I Think I Was Glutened, But How?

I am so frustrated, I have gone 6 months, with maybe one glutening, until recently. I think I had one last weekend...at a party, so I can understand that one. But, I was glutened today, at my house, with a lunch I prepared, and I just don't know what did it?

Our house is 100& gluten-free.

For lunch I had, this is what I prepared for the 4 of us in the house today:

Cut up veggies: cucumber, celery, yellow bell pepper, carrots and radishes

Fruit: watermellon, grapes

Havarti dill cheese from Trader Joes (which I buy and eat weekly)

gluten-free rice crackers by Ka-Me, package says "gluten-free"

handful of Boulder Canyon parmesan and garlic kettle potato chips, bag says "gluten-free"

I also made some tuna salad with:

organic canned tuna in water

Daisy sour cream

Grey Poupon dijon mustard

fresh lime juice

herbs from the garden

For breakfast all I had were some prunes, that I have eaten for months. And a handful of Tostito chips between breakfast and lunch, which I had eaten the past couple of days with no reaction.

About 30 min after lunch, my stomach started hurting, and I started getting chills, and felt nauseous, but didn't want to throw up because I was scared to put the gluten back through my system. I took a nap, woke up, felt fine, until I got up..tummy ache still...had husband go buy me some liquid pepto. Better now, but still feeling "fragile"

Any clue what it could have been??

I have heard (and seen) *SOME* dijon's that have wheat. did you check the label?

I did check it. And before I bought it, I read that Grey Poupon would be safe. Hmm.....

All sounds gluten-free. Maybe it wasn't gluten at all? We tend to blame every bad feeling on gluten.

Are you intolerant to soy or glutamates (MSG)? Check your Kettle chips and see if yeast extract is an ingredient. If it is, this is a derivative of MSG (a very strong glutamate) and many people get ill from MSG. I was glutened by a Kettle chip (lightly salted-no MSG). The company's product PPM level may be too high for you to handle (they test up to the max. allowable level-20 ppm) Parmesan cheese is also a food extremely high in natural occuring glutamates. Does your tuna contain soy? Can you tolerate dairy products (sour cream and cheese)? What brand of dish soap do you use....many contain gluten although the manufacturer will say they are gluten-free.

I don't know about where you live but here there is a stomach thing going around. I had it this weekend and hit the pepto for about 3 days. I know what I was eating was OK, boring but OK. It is so hard sometimes to tell the difference between the flu and a glutening. I often describe my symptoms to lay people as like having the worst stomach flu you've ever had every day!

I guess it could be, but that would seem odd right after eating? I live in Wisconsin, southeast, right near IL.

And I use Seventh Generation dish soap, which I think is pretty safe. I use all organic hand-soaps and lotions in the house that I have carefully checked and used from even before going gluten-free.

I am fine with soy and dairy.

Gosh, I didn't know that about parmesan cheese, I eat it daily!! Even last night on my white rice when my tummy hurt.

I've been wondering about Tostitos lately as well.. I'm being glutened regularly and I cannot for the life of me figure out how... I know that Tostitos makes some of their stuff with gluten, so maybe contamination at the factory?

I've also been wondering about the rice crackers I buy.. they claim to be gluten-free but I don't know if I believe it, and I have no idea how to get it tested... The company is "hot kids"...

Maybe one of those, because I know that I've had doubts about them both due to unexplainable reactions... Your reaction sounds like mine as soon as I'm glutened.. fever-like, pain, nausea, but no actual fever... If you had an actual fever it would definitely be viral/bacterial...

This is true.

I know in the past, when I first started gluten-free and wasn't completely healed, I reacted a lot to CC in products- maybe the Kame rice crackers. I know I *used* to react to them.

Interesting about the Ma-Ke rice crackers. It was actually my first time I ever had them, though it does say "gluten-free" right on the package. They had some rice crackers that did not say, but the package I bought did say it.

i usually buy the Sesmark rice crackers, which I have never had an issue, but this was all I could find at this particular store.

I guess that could make sense, since it was something new to me that I ate....as well as the Boulder Canyon potato chips, also packaged as "gluten-free".

