Thanks Irish! :) The zucchini that I got given to me were enormous and the pancake recipe came nowhere near using them up! I will check those out.

 

I used to work in South Florida--I did a 9 month missionary project down in the Florida Keys. While I was there I stayed on Grassy Key, about 6 miles from the town of Marathon.

Yummy zoodles....I eat them with all kinds of sauce or butter and garlic....good stuff! Recently replaced my large countertop spirilizer with a handlehld little one that works great with less clean up...shaped like two cones with their tips joined...I think I may have linked to it before...will check when back on laptop.

Glad you had a great time Addie, but if I head to salt lake anytime soon it'll be to snowbird and alta, perhaps a day at brightstar (oldest son's first day on skis was there at three years old...we have loads of fun memories in Utah). Hubs and I used to stay in a tiny hotel in Heber city for 10-12 days for 22 bucks a night with a kitchenette...even before celiac...we always wanted a kitchen when we traveled to save money...and then drove to all the resorts from Park City to Snowbird...skipped deer park their lift tickets were much more expensive....man I miss those trips! Once the Olympics were there the prices never came back down :(

People have been talking about how they want the summer Olympics here. I see some of those slideshows of the abandoned, awful places after the Olympics are over and how everything falls apart and nothing ever gets used again. That just didn't happen here so people are pretty eager to do the summer thing. Even though I wasn't here when Utah hosted the winter Olympics, I really hate the idea. The spillover of tourists and traffic will come all the way down to me I'm sure, and my husband uses the freeway to travel to work every day. I could skip the whole thing. Of course, I skip the whole snow thing too. :P

 

Besides all the normal geek stuff I did that I was (and still am) super excited about, I did some new things too. There is a local (to Utah) dance theater group called Odyssey Dance Theatre that does a show called Thriller every Halloween that I always mean to go to but forget to get tickets until they sell out. They did a shortened version of the show there on two days, which was incredible. It's part dance, part theater, and all awesome. The Salt Lake Pops Orchestra did an hour long show to end the night Friday night. It was entirely popular geek movie and TV show music. So besides just being a geek I got some culture too. ^_^

 

Tonight I'll make battered fish and probably tater tots. No matter how crappy I'm still feeling, cleaning up after three days has to be on my to-do list and so does sewing so I'll be working for at least part of my day and don't want to put to much effort into supper. I'm also just counting down til I get incredibly sick with what my husband is finally getting over. He loves to share. <_<

Hubs took me out for lunch today.  Went to the Roosters place.  I talked to the Kitchen Mgr., as usual, and they use sauces and seasoning on the grill.  He offered to clean a section of grill for me to make my chicken.  So thankful to this Manager.  He went beyond what I expected  :D   Had a wonderful Chicken Cesar Salad.   Yummmmm

i make zucchini lasagne that is delicious and easy - just make like you would 'normally' make lasagne except sub zucchini sliced thin lengthwise for noodles.  it takes longer to cook, depending on how soft you like your 'noodles'  :)

I'm dining out of my go bag. Mom was transferred from hospital to rehab and caught a nasty bug along the way...so I'm sticking with her for now until her lungs clear.

So almonds, Justin's chocolate almond butter, astronaut veggie/fruit squeezes along with tons of coffee ;)

PS...I think Sandie dog has a future as a therapy dog...she has been making folks here in the rehab/skilled nursing facility happy all day.....even had a nice fellow become animated and tell us a great old doggie joke...will share later.

I threw a whole chicken with a bunch of fresh rosemary and a bit of broth in KFG before I left to check on mom this morning. I should be home to move it from frig to counter, but if not the guys can do it between school and work so we will all have an easy hot dinner.

Don't forget to tell those you love that you do...today.

I shred up russet potatoes and toss them with olive oil and salt and them cook until brown and crispy in my waffle iron.

I think I might pick up a steak tonight.  I saw they have an Outback Steakhouse near me and it seems like they are very gluten friendly and have good procedures in place!  If not, I can pick one up at the grocery store and broil it---just not the same as grilled steak though.

but my friend with the G F bakery sent me some nice fresh flour mix and it makes terrific pizza shells and rolls.

