ARCHIVED Salad Bar In Grocery Store?
Gemini replied to GarAndTeed's topic in Gluten-Free Foods, Products, Shopping & Medications
I also eat from salad bars and it's really no different than going out to eat. There are a few golden rules I go by when doing so and it has worked very well for me. I always go when the salad bar is just set up and others have not rifled through it. Once lunch time sets in, it's too late. Whole Foods near to me does a good job of segregating their pasta... -
ARCHIVED Udi's Bread
Gemini replied to DMarie's topic in Gluten-Free Foods, Products, Shopping & Medications
I think you hit the key to this bread and why so many people like it. Anyone who likes soft, doughey, Wonder-bread type bread will love this brand. I intensely dislike Wonder-bread and white bread in general so I tried the multi grain. The toast it makes isn't nearly as good as other gluten-free breads I have had. The denser a bread is, the more I like it... -
Celiac Disease and early menopause are strongly linked. It may be from a variety of reasons but I think one of the stronger ones is malnutrition...this can wreak havoc on your hormone levels. I am the only officially diagnosed Celiac in my family but there are many with strong symptoms but they all choose to live in denial. I was 38 also when I started...

ARCHIVED Cross Contamination
Gemini replied to MamaMeagan's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I think if the pan is old and all scratched up, I would replace it. Superficial scratches that have been run through a dishwasher may not be cause for replacement. I do not own any teflon pans myself so haven't faced this problem. I own cast iron that is coated with enamel and some of them were pretty old and the enamelware was beginning to degrade. I replaced... -
ARCHIVED Cross Contamination
Gemini replied to MamaMeagan's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
You do not have to replace hard plastic spoons if you wash them well with soapy water. Wooden spoons are different as they are porous and food can be absorbed into them. Softer plastic, like tupperware is the same as wooden spoons. After awhile, tupperware becomes stained so you can see how it may be a problem. Yes, gluten can be washed off of a non... -
ARCHIVED Had Repeat Egd
Gemini replied to Roda's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Running dishes through a dishwasher or washing them by hand with a good soap will not leave any residue to worry about. I wouldn't consider this a paranoia...just a genuine question by someone looking for answers. Read Dr. Peter Green's book entitled: Celiac Disease: The Hidden Epidemic. He addresses all these issues and evens says that you do not... -
ARCHIVED Soaps, Shampoo, Face Wash, Etc
Gemini replied to dhiltonlittle's topic in Coping with Celiac Disease
To give you another viewpoint on this subject.....you are absolutely correct in that a celiac would have to ingest gluten into their GI tract for a reaction to occur. Any other type of reaction to topical contact with gluten is an allergy reaction and not an intolerance type reaction. If someone reports a Celiac type reaction, they have ingested the offending... -
I'm not saying I never go out to eat but make it infrequently. I prefer to eat at home because, quite honestly, my food is better than most chain restaurants. I have eaten at some who do a good job of it but I think their food is just OK. I eat out most when I travel but that's easy.....in a pinch, a steak and baked potato with a good salad is just fine...

The CIA NY campus offers gluten-free baking courses to the general public also. I have thought of taking the course but don't do a ton of baking. I try to stay away, for the most part, from rich desserts and the other stuff that is taught there. It all looks splendid, though, and the gluten-free guru there has published a gluten-free cookbook also. It...

I see the point you are trying to make but here's where I disagree.....at most food chain restaurants, the vast majority of the staff in the kitchen have no culinary arts degree. That's huge because they WILL know what gluten is by the time they graduate. In fact, at the CIA, they teach them gluten-free cooking as part of the course offerings and I have dined...

ARCHIVED Shingles
Gemini replied to EJR's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yup....that's what I mean. They are so focused on cancer these days that they overlook the most obvious thing.....a food issue. Meanwhile, they panic the hell out of people for no good reason. Shingles can often happen when you become iron deficient as your body just cannot keep up with stress and being so run down. That's what bagged me. I've learned... -
Ghirardelli Chocolate
Gemini replied to JennyC's topic in Gluten-Free Foods, Products, Shopping & Medications
I would dispute your statement that Ghirardelli and Rocky Mountain chocolates are not safe. I am about as sensitive a Celiac as they come and I eat Ghirardelli chocolates every single day. They have excellent manufacturing practices for a non-gluten-free facility. I just had my repeat blood work done and in no way am I ingesting any gluten.....my numbers... -
ARCHIVED Shingles
Gemini replied to EJR's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My goodness, Joyce, you have had a tough time of it! I am very sorry you have had to go through all this but you may be on the right track with a possible Celiac diagnosis. You have other autoimmune issues going on so that makes me suspicious with regards to Celiac Disease. They tend to go hand in hand so I really think that someone who specializes... -

It's this type of common sense which makes the difference between truly gluten-free or not. To think that anyone could eat at most fast food places or the Olive Garden and walk out without ingesting gluten is beyond my level of understanding. I am lucky that I never thought the Olive Garden had good food to begin with and ditto for most fast food joints....