See, my issue with my rice crackers that claim to be 'gluten free'- are that I know not all flavours are gluten free. And given they are manufactured in Asia, I HIGHLY doubt that this company has a dedicated area for their gluten free line... ALl the products I buy made in North America say "batch tested" or "dedicated factory".. These rice cakes just claim to be gluten free..

I don't know, I had emailed the Canadian government on ways to test products that have these claims, and I got nowhere...

I just stopped buying them...

      Hello, @Jordan Carlson, So glad you're feeling better.   Tecta is a proton pump inhibitor.  PPI's also interfere with the production of the intrinsic factor needed to absorb Vitamin B12.  Increasing the amount of B12 you supplement has helped overcome the lack of intrinsic factor needed to absorb B12. Proton pump inhibitors also reduce the production of digestive juices (stomach acids).  This results in foods not being digested thoroughly.  If foods are not digested sufficiently, the vitamins and other nutrients aren't released from the food, and the body cannot absorb them.  This sets up a vicious cycle. Acid reflux and Gerd are actually symptoms of producing too little stomach acid.  Insufficient stomach acid production is seen with Thiamine and Niacin deficiencies.  PPI's like Tecta also block the transporters that pull Thiamine into cells, preventing absorption of thiamine.  Other symptoms of Thiamine deficiency are difficulty swallowing, gagging, problems with food texture, dysphagia. Other symptoms of Thiamine deficiency are symptoms of ADHD and anxiety.  Vyvanse also blocks thiamine transporters contributing further to Thiamine deficiency.  Pristiq has been shown to work better if thiamine is supplemented at the same time because thiamine is needed to make serotonin.  Doctors don't recognize anxiety and depression and adult onset ADHD as early symptoms of Thiamine deficiency. Stomach acid is needed to digest Vitamin C (ascorbic acid) in fruits and vegetables.  Ascorbic acid left undigested can cause intestinal upsets, anxiety, and heart palpitations.   Yes, a child can be born with nutritional deficiencies if the parents were deficient.  Parents who are thiamine deficient have offspring with fewer thiamine transporters on cell surfaces, making thiamine deficiency easier to develop in the children.  A person can struggle along for years with subclinical vitamin deficiencies.  Been here, done this.  Please consider supplementing with Thiamine in the form TTFD (tetrahydrofurfuryl disulfide) which helps immensely with dysphagia and neurological symptoms like anxiety, depression, and ADHD symptoms.  Benfotiamine helps with improving intestinal health.  A B Complex and NeuroMag (a magnesium supplement), and Vitamin D are needed also.

      @pothosqueen, Welcome to the tribe! You'll want to get checked for nutritional deficiencies and start on supplementation of B vitamins, especially Thiamine Vitamin B 1.   There's some scientific evidence that the fat pad that buffers the aorta which disappears in SMA is caused by deficiency in Thiamine.   In Thiamine deficiency, the body burns its stored fat as a source of fuel.  That fat pad between the aorta and digestive system gets used as fuel, too.       Wow! You're pretty young to have a diagnosis of SMA syndrome. But youth also has its advantages when it comes to healing, without a doubt. You might be surprised to find out how your health improves and how much better you feel once you eliminate gluten from your diet. Celiac disease is an autoimmune disorder that, when gluten is consumed, triggers an attack on the villous lining of the small bowel. This is the section of the intestines where all our nutrition is absorbed. It is made up of billions of tiny finger-like projections that create a tremendous surface area for absorbing nutrients. For the person with celiac disease, unchecked gluten consumption generates inflammation that wears down these fingers and, over time, greatly reduces the nutrient absorbing efficiency of the small bowel lining. This can generate a whole host of other nutrient deficiency related medical problems. We also now know that the autoimmune reaction to gluten is not necessarily limited to the lining of the small bowel such that celiac disease can damage other body systems and organs such as the liver and the joints and cause neurological problems.  It can take around two years for the villous lining to completely heal but most people start feeling better well before then. It's also important to realize that celiac disease can cause intolerance to some other foods whose protein structures are similar to gluten. Chief among them are dairy and oats but also eggs, corn and soy. Just keep that in mind.
