  1. My son didn't fit the typical "failure to thrive" symptoms until he started to become very dramatically ill. Until that time he was consistently in the 50th to 75th percentile in height and weight, but had the irritability (doctor said it was probably just teething), discoloration of the teeth (doctor said he needed fluoride supplements), lots of ear infections...
  2. And don't forget quesadillas made with corn tortillas - only 30 seconds in the microwave! Yoplait or Yo Baby (but not the breakfast yogurt, just their regular flavored stuff) yogurt, peanut butter on Corn Thins (popped corn crackers) or rice crackers or even gluten-free sandwich meat or cheese on these larger crackers, Ian's gluten free chicken nuggets...
  3. We were told that it took 6-12 months for the intestines to fully heal when they're young w/ Celiac Disease, and until then the immune system is weakened. The first cold/flu season after our then 2 year old was diagnosed, he was sick from October through March and still picked up things no one else did until around May. He got strep throat in June, too...
  4. "All of the Envirokids cereals (one looks like cocoa crispies and we make rice krispy treats out of it)" Actually, not all of the Envirokids cereals are gluten free, but the cereals that are gluten-free are clearly labeled right on the front of the box. They make a Cheerios type cereal (I think Orangutan O's?) and another oat bran cereal that are both...
  5. For my son's three year birthday party we also did Pamela's chocolate cake mix cupcakes with lots of icing. It wasn't until a couple of the mothers noticed that my son was also eating the same cupcakes they were before they realized that what they were eating was probably gluten free then. We used the recipe with the sour cream that's on the package, but...
  6. Babycakes was on Martha not too long ago, and so on the website they have a couple of their recipes. Open Original Shared Link Mini Brownies Open Original Shared Link Cinnamon Toasties It looks like they use a combination of garfava flour (garbanzo & fava flour), potato starch (in lieu of tapioca), and arrowroot. I believe in theory...
  7. One of the ways we deal with our son understanding that he has to eat gluten free is to actually take him shopping, "read" labels (he's only 3 1/2 now so he's not reading yet) and discuss what has gluten and what doesn't. If there's something that looks particularly good that has gluten, I tell him that he and I will try to make it gluten free (yes, I have...
  8. All Crayola brands, excluding their "dough", including "Model Magic" and fingerpaints are gluten free. Also, if you play with pasta, the Celiac child should have gluten-free pasta, if not all the kids so that there's no chance of anything getting mixed up. My 3 1/2 year old son is a thumbsucker, and for that reason we didn't put him in pre-school this...
  9. Here are a few links: Open Original Shared Link I've liked every recipe I've tried that she's posted at glutenfreegirl.com Open Original Shared Link The original recipe that Shauna adapted hers from https://www.celiac.com/st_prod.html?p_prodid=820 And one from this site!
  10. Here's a pie crust recipe using almond meal as your flour. Although I haven't tried this one yet (but it sounds like it would be delicious for a dessert), my experience so far with almond meal in baking has been great for crumbly (in a good way) cookies and it also seems to help keep things moist when mixed with other flours: 1 cup almond meal 1/4 cup...
  11. On Glutenfreegirl.com, about a month ago (???) she posted a recipe for blueberry muffins that I just adored where she used equal parts rice flour, tapioca starch (or flour - they're the same thing), and sweet sorghum flour - no xanthan or guar gum was used but there was a lot of egg, butter and yogurt. No one can tell the difference between this and regular...
  12. Unless the rest of your family has been gluten free, too, the latest recommendation is that everyone who has a close member with Celiac Disease receive the full blood screening. If you do a search on this forum, you can find out exactly what they need to test for. You can also have genetic testing on your daughter (and eventually your newborn) to see if...
  13. When a baked product is a little bit denser, like cookies, brownies, or even a flourless chocolate cake, I also like to add almond meal. It not only adds a nice flavor (but not as strong of an almond flavor as expected), it also adds a lot of moisture. It doesn't work so well with cakes or muffins, but for cookies it's great. If a recipe calls for 2 cups...
  14. I used to make "rice pudding" for breakfast whenever I was in the breakfast cereal rut, and I didn't have celiac disease then either. I'd take cold leftover rice, pour milk over it, sprinkle a little sugar & cinnamon and be done. Sometimes I'd also add sliced fruit to it like peaches or strawberries or a few nuts. I also liked burritos, too. I've...
  15. Yes - insist that he run the test. This is very similar to how my son started getting very noticeably sick. It was during the time that he started getting very lethargic that he began to lose weight and get the distended belly and grey skin tones. Up until that time, he was only having the constipation/diarrhea cycle; he was still gaining weight and height...
  16. I've been snapped at, too. I think that some people have had such serious problems with their children, not just Celiac Disease, that they have real reason to be concerned about ALL food and want to make sure that everyone else knows that it can be a serious problem for nearly anyone. I understand that position since I'm pretty much an activist when it...
  17. I also give my littlest one puffed rice cereal, not "Rice Krispies." I've even seen a bag of just puffed rice cereal at the grocery store. I also will give her puffed corn cereal, but when she was a little smaller I broke them in half. Then I just gave her bits of cheese that she could pick up, small thin slices of pear and apple, and also gluten free...
  18. That's a bunch of _______ saying she's just constipated and underfed! When my son started getting seriously ill from Celiac Disease, he was constipated for days on end, then it would be hard for one bm, then extreme diarrhea for the next 3 episodes and the whole cycle would begin again. It was a 5-7 day cycle. Our pediatrician at the time considered it...
  19. It's my understanding that most oats are contaminated. The only ones that I know of that are supposedly safe to eat are not available for infant cereal, but maybe this has changed since I first started my youngest on infant cereal. I personally like Earth's Best products myself, but maybe others here know something better?
  20. Thank you for the concern, but my son is now doing GREAT! It's been over a year since he started the diet and you would never know he was ever as sick as he was. He's in the 90th percentile in height, 50-75th percentile in weight, really strong, and extremely active and friendly. And he knows he has to eat gluten free and doesn't have a problem with others...
  21. My son would have constipation for days, then really hard stool one day, and then extreme diarrhea for the next three days and the cycle would start. It turned out in part how he was reacting to Celiac Disease, his intestines were inflamed, almost like Crohn's disease, causing a blockage. He'd finally get so filled up, some stuff (but not all) would finally...
  22. I don't know about the entrees you mentioned since I haven't seen them myself, but from what I have read on the labels and what others have written before, the turkey/chicken sticks are supposed to be OK. Also, the Gerber Wagon Wheels are gluten free, too.
  23. It is more expensive to be gluten free, but part of the reason why is because at first you want to find lots of gluten free (gluten-free) replacements for the gluten filled diet rather than going for naturally gluten free items. Once you start to adjust, the costs will start to go down because you'll find that balance of gluten-free replacements versus naturally...
  24. I have a 3 year old with Celiac, too, and, until we hear she doesn't have it, a 15 month old going gluten free as well. We don't use a lot of bread, either, because of the cost. But when we do, I make the Gluten Free Pantry bread. But for quick "sandwiches" for our 3 year old, we use Real Foods Corn Thins (they taste like popcorn - I think better than...
  25. Honestly, I can't give you too much advice in this arena - my kids don't have food allergies at this time. But I certainly feel for you, and I can say from the bit of experience I do have with this disease and my son, TRUST YOUR INSTINCTS! In the end, I was shocked to find out how little doctors actually do know but still act like they're the authority...
