so I'm trying to up his portions and find more meats for him. He loves BBQ. I sometimes slice hot dogs and saute in a pan and add just a touch of BBQ sauce at the end. If you want to see what we do for ideas, click on the link on my profile. All Ds's lunches are served room temp.(with an ice pack included for food safety).

Thanks, Mary! My son loves BBQ. I assumed any pre-made stuff wouldn't be gluten-free. I've made it twice with left over pork tenderloin, but we don't usually have leftovers and my "quickie" version isn't as good as "real" BBQ. Thanks!

I think the Llyods has soybean oil in it, or something else my daughter is allergic to. I used to buy the Kroger brand which looks just like Llyods but she wasn't allergic. Fred Meyer quit carrying it and QFC never did. :angry: More recently I found some other brand of BBQ shredded chicken that she loves, but husband thinks it tastes nasty. I have also found a BBQ potroast (can't remember the brand but it's in a rectangular container) that they both like. And at Costco they have Carnitas and shredded beef that are both gluten free. They both love that stuff but eat far too much of it.

This week I am trying a new crockpot recipe that I hope will be good so she can take some leftovers to school the next day in a thermos. It is hotdogs cut in thirds, wrapped with bacon cut in thirds and secured with a toothpick. These are put in the crock and layered with brown sugar and cooked on low for 6 hours. I have uncured beef hotdogs, uncured bacon and organic brown sugar. I plan to do another crockpot with potatoes, onions and olive oil.

I made something like that for dinner tonight. I put chicken breasts in the crockpot with BBQ sauce. I shredded it and put it on corn tortillas with shredded cheddar. In the crockpot you can make a ton and freeze it.

I was going to suggest the crockpot for the pulled pork too. I put a pork tenderloin in with 1.5 cups of vinegar and cook on low all day. Then I toss with some Sweet Baby Ray's BBQ sauce and freeze in small portions. Great for quick meals.

I also make Little Smokies with BBQ sauce for DS..he loves to take those to school in his thermos.

Not all but many regular ones are gluten-free, some of us just prefer the uncured.

Most of the hot dogs and bacon are fine. A lot of time Vince will only eat a hot dog and mac & cheese. I am able to buy the cheep ones from Aldis when money is tight and it be safe

You have to read every label. Some are gluten-free, some are not. We also have additional allergies. Husband and daughter just prefer the uncured ones.

      Two months ago, I started taking Dupixent for dermatitis herpetiformis and it has completely cleared it up. I can't believe it! I have had a terrible painful, intensely itchy rash for over a year despite going fully gluten-free. See if your doctor will prescribe Dupixent. It can be expensive but I am getting it free. When the dermatitis herpetiformis was bad I could not do anything. I just lay in bed covered in ice packs to ease the pain/itching and using way too Clobetasol. Dapsone is also very good for dermatitis herpetiformis (and it is generic). It helped me and the results were immediate but it gave me severe anemia so the Dupixent is better for me. Not sure if it works for everyone. I cannot help with the cause of your stress but from experience I am sure the severe stress is making the celiac and dermatitis herpetiformis worse. Very difficult for you with having children to care for and you being so sick. Would this man be willing to see a family therapist with you? He may be angry at you or imagine that your illness is a psychosomatic excuse not to take care of him. A therapist might help even if he won't go with you. Also do you have any family that you could move in with (with the kids) for a short time to get away? A break may be good for you both.

      @tiffanygosci, Thiamine deficiency is a thing in pregnancy for "normal" people, so it's exponentially more important for those with celiac disease and malabsorption issues. I studied nutrition before earning a degree in Microbiology because I was curious what the vitamins were doing inside the body.  See my blog.  Click on my name to go to my page, scroll to drop down menu "activities" and select blog.   So glad you're motivated to see the dietician!  We're always happy to help with questions.  Keep us posted on your progress!

      Thank you for sharing all of this, Knitty Kitty! I did just want someone to share some commonality with. I did not know This one Deficiency was a thing and that it's common for Celiac Disease. It makes sense since this is a disorder that causes malabsorption. I will have to keep this in mind for my next appointments. You also just spurred me on to make that Dietician appointment. There's a lot of information online but I do need to see a professional. There is too much to juggle on my own with this condition.<3

      I think your initial idea, eat gluten and be tested, was excellent. Now you have fear of that testing, but isn’t there also a fear each time you eat gluten that you’re injuring your body? Possibly affecting future fertility, bone health and more? Wouldn’t it be better to know for sure one way or the other? If you test negative, then you celebrate and get tested occasionally to make sure the tests don’t turn positive again. If you test positive, of course the recommendation from me and others is to stop gluten entirely.  But if you’re unable to convince yourself to do that, could a positive test at least convince you to minimize your gluten consumption?  Immune reactions are generally what is called dose response, the bigger the dose, the bigger the response (in this case, damage to your intestines and body). So while I am NOT saying you should eat any gluten with a positive test, the less the better.

      @Riley., Welcome to the forum, but don't do it!  Don't continue to eat gluten!  The health problems that will come if you continue to eat gluten are not worth it.  Problems may not show up for years, but the constant inflammation and nutritional losses will manifest eventually.  There's many of us oldsters on the forum who wish they'd been diagnosed as early.    Fertility problems, gallbladder removal, diabetes, osteoporosis and mental health challenges are future health issues you are toying with.   To dispel fear, learn more about what you are afraid of.  Be proactive.  Start or join a Celiac group in your area.  Learn about vitamins and nutrition.   Has your mother been checked for Celiac?  It's inherited.  She may be influencing you to eat gluten as a denial of her own symptoms.  Don't let friends and family sway you away from the gluten-free diet.  You know your path.  Stick to it.  Be brave.
