  1. I used to make a quick dessert with bananas. Put it in a large clear bowl or individual clear bowls so you can see the layers. Put a layer of sliced bananas, then a layer of strawberries. Then a layer of frozen orange juice concentrate straight from the can, but allowed to thaw out enough to pour it. Continue to layer until you reach the top of the...
  2. I ordered these: Open Original Shared Link Note that only some are gluten-free. I didn't personally try them. I got them for my daughter. She liked them for a while but they were small even for her. For sure you need to add a salad or raw veggies or a piece of fruit. She ate them for a while, then protested and wouldn't eat them any more. ...
  3. I didn't roll them. Only made the Quesadillas in a skillet. Just two tortillas with cheese in between. Cooked till cheese almost melted, flipped over and cooked until fully melted, then cut in wedges.
  4. She doesn't like sunbutter and I won't allow most soy products. She outgrew a soy allergy so can tecnically have soy twice a week. She gets gluten-free teriyaki once a week and there is soy sauce in that. Also most restaurants use soybean oil so I figure that is enough for her to get. I used to eat a lot of soy and developed a thyroid problem. Once...
  5. I was so happy when I found this in our local Central Market. I just made a quesadilla with them and tempted fate to eat it. I say this because they are made on shared lines with egg and soy and I have an egg allergy. I only ate 1/4 of it and gave the rest to my daughter. Quesadillas used to be one of her favorite quick meals. Another was a tortilla...
  6. I can't comment too much on the technical stuff. My thyroid has been high (too much thyroid med) and low and is now normal. For me, all it took was to stop eating soy (I used to eat a lot of it) and really limit the amount of goitrogenic foods I eat. I am not on thyroid meds now.
  7. I'm type 2 but do not have celiac. However for the most part I eat a gluten-free diet because daughter has a wheat allergy. I do eat rice and potatoes but have to watch my portion size. Do you weigh or measure your food? I used to have to do that. But then I bought bowls and plates in an assortment of sizes. I can now pretty well eyeball what is the...
  8. The way I make sausage gravy is... To start with ground sausage. If I can't find that I buy pattties and cut them into little pieces. Then brown them in a skillet. When they are brown, I add enough sweet rice flour to coat then slowly add plain rice milk. If you can have dairy you can use regular milk. Then cook until thick and add plenty of freshly...
  9. Yep! Says gluten-free right on the package. We just bought some the other day.
  10. I quit buying nuts at Costco because of the warnings. I can't remember now if it was a "may contain" or "run on shared lines". I don't know about the Planters.
  11. I learned the hard way to read every label, every time. And at a restaurant, never assume it is safe. Always ask. Daughter will only drink water now in a restaurant. She knows that is safe.
  12. I've never heard of a spray with gluten. Sulfites, yes. But not gluten. Whether or not we eat from a salad bar depends on what it looks like. If it is very messy and food from one place is slopped into another, then we won't. We also don't eat the dressing.
  13. Galaxy Foods makes vegan rice cheese that is really good. Comes in slices and a block you can shred. It does contain peas if that's an issue. But no dairy or soy.
  14. That's not good! We never got those but I did get a piece of chicken for my daughter. It used to be gluten-free. Guess I should check the menu again.
  15. That's too bad. Daughter and I used to eat at the one in Woodinville, WA quite a bit. We had no problems there but she has allergies and not celiac. She only ever had two things. The bowl or the tacos. She had the chicken.
  16. I was at Albertsons the other day and there was a big sign just inside the door telling us to check our their new gluten-free section. I did! I know they have carried some gluten-free pasta for a while, but now they have all this stuff in one section. Granted it was only 60" of counter space, but it's good for us! They had some Ener-G bread. I know a...
  17. I guess I'm lucky because Angela had all of her teeth by age 1. She could and did eat pretty much everything. One thing I started her out on was green beans straight from the can. Her favorite were the Del Monte, but she would eat any brand, any cut. She liked the wax beans too but they weren't quite as soft. They can be picked up with the fingers...
  18. I wonder how the Bisquick will taste? So far all of the gluten-free biscuit things I have tried have been oddly sweet and nasty. I remember making something a few times called Impossible Pie. It wasn't a sweet pie but a dinner thing made with hamburger. My grandma sent me the recipe. Would be nice to have something like that as an option again. As I...
  19. I think she's just being difficult, but I never know for sure. I kept her home today. She stayed on the toilet for so long she missed the bus and then she was STILL on the toilet. She complained of stomach pains. Then later today she lost her voice. I've been sick. Had some sort of stomach thing. I didn't realize at first that I was in fact sick...
  20. They are not allowed to have food or drinks on the bus. And she won't use that type of water bottle any more. She says they are bad for the environment. I had to buy her the metal ones. She is also fearful of plastics. As for healthy versions of smoothies, I don't know what I could do that she would eat. Most smoothies call for a banana. Since she...
  21. She did like the crackers tonight. Part of the problem is all of her allergies. She also outgrew an egg allergy that was severe, so she is only allowed one egg per week. She doesn't really like fruit. I don't blame her. I don't like it either.
  22. I think my daughter's school does a pretty good job of food, nutritionally speaking. They don't get a lot of food though. The day that I visited, they served what appeared to be canned ravioli. Each kid got three pieces. There was also salad and fruit. Took the kids about 5 minutes to eat it. Their school does not currently have a cafeteria. They are...
  23. My daughter will eat it. Also the white rice or tapioca if that's all we can get. She likes it either toasted or zapped in the microwave for 10 seconds. But her favorite bread is the Rice Starch Loaf. I can't find that in any stores. Have to order it from them.
  24. Thanks! I have been buying the 2 in 1 stuff. She seems to have a problem washing her own hair. I don't know if it is too much product, not enough, not rinsing or what. She comes out of the shower with greasy, matted hair. So I was afraid to get a separate conditioner. I have just washed her hair myself the past two nights and it came out well. Her...
