We still eat a lot of Mexican food. I just leave the cheese out. Or sometimes I put in rice cheese. If you buy it be sure to use the Vegan kind because the other kind still has dairy in it. Old Spaghetti Factory has gluten-free pasta and they don't put cheese on it. Other than that, our choices are pretty limited. Some Mexican food with no cheese. You always have to ask. I have neuropathy. At times it can feel like my feet are asleep. Just sort of numb. At times I can't feel them at all. I have to look down to assure myself they are still there. Can you remember what you ate the one time you didn't get sick? Maybe order that. Personally I wouldn't eat anything. Just eat before or after and have a drink.

I've made the brownies many times with egg replacer. They did not come out so well with margarine but they did with coconut oil. Even people who don't need to eat gluten-free liked them. -

I do make regular enchiladas too. I have read to soften the tortillas in hot oil or in the sauce, but I just warm them in the microwave. Sometimes they crack but mostly they don't. I just find rolling them to be a pain. -

I make something similar using corn tortillas as a layer. If you use tortillas you need to smother them with enchilada sauce, salsa or even tomato sauce so they don't dry it. Makes a quick meal! -

You can use egg substitute like Ener-G. Works fine with it. But picking out the chocolate chips won't get rid of the soy if you are truly allergic. It will have gotten all over the dry ingredients. -

Heavens no! That flour gets all over everything. And there are those here who say you can not clean the bakeware enough to make it safe. Now I did not personally replace all of my bakeware. But I do tend to use foil pans for baking now and if I make something like oven fries or pizza, I cover the pans with foil. That seems to work for my daughter but...