ARCHIVED This Might Be A Sensitive Subject But I Must Ask...
Gemini replied to Matchoo's topic in Gluten-Free Foods, Products, Shopping & Medications
I think this has strayed so far off the original question and has little to do with the topic at hand. Most people always revert to discussions like these when their point of view is being challenged by more credible information. If condoms were such a threat to Celiacs, I would think it would be a topic for discussion in any of the valid books pertaining... -
ARCHIVED New Diagnosed Wheat Farmer?
Gemini replied to farmwife67's topic in Coping with Celiac Disease
No, you are not strange. This is an issue that depends on your personal habits. If you rinse with your mouth open or let the soapy water run down the front of your face, you would have to use gluten-free shampoo/products. I tilt my head back and never let the water with soap run down my face. As long as you don't eat it, it's not a problem. -
ARCHIVED New Diagnosed Wheat Farmer?
Gemini replied to farmwife67's topic in Coping with Celiac Disease
The examples you state would not cause a Celiac reaction. You would have to ingest your shampoo into your gut, you cannot be glutened by being in the same room as bread and cosmetics are the same as shampoo....you have to eat them to cause a reaction. You may have an allergic reaction, which is totally different than a Celiac one. However, if someone... -
I would never eat at a fast food joint, period, because this is what I would expect to happen. If you go to a better quality restaurant where the staff has had some food education, this is highly unlikely to happen. I frequent a couple of restaurants near to me, not chains or fast food places, and they have dedicated fryers. What I like is they have...

One of the hardest things a newer Celiac has to remember is that not everything is caused by gluten. Sounds like a virus or maybe the flu but not gluten. If you have been gluten-free and follow the diet strictly, any trace amounts should vacate the property and not come back!

ARCHIVED Shingles
Gemini replied to EJR's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi Joyce......your doctor is a moron, if you don't mind my saying so. Shingles has absolutely zero to do with cancer and he should be slapped for saying so. Shingles occurs mainly because the chicken pox virus reactivates in your body when under stress or after having been sick. Your immune system can be depressed for many reasons other than a malignancy... -
ARCHIVED gluten-free Lentils In Madison, Wi?
Gemini replied to Jess's topic in Gluten-Free Foods, Products, Shopping & Medications
The statement regarding CC is a liability exercise only. Unless a manufacturer has a dedicated facility, there will always be the statement to cover their butts but it doesn't mean there is CC with that particular product. I don't look at brand names but shop at Whole Foods market. I have bought canned lentils and the dried versions for making soup and... -
Caramel Dessert Toppings
Gemini replied to CeciliaCeliac's topic in Gluten-Free Foods, Products, Shopping & Medications
I cannot remember the brand name of the one I bought but it was sold in Whole Foods market, if that's any help. They have lots of gluten-free options so I do my food shopping there. Funny, I never look at brand names anymore as I concentrate on label reading for ingredients! -
ARCHIVED gluten-free Lentils In Madison, Wi?
Gemini replied to Jess's topic in Gluten-Free Foods, Products, Shopping & Medications
I am not sure where you have gotten your information but lentils, on their own, are gluten free and there has never been any issue with cross contamination. I include lentils quite often in my diet and never, ever have had any troubles with them. I am as sensitive a Celiac as they come and if there were a problem with lentils, I would be hospitalized by... -
ARCHIVED This Might Be A Sensitive Subject But I Must Ask...
Gemini replied to Matchoo's topic in Gluten-Free Foods, Products, Shopping & Medications
I would tend to believe a published medical article or information from Celiac researchers and doctors over someone on a forum who says they reacted. You are comparing apples to oranges here. Back in the day when they thought hand washing had no value was when medicine was, as we know it today, did not exist. It is much easier to determine whether a product...
