Those burgers sound delicious!

I am happy to report that my first ever fried chicken (yes, ever) turned out freakin amazing. The only thing between me and a second piece was thoughts of buttoning my pants tomorrow. :ph34r:

I'm trying a new recipe, Cuban-style pork and sweet potato stew. It's done in a slow cooker and counts only 7 points on Weight Watcher's. Sounds like a winner, but I'll let you know later. I'm doing a black bean and corn salad with it.

We have become tired of the same old stuff, so I am trying to spread out to different cultures. I am "deep South" so I have found most of the ways to alter comfort food like fried chicken, mac and cheese, and all those garden vegetables with cornbread. Thai is easy and usually I don't even have to modify the recipes. Since someone told me about Tinkyada pasta, I have done quite a few Italian dishes.

My great revealation is that if I make a game of it, this gluten -free business is not so bad. Beats the heck out of being sick!

I have my eye out for a good Thai green curry recipe if anyone has one :) :)

Making it fun is definitely the way to go. I like finding a new ingredient and trying it lots of ways. I can't get enough sprouts at the moment...we have pork tonight, probably stir fried ( with sprouts if Mr Mindwarp isn't home, without if he is)

Carnitas brewing in the crockpot - smells good.

Mixing flavors -- have some left over corn bread so going to make regular stuffing, but throw in a bit of green chili.

For me japanese sweet potato fries and pork without peppers.

Just registered - well waitlisted for Chemistry and Biology -- crazy I am voluntarily signing up for courses I successfully avoided in Business School -- here's hoping everyone on the waitlist gets in :D

Our little co-ed! good for you taking classes again! I ducked Chem classes too ---but married a chemist. Life balances out.

BTW, it was a ridiculous -10 this morning, so you would be thrilled living here. Me? not so much <_<

Roasted chicken

Smashed potatoes for the hubs

Green beans (and I made a few extra sweet potatoes last night so I'll fry them up in coconut oil for me.)

My elliptical is right on the other side of my desk, so I actually can see it over the top of my monitor. I have been glaring at it all day. Evil torture device. It feels good to be able to be able to exercise but I'm not fond of the whole getting used to it thing. Can we both just hide in closets until our bodies adjust?

I'm too used up to cook, I'll oven the 2 pieces of fried chicken that survived last night intact and make some mashed potatoes to go with it and some corn. I hardly think I'll be suffering. :D

Dinner tonight is pork burgers with my green tomato chutney, steamed potatoes (sweet potato for me) and carrots, green salad.

Sorta mish mash of yummies. Not the healthiest meal I have ever had...

Homemade Gingerale - it is sooooooooooooooooooo good!

I made some maple bacon chickpea candy that is surreal. Ooey gooey and wonderful.

Deviled Eggs with bourbon and horseradish cream

Homemade crackers with marinated feta (with sundried tomatoes, lemon zest, etc.)

Lightly curried chicken and veggies over white rice. I used leftover chicken that didnt make it into the cheese sauce last night, needed something quick and easy since I watched my little cousin today and I don't think I have ever been so happy to have a child go home.

I made cheeseburger chowder. Grass-fed beef, onions, potatos, pan-roasted cauliflower,

scallions, milk, sharp/extra sharp cheddar & romano, and a whole pound of sour cream.

Not for the the faint (or clogged!) of heart hahahahaha!!! Ooooooh so tasty, especially

in such cold weather.

Hubs had pizza <_< Friday night is pizza night, after all

but I had chicken & veg soup (no rice, no noodles, no crackers ...argh!)

Gym --day 3 this week (I rest in between) and still able to walk. whoohoo

and just to b%$@# a little.....It's really bloody cold here and I hate it. I want sun and heat. B)

We're having a heatwave. It was up to 40 today. I had to go out this afternoon and just wore long sleeves and completely skipped a coat. This is of course following our extremely rare freezing rain storm yesterday.

Pork tonight. Pigs are such magical creatures. BBQ loin, mashed taters, garlic fried green beans. My husband is pretty sure that it is green bean fried garlic. Good thing he doesn't mind the smell, and I can be 100% sure he is not a vampire.

We are having another three days of rain -- a very good winter for us thus far -- we need water!

Dinner is Turkey Soup Encores for men and their friends.

Zu-noodles with some sort of meat for me.

Aebleskivers with hot carmel fudge sauce for them -- chocolate mooooooose for me, again -- hmmm may be time for more blueberry "ice cream" :rolleyes:

Tonight I made Creamy Shrimp and Grits with large stone ground grits. Sauce included thingers such as white wine, garlic, lemon juice, tomatoes, chipotles en adobo... For something green and relatively healthy (!) I added peas.

And for dessert I made Chocolate Pots de Creme for my dear husband. Talk about decadent and truffle-like.

Plus we had more bacon candy and homemade ginger ale.

Had to update and thank my hubby --

I didn't feel like preparing anything for me...so he heated coconut oil....added baby brussel sprouts....then skinny broccoli -- always forget the name of the thin baby stuff -- then added diced salmon jerky!!!! finished off with a few green onions and dumped on top of zu-noodles and mixed :D

One happy foodie here -- hmmm I wonder what he is angling for?

so..totally duffy shot, but hubby in control..told him he missed one..NO, he got it...ya right....so I seeeez take one more....here it is doof and all..me with my handsome silly men...yep I am 5'6".
