Hi!

I thought this would be a fun thread. Post you all-time favorite gluten free dinner recipe. There are a lot of bad ones out there - what's your go to? Here's mine:

This is a family recipe and it is Delicious with a capital "d". It is great hot or cold and I frequently bring it to work for lunch with an apple.

Ricotta & Spinach Pie

I use Pie crust #5 from the site

Filling:

10 oz frozen spinach

15 oz ricotta cheese

1/2 C shredded parmesan cheese, divided

Pinch of salt

1/4 C gluten-free all-purpose flour

2 T butter

1. Make Pie crust according to recipe.

2. Thaw the spinach and strain all of the liquid out in a colander and put into a large bowl.

3. Stir in half of parmesan cheese, salt, flour and all of the ricotta cheese until well blended.

4. Spoon mixture onto pie crust and put remaining parmesan cheese on top.

5. Break butter into small pieces and put on to of pie as well.

6. Bake 350 degrees for 40minutes.

7. Enjoy!

My go-to dinner is stir fry. We fry all our veggies in oil and soy sauce on the stove until tender. We boil the rice noodles like the package says. Mmm, so simple and so yummie!

Steak (chick or pork) on the grill, that has been marinated in La Choy Teriyaki overnight., with baked potato and cesar salad.

Summer time dinner is spiced shrimp (Old Bay) and fresh corn on the cob with sliced home grown tomatoes.

We like to put chopped sweet and white potatoes, carrots and a big onion in the crock pot, topped with a meat of choice (we like a chuck roast trimmed of all visible fat) and a bottle of Sweet Baby Rays BBQ Sauce poured over the top. Cook for 8-10 hours.

It's so good and the leftovers are incredible. :)

Mango, Shrimp & Coconut Springrolls

Gluten Soy Dairy & Nightshade Free

Great anytime!!!

1 tb sesame oil

1 tb lime juice

10 spigs fresh cilantro, minced

4 tb sweetened coconut

1 mango, seeded, peeled and chopped

1 can baby corn, cut into chunks

1/2 cup pea pods

1 cup baby shrimp

1 fresh garlic clove, minced

1 ts fresh grated ginger

kosher or sea salt to taste

8 spring roll wrappers (rice or tapioca-up to you)

In a large mixing bowl add all ingredients, stir well. Set aside

Turn on tap (water) to warm temp and let run, and use your favorite cutting board to assemble rolls. Hold 1 wrap under running water, making sure you get front and back, hold under for about 30 seconds, until it starts to soften, then place flat on cutting board surface. Spoon filling across middle about 2 inches thick, then wrap sides over, bottom up and fold over.

Repeat.

Serves 4.

No quantities on this one, all to your taste and needs: (not even a name!)

Brown boneless chicken thighs in (butter/oil/whatever you use) Remove from pan.

Saute sliced mushrooms in the same pan with some garlic, pepper and thyme until they have softened and released juices.

Add some chicken stock and white wine and return chicken to pan. Cover and simmer until chicken is done (won't take long). I usually add sour cream at this point, but the sauce can also be thickened with thickener of your choice. Serve over rice. So easy! Especially if you have cooked rice in the fridge. :lol:

french fries (new potatoes)

onion rings (breaded in corn flour also)

Not so much a recipe because I use prepared sauce, but...

A pound or so of ground beef browned, then I add a handful of Just Onions and Just Bell Peppers, a jar of pasta sauce (usually Amy's) along with a small can of plain tomato sauce and some Italian seasoning. Then mix in a package of cooked rice or corn pasta. If I want to stretch this out further, I add a can of corn.

Another favorite is Hormel Roast Beef Au Jus heated in a large skillet and broken into small pieces. Then add a package of cooked rice fettucine.

Go to meal is chicken and salsa rice.

I get the "cheater chicken" from Costco and have it for dinner one night and this is what I do with the leftovers;

Cook 1 c. rice with 2 cups chicken stock, cover low for 20. min.

Add one cup salsa, let absorb into rice. (as best as it will)

Tear up chicken pieces, put in pot and heat thru, & stir

This is great to freeze in individual containers for easy lunches later.

Pizza Bake

cook up about 1/2 bag of tinkyada

brown a pkg of jimmy dean sausage

while those cook up -- chop up some pepperoni, green peppers

throw it all in a 9x13 pan with minced garlic, red pepper flakes, italian cheese, and a jar of pizza sauce

cover and bake 25 or 30 min.

(GREAT leftovers!!!!)

Easy, Quick, Inexpensive Lasagna

-jar of Great Value Traditional pasta sauce

-Tinkyada lasagna noodles

-Great Value 2% cottage cheese

-Great Value Italian shredded cheese

- pound of ground beef

Cook noodles as you brown ground beef, layer all ingredients, cook @375 for 30 minutes, let sit for 30 minutes to firm up, serve with Chebe frozen rolls and salad

Spicy Roasted Chicken Legs

24 chicken drumsticks--peel back or cut away skin as desired

2 sticks butter

1/2 cup lemon juice

1 Tablespoon Lawry's seasoned salt, or whatever seasonings. Adjust as needed for taste.

Melt the butter, add lemon juice and seasonings. Dip the drumsticks in the butter mixture, lay on a roasting pan with a grill. Brush extra butter on drumsticks. Sprinkle with extra seasonings.

