  1. I posted this in the "What's for dinner" forum, but it is a casserole, so here it is. I like it really simple, adjust as necessary. mmm, i cried 2 nights ago as i enjoyed my dinner! teared up again as i ate leftovers at work for lunch! tuna noodle casserole was a staple in my childhood! i've tried recreating it gluten-free, but never had it just right....

  4. yes, i agree the portobello soup is pretty good. i have also heard that progresso's cream of mushroom soup is gluten-free and good, though i haven't tried it yet, as they don't stock it in my grocery store

  6. Are Amy's crusts ok to eat? I've gotten sick, and not just glutened-sick, from Amy's food before. I'm real scared to eat it now. Do you need to talk to the manager at every meal? I'm not real good at the eating out thing...lol Thanks for the help

I'm a bit nervous to be eating out every meal for that reason, as well as trying not to gain any weight from the trip What about hypoglycemia? I have a hard time w/ this regularly, haven't quite mastered the combined diets. I'm worried about getting blood sugar sick...not really sure what I'm asking...

  12. my tests came back positive. but my husband was a skeptic, and for the first few months kept telling me that he thought i needed to get a second opinion, b/c he didn't believe it was celiac disease. lol he knows better now

    yeah i make gluten food for my husband, and i KNOW even though I'm OCD about keeping things seperate, i've gotten CC from it before. it's just something that happens. lately i've been more demanding of him, having him put his own bread in the toaster, etc, and making sure there's none of my food out when he does, so that i don't even have to touch it.
  16. mission tortillas are pretty good, if you warm them w/ a damp paper towel on top (to soften). i like to keep some in my freezer . usually though i try and get out to the local latino market, where they sell 2lb bags of fresh (smell so good!) tortillas for a dollar. they're the best kind! so soft and tasty! i've not been eating much bread, but the only kind...

  18. i love the rosemary and thyme mix, or i will just toss w/ a bit of EVOO and mccormick's seasoning salt. that's our fave, and i like to turn the broiler on the last min or two to make them extra crunchy! mmmm, i'm thinking lunch today....
  19. It was kind of a weird one for me. We didn't really get into the "spirit" of the holiday this year. No gifts, nothing like that. Just a normal day really. We were going to go to carrabbas for dinner, but at 5:00 the wait time was 3 1/2 hours. So we went to chic-fil-a instead. But what really made my day good was being at work. I've explained to the girls...

  21. I also have always had lots of gas problems. That was the reason I was initally tested for celiac disease, is my gas was so severe and painful, not to mention stinky, that I just couldn't deal w/ it any more. I must say it's gotten better since going gluten-free, but I still have problems w/ beans, even when I take beano. I also got glutened twice last month...
  22. wow, never thought about that one. dang, i'll have to be more careful...maybe THAT is what's been making me sick. i love strawberry lemonade when i go out, and always thought it was cc w/ the food. hm, maybe not....

  24. Is there a specific type of doctor that I need to look for to correctly diagnose what's wrong? What are all the tests they need to do for me? Thx I will call the dr on monday and find out what my numbers were.
  25. so i looked at that site a bit, and lots of the symptoms sound like me. what do i need my doc to do for me/give me/etc? what is a good treatment? i've not had time to do much research yet, so i feel pretty clueless....thx
