  1. Welcome Kevin! Thank you for sharing your story with us all. I also believe that you have to listen to your body above all else. I've been pulling my hair out the last couple months listening to contradicting doctors who are trying to figure out what else is wrong with me, and I finally came to that conclusion. Hang in there, because it does get easier. This...
  2. I didn't have to deal with Celiac until after being married. So I don't know firsthand...but here's a few thoughts. Maybe they'll help. I'd probably give any dates a heads-up about your dietary restrictions (probably no need to go into major details right off the bat), just so they're aware. Maybe come up with a little list of places you can eat at, and...
  3. i've heard ground flax seed is a good sub for eggs. if you can handle things tasting a little "healthier" (in my case, i'd probably add lots of enjoy life chocolate chips!)
  4. So, I am looking for some sort of substitute for whipped cream - non dairy. Any ideas? Wanted to make this: Open Original Shared Link
  5. ah, i would love one! one of the local bakeries made the best chicken and pesto panini that i would treat myself to occasionally! (pre-dx of course)
  6. I had a thought as I was baking this morning - Nutritional facts! Just because its good for your tummy, doesn't mean eating the whole thing is good for you. I try to eat healty, and sometimes wonder how much a serving of something is, or how many calories I am consuming. I know some regular cookbooks list this, but I don't think I've seen it in any gluten...
  7. Here's a link to an amazing crust I made once for a lemon cheesecake. It's made of toasted pine nuts and almonds: Open Original Shared Link
  8. I also like the glutino "ritz" crackers. those are the best ones i've found so far. wow some great ideas! hot dog and spaghetti sauce sounds so good right now! i haven't eaten a hot dog in ages!
  9. lol me too good to know! So, would this be enough batter for 2 full bread loaves or just one? Also, would you recommend using canned pumpkin pie filling and adapting the sugar/spices? Cuz that's apparently what I bought and didn't use last fall.
  10. I agree with everyone else I sometimes am too busy to make something complex. However, I also love to cook from scratch. One tip I have adopted is to have a premade flour mix on hand. I have 2 different ones I use, and I use them in all my baking. A lot of times, I will bake in bulk when I do have the time. For instance, my husband loves my gluten...
  11. Gotta love walmart! I ended up getting the 5 qt version @ Bed, Bath and Beyond for about $20. I figured it was a pretty decent deal. It does have the warming feature and auto switch-to-warm timer. The only thing I really don't like about it, is when I push the buttons (and you have to push it 16 times to set it to 8 hrs...) it makes this annoying beep. I...
  12. this is an amazing recipe! i've made it for several family functions, and everyone loves them! hard to tell they're gluten-free Strudel Topped Apple Muffins: Open Original Shared Link
  13. oooh lunch!
  14. cool, i was actually wondering this while wandering through the new health food store today. good idea!
  15. what brand of chocolate syrup do you use? i had some hershey's in my fridge that i hadn't touched in a long time, and tried it with some almond milk a few weeks ago...and got a tummy ache. the ingredients didn't mention milk, so i'm just assuming...
  16. I just bought me a mango today at the store! Now I just have to decide whether I want to make this or the shrimp and mango salad! Great recipes both!
  17. I stockpile my flours! Just picked up a 25 lb bag of rice flour today at the health food store. Here are the flours I consider essential: Gluten-Free (gluten-free) Mix - from Bette Hagman's Gluten Free Gourmet 3 c. rice flour 1 c. potato starch (NOT potato flour)
  18. yay! love those spuds!
  19. One of my favorite things to eat at breakfast is migas (or would it be miga? ) Open Original Shared Link I like to throw together eggs, corn tortillas, turkey bacon or ham, salsa, and sometimes tomatoes/spinach/mushrooms. I loved to eat them with cheese on top before I stopped eating dairy. I also try and have some sort of fruit bread/muffins -- DH...
  20. I have had great experiences at Carraba's as well! Love their steak marsala
  21. i think, i would be comfortable with that, but i don't know how you would want to state it in your disclaimer....
  22. I'm gonna have to try this recipe! Thanks for sharing
  23. For me personally, I tend to avoid anything that says "processed in a kitchen that also uses wheat products"...so I don't know if that would scare away potential customers. I would definitely use dedicated equipment. Good luck to you though! It's nice to see people out there who are making more effort for those with food allergies and intolerances.
  24. McCormick's is a great brand. Just be aware of the other ingredients - Mission tortillas are safe. Walmart brand beans are NOT (manufactured in the same facility as wheat...but when I was eating beans, I used to just rinse them really well). Just check labels. I love fish tacos. Or steak tacos. Taco salads are great and really easy - just have the ingredients...