Bake at 400 degrees for 40 minutes, then broil a few minutes to brown the skin.

We always serve this with rice and veggies. So easy and SO good. I save the the bones to make homemade chicken stock.

Everyone has such great recipes. My all time no fails are:

grilling - chicken, hamburgers, pork chops etc.

This is my no fail and easy, easy stove top recipe.

1 bag gluten free pasta

1 jar pasta sauce (I use Rao which I get at Safeway (about $10/jar) and put half a jar of Marinara and half a jar of Arrabiata for spice)

frozen cooked shrimp

Thaw shrimp. This doesn't take long in a bowl of cool water.

Cook pasta according to directions.

Heat sauce in pan. When pasta is almost done, add shrimp to the sauce.

Pour over spaghetti and sprinkle with freshly grated parmesan cheese.

I did a loaded potato soup the other night.

Start by peeling and cubing 5-6 potatoes-- about six cups worth. Boil in salted water until forkable/al dente, drain and divide in half.

Meanwhile, melt 3 tbs butter in the bottom of a dutch oven or stock pot. Add 1/2 to 1 cup of minced onions and saute until soft. Add 2 pressed cloves of garlic and saute another 30 seconds. Add 3 tbs corn starch and stir to mix well.

All at once, add 3 c. cold milk and whisk mixture until smooth. Heat over medium heat until thickened (mixture should coat the back of a mixing spoon). While heating, add white pepper and salt to taste. When thickened, add 1 1/2 cups of chicken stock and bring to just under a boil. When potatoes are finished cooking, put half in a food processor/blender with 3 c. chicken stock and 1 tbs corn starch and puree until smooth. Add puree to soup pot at end of cooking. Remove from heat.

Stir in remaining cooked potatoes, 1/2 c. sour cream, 1 c. shredded cheddar, four slices of bacon, cooked and crumbled, and 1/3 c. dried chives. Make sure the cheese and sour cream blend in completely.

I suppose technically this is a breakfast recipe, but we have it for dinner often---my kids love breakfast for dinner.

frozen hash browns (cubed are the ones I've used, but shredded would work great too)

1/4 cup butter or margarine, melted

1 1/2-2 cups chopped ham

2 cups eggs, beaten

1 cup shredded American cheese (I omit this, because of my dairy issues)

Spread the hash browns over the bottom of a 13x9 baking pan. Sometimes I just boil potatoes and season them, instead of buying hash browns. Drizzle with the butter, sprinkle the ham over the potatoes, pour eggs over all. If using, sprinkle with cheese.

Sprinkle with paprika, bake at 350 degrees F for 45-55 minutes, until firm in the middle. This is so good, we never have leftovers.

It calls for dairy sour cream and half and half, and i can tolerate small amounts. I make this about twice a month. My husband LOVES it. I use homemade chicken stock, no sherry, and I cut the salt by 2/3rds. It is addictive!

Chunks of pork and beef, just chuck them into a pot with some chopped onions, some peppercorns, some allspice, and salt and then top with water. Then just stick it in the oven for 3 or so hours. I usually make some rice or potatoes to have with it, maybe some steamed veggies too.

If you have been consciously or unconsciously avoiding gluten because of the discomfort it produces then it is likely that your blood antibody testing for celiac disease has been rendered invalid. Valid testing requires regular consumption of generous amounts of gluten. The other strong possibility is that you have NCGS (Non Celiac Gluten Sensitivity) which shares many of the same symptoms with celiac disease but does not have the autoimmune component and thus does not damage the small bowel lining. It is 10x mor common than celiac disease. There is currently no test for NCGS. Celiac disease must first be ruled out. Some experts in the field believe it can be a precursor to the development of celiac disease. Having one or both of the primary genes for developing celiac disease does not imply that you will develop active celiac disease. It simply establishes the potential for it. About 40% of the population has the genetic potential but only about 1% develop active celiac disease.

      TTG blood test and total IGA tested on many occasions which have always remained normal, upper GI pain under my ribs since 2022. I had an endoscopy in 2023 which showed moderate gastritis. no biopsy’s were taken unfortunately. genetic test was positive for HLADQ2. extreme bloating after eating gluten, it’ll feel like I’ve got bricks in my stomach so uncomfortably full. the pain is like a dull ache under the upper left almost like a stitch feeling after a long walk. I am just wanting some advice has anyone here experienced gastritis with a gluten issue before? thank you

      "Conclusions: The urinary iodine level was significantly lower in women with postmenopausal osteoporosis, and iodine replacement may be important in preventing osteoporosis"  Body iodine status in women with postmenopausal osteoporosis Low iodine can cause thyroid problems, but Iodine deficiency will not show up in thyroid tests.  Iodine is important for healing, its job is to kill off defective and aging cells (Apoptosis). Skin, brain fog, nails, muscle tone all inproved when I started taking 600 mcg (RDA 150 - 1000 mcg) of Liquid Iodine drops. Some with dermatitis herpetiformis, Iodine exacerbates the rash.  I started at 1 drop (50 mcg) and worked up to 12 drops, but I don't have dermatitis herpetiformis.

      Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶
