Sourdough gluten-free Bread

I went gluten-free after getting the flu a year ago. I'm pretty sensitive to cc, so our house is gluten-free except for hubby's beer and (highly segregated) flour tortillas. My one concession to his previous gluten-full life is occasionally baking sourdough wheat bread (I cook a lot). It is a 3-day process using my (gluten-free flour, yogurt, yeast) starter, and I don't get sick from eating this bread. I have gotten sick from labeled gluten-free breads in the stores, so I mostly make my own gluten-free bread, including gluten-free sourdough. I don't use wheat in the gluten-free sourdough, just various gluten-free flours and water. It takes a day or two to brew, and the last stage is to add xanthan gum and other ingredients for final kneading and rising. I think the gluten-free sourdough starter helps to neutralize gluten that can be in the gluten-free flours, since gluten-free doesn't necessarily mean gluten-free, and gives the gluten-free bread a bit more flavor. I haven't found recipes for gluten-free sourdough, but my gluten-free bread recipes are easy to adjust.

I independently came up with the same idea for treating gluten contamination in gluten free grains. I came up with this post when I did a search. Before I have used the sort and wash technique, but I don't think that is working well enough. I'm adding the sourdough treatment now to see if that makes the difference. I had my first batch today. Is this working for you still?

      @pilber309, as knittykitty pointed out, lactose intolerance is not the only issue with dairy in celiac community. Lactose intolerance has to do with the sugar component of dairy, lactose. However, some celiacs react to a protein fraction in dairy, namely, casein, like they do gluten.

      Stop eating oats as it did give me irritation.The only diffrent thing i have been consuming are a new probitics which seem to have a fruit ive never heard of as a prebiotic

      It could well be a new intolerance developing.  Does your diet incorporate pure oats i.e. those safe for coeliac consumption?  I find I can only tolerate a certain amount, same goes for dairy in fact, then I start to get gastric symptoms.   Or have you started consuming a new type of gluten-free bread, or more gluten-free bread than normal, that might contain oats?  I remember reading a post on this forum from a woman who had started to eat a lot of loaves made with oat flour and her coeliac symptoms kicked off again.  I am sure you know this, but some coeliacs cannot tolerate pure oats.

      I eat a lot of dairy but its intermittent is this burning so I would assume it would happen all the time. Plus I have been tested for lactose intolerance  etc and I am fine and the other symptoms of that I don't get. As a aside  my dad died last month after a long illness so I wonder if the stress of that might be a influence as a bodily reaction to stress.