I've been to Outback a few times over the last couple years and never had a problem. Of course, every location has the potential to be very different but hopefully you'll have a good experience. :)

 

I think tonight I'm going to finally get to that orange sauce I picked up last week at the Asian market. I'll make orange chicken tonight. Yay!!! There really is nothing quite like homemade, "breaded" nuggets of meat deep fried to perfection. We'll have some sort of rice and veggie with it of course. I think I still have half a bag of peas and carrots in the freezer and could make a nice fried rice for myself. mmmmmmm......

Outback is a gluten free friendly place.  I think they were trained by GIG?  Not sure.  You could check the GIG site.  Part of what makes them safer is that the steaks, baked potatoes, green beans, etc don't normally have gluten in them for any diner.

Dad came to see mom so I ran home for real food and to take care of other details of life.

Wanted fresh food so ended up grating two yams...out of sweet potato :(

Then I squeezed the hell out of them in a tea towel...used butter in the iron then threw the grated yam and garlic salt on top...worked great!

Just sitting down to a yamwaffle cheeseburger...thanks ladies!

that.  is.  freaking.  AWESOME!!!  (love your editing!)  what a nice thing to do - if i didn't love the guy before, i do now for sure!!!   i have a brock samson action figure (with a knife!) who guards me while i am sleeping :D

      Yes. I have not been tested for celiac. It took forever to get diagnosed with Fibromyalgia. lol. I have an appointment with my regular GP later this month and will convey my findings on improved symptoms and see what his thoughts are. Thank you.

      @Grahamsnaturalworld, It's never too late.   Have you been checked for Small Intestinal Bacterial Overgrowth?  SIBO can cause ongoing symptoms.  Mast Cell Activation Syndrome (MCAS) and Histamine Intolerance (HIT) can also be the cause of ongoing symptoms.  The AIP diet can help with these by starving out SIBO bacteria and calming the immune system. Do you include dairy in your diet?  Casein in dairy can cause an autoimmune response the same as to gluten.  Have you been checked for lactose intolerance?  Some people lose the ability to produce the enzyme, lactase, needed to digest lactose, the sugar in dairy because the villi where the lactase enzyme is made are damaged.  AIP diet excludes dairy. Do you include grains in your diet?  Gluten free alternative grains and ancient grains can be inflammatory and cause symptoms.  Some people with Celiac react to corn and oats.  The AIP diet excludes all grains.  Lectins in grains can be inflammatory and cause symptoms. Do you eat nightshades (tomatoes, potatoes, peppers, and eggplant).  This family of plants produce glycoalkaloids, chemicals that promote Leaky Gut Syndrome.  The AIP diet excludes nightshades.   Are you on any medications?  Some medications can cause gastrointestinal symptoms.  Do you take any supplements?  Some herbal teas and supplements can cause digestive symptoms.  Medications for diabetes, antidepressants, and other pharmaceuticals can cause digestive symptoms as side effects. Have you been checked for nutritional deficiencies?  Malabsorption of essential nutrients can occur with continued symptoms.  Deficiencies in Niacin, Thiamine, and other B vitamins can cause digestive symptoms.  Gastrointestinal Beriberi and Pellagra are often overlooked by doctors because they are not familiar with nutritional deficiency disease symptoms.  Nutritional deficiencies can worsen over time as stores inside the body are depleted.   Have your doctors checked for all these?   I had a horrible time getting my symptoms under control.  I had to answer all these questions myself.  Yes, it's frustrating and exasperating because doctors don't have to live with these symptoms everyday.       Ok, thanks for the advice, the only advice I've had that's made sense after 21years since my slight symptoms all my life turned into nasty symptoms 21 yrs ago and around 50 gp's and specialists all chasing the symptoms and not looking for the cause, after 9 years of misery I discovered my symptoms matched celiac disease and a blood test proved anti bodies to gliadin but it was too late it has changed into r.c.d. thanks again.

      Welcome to the forum, @QueenBorg! Just for the sake of clarification, your desire to avoid gluten is connected only with your dx of fibromyalgia and not celiac disease, correct?
