i also make enough for leftovers when i do dinners. makes lunch prep in the morning cake! as far as breakfasts go, i make cream of rice with ground nuts, apples and maple syrup, or i do migas - eggs, shredded tortillas, ham or bacon, and cheese. a whole meal in a frying pan! search this forum for recipes. i like to just browse through the recipe section... -

yeah it can be very frustrating thanks for letting me know about the lactaid brand. yay! maybe i'll start feeling better soon! *crosses fingers* Otherwise i'll have to kick the dairy habit -
so i bought the rite aid brand last month, and the only time i took it i got sick. don't know if it was from that, or cc. so i went out and got the fast acting lactaid pills, but couldn't call the company, since its the weekend. anyone know if they are gluten-free? if not, anyone take walmart's brand? NO ONE WILL TELL ME ANYTHING!!!! i was really pissed...

I seem to be having the same problem. Although, I did have a food allergy test done a couple months ago, and they told me I tested mildly positive for problems with dairy. Still trying to decide if I should go off it completely or try a lactaid pill. Dr said to try the pill first, then if not feeling better, go off dairy totally -

Just trying to understand. One of our patients yesterday said she got a really bad headache after eating a loaf of bread from an italian restaurant. the dr asked her if she had any food allergies. she said no, then her husband said "but she tested positive for a gluten sensitivity". and she said she was diagnosed w/ celiac sprue, but doesn't have celiac disease... -

it's true! i was so disturbed by the sight, but fell in love with the taste. i love a berry smoothie - strawberries, black berries, blueberries and lots of spinach and either apple or orange juice. YUM! i need to start making these again!!! -

Ursa, how do you deal with being intolerant to potatoes? I think I might die if I am, b/c they are one of my fave foods. We'll see, right now I'm doing a dairy free test, but potatoes are next. Colorado - i also doubt the meat being the culprit. Using the same kitchen items you used pre-dx can be hazardous if you don't clean them out super good, and then... -

Yes do this! I was planning a trip to FL this summer (never ended up going) but you can get some cheap hotels with full kitchens in them. Just pack your own food. Or if you're road-trippin' it, bring along some camping gear or at least your own pots and pans. I always take food with me on the airplane. Ususally I just freeze it the night before so it stays... -

eating before is a good idea or maybe feed the kids before or bring a big tupperware with all their foods. i don't know, this is a tough situation. i've gotten fed up with my husband's family and food. we don't really have friendly relations anyway. and after his grandmother got mad at me for asking what she did to prepare her meat on easter...

yes, i use her featherlight mix in everything! keep a big tupperware of it in my cupboard. it really substitutes well, in gluten-free recipes and regular recipes. be sure and get some xanthan gum too. a great source for bread recipes i've found is eatingglutenfree.com. i've yet to make a recipe from that site that turned out badly! my faves are the breadsticks... -

too true what i did with mine is made it into a turkey meatball dish. actually turned out really good, after soaking the bread in milk. i've got the rest of the loaf freezing until i find another good recipe to use it in. -

i put my onions in the freezer for about 5 minutes before choppin' em, but that doesn't seem to help much. how do they do it on the cooking shows, without getting all blotchy and teary? lol! -

my favorite baking mix is bette hagman's featherlight mix. Featherlight Mix - from Bette Hagman's Gluten Free Gourmet Bakes Bread 1 c. Rice flour 1 c. cornstarch 1 c. tapioca starch 1 Tbs. potato flour (NOT potato starch) i have a big rubbermaid tub of it mixed up in my cupboard and use it for everything! i've found it subs well both... -
