  1. Open Original Shared Link So my MIL sent this my way yesterday. It was in our local paper. Nothing new, just explaining celiac disease, and food preparation precautions. It also had some recipes from the local support group's website, gfutah.org So far as I read, all the information seemed accurate! It made me so happy! Even happier that MIL thought...
  2. So one of the guys in my class works at a bakery and brought in several boxes of pastries...everyone was saying how good they were...and I said I couldn't eat them. Then everyone wanted to know why. I said I was gluten intolerant, then had to explain. I said, basically whenever I eat any gluten, it inflames my small intestines, then causes them to stop working...
  3. GLUTEN FREE PANTRY!! They have a french bread mix that rocks!!!
  4. I just tried Kinnickinnick's quick bread and bun mix last night. Made some rolls. They were pretty good. I was scared b/c I could smell the pea flour (same scent as bean flour ) but they tasted good! Even my glutenous husband asked if he could have one w/ dinner!! Didn't even care that they were gluten-free...I ate 3 myself
  5. Lol weird question...what do parsnips taste like (resemble)? I don't know if I've ever had them....but I like to try new things...sometimes Also think I might make some of that stone soup today...I might just crock pot it though!
  6. OMG that sweet potato recipe sounds awesome! i've never thought about doing them twice baked! I love regular twice bakes, such an idea!!
  7. check out www.eatingglutenfree.com <--GFBetsy's webpage...has tons of recipes! All very good
  8. NoGluGirl, You can find the Thai Kitchen foods usually at most grocery stores. You can also order them online from their website. amazon .com has *some* of their products too. I think the online business is a great idea! I hope that you get things going soon! Let us know too, we can help spread the word lol I am very obsessive about clean towels too...
  9. I don't remember my first few days gluten-free, cuz I was so sick. But my cousin said every time she's tried "quitting wheat" she goes through withdrawals. So that is definitely possible. Make sure you are eating food that is easy to digest and absorb, so your body doesn't have to work so hard. I hope you get feeling better!
  10. I was thinking of just using an online publishing co, like lulu...easy, quick, etc, since I was looking for more of a project than a career as a writer. I've heard lulu is a good one to go through. I think they have a deal w/ amazon .com too.
  11. I've been eating McCann's oats w/out a problem for several weeks now. Just a bowl in the morning. Thought about making some cookies. Yeah, watch out for regular brands...contaminated
  12. Before i was diagnosed w/ celiac disease, I thought I had IBS. There is a great message board w/ TONS of recipes, and I found lots of good tofu recipes there. I would just do a search for what it is you want. Open Original Shared Link If that link doesn't work, go to www.helpforibs.com and go to the message board. There's some great cooks there Good...
  13. AWESOME! I just posted a couple days ago saying how I was craving chicken nuggets...I'm defniitely looking into these. Anyone tried them yet?
  14. I remember making these rolls every holiday. I was just curious, the recipe has the dough rise, then the rolls rise several hours over the course of making them. If I made w/ gluten-free flour, would i have to do this different?
  15. congrats! what cookbook are you using?
  16. So, I thought since I love to cook, and I can't eat wheat, and there's only a few books out there for us, I thought I'd put one together. What my main question is, is how do I deal with copyright and stuff. Like, most of the recipes I cook are based on and adapted from other cookbooks/forum recipes. How do I not get in trouble for "stealing" someone else...
  17. Glad to hear of your success!! I will have to look into getting this book! The biscuits sound wonderful!
  18. How sad, I can't even imagine a child that young on antidepressants. What she needs is love and support, and working with a professional isn't a bad idea. The world is becoming so screwed up...I remember being a kid, and I was like that...made myself sick when I was scared or stressed. It was tough. But I had a good, supportive family, and they helped me...
  19. Yes, I gave all my gluten food to my MIL (including a TON of food storage!). It's tough, but when you decide to change, you gotta purge the whole kitchen! This diet is frustrating, but it's doable! I know I was very upset when I found out what I had, but my husband reminded me that it was also a blessing to find out because now I know how to control my...
  20. What I tell people who are being difficult about my diet is that eating gluten is the equivalent to eating rat poison. That gets the message across. I defintely recommend talking to your family. My husband has been so much more supportive since I've told him more, like even a crumb will get me sick. Now he helps keep me in line when I want to cheat. He reminds...
  21. I've come to the conclusion that most doctors don't have a clue as to what they're doing when it comes to celiac disease. I say, if the diet helps you feel better, stay on it! Make sure you're getting all the nutrients you need, calcium, fiber, etc, but do what makes you healthy! The test results could have been affected by your eating gluten-free but I don...
  22. Hey nini, let's get a group together for a road trip! Sorry you got glutened at your mom's...that's frustrating! Noglugirl, it breaks my heart to know how you're suffering because of your family. I know parents can be a hassle, and I have really good ones. I can't even imagine how you feel. When will you move out? Soon I hope Hang in there! You've...
  23. nini, what is montina flour?
  24. mmm, i like your ideas i've looked at my health food stores and only found ians, and then it was only the "tv dinner" w/ 3 nuggets...not worth the $$....how do you do fish sticks?!?! yum!
  25. i'd give it a shot...sounds like it would work with lots of tweaking
