ARCHIVED Any Vegetarians Who Became Meat Eaters After Diagnosis?
TrillumHunter replied to foodiegurl's topic in Coping with Celiac Disease
Highly recommend the Michael Pollen books. We've been buying meat from two farms that follow excellent sustainable farming for a while now. It is very pricey but think about it, cheap meat? How do they get it so cheap? The animals and the farmers raising them are getting shafted. I was a vegetarian for about three years in my 20's. I got too sick... -
My ferritin dropped down into the single digits over the four years I tried oral iron. Even when I could get it close to normal my hematocrit never rose above 11, which is just below normal. The thing is though, even at 11, I felt like hell. Close to normal doesn't cut day in and day out. Also, I developed some pretty debilitating gastritis from all that...

Sorry, I meant to tell you that. They are once a week give or take a day or two. After this I'm supposed to have a CBC every six months or call if I feel symptomatic. It really isn't too big of a deal but you should take someone with you the first time in case you react and have to have Benadryl. I have someone take me each week because I'm pretty groggy...

ARCHIVED Roasted Cauliflower With Rosemary And Garlic
TrillumHunter replied to seeking-wholeness's topic in Gluten-Free Recipes & Cooking Tips
Oh, yeah brussel sprouts roasted! Yummy! I won't touch them any other way. -
The first one they tried was Venofer. It would have been three 1 1/2 hour treatments. But I started itching so they stopped it right away. I didn't react beyond the itching. This one is supposed to have less side effects so it is more commonly used. Ferrilcit is the one I'm taking now. I'm having eight one hour infusions. My total time at the center...

Iron injections into the skin can cause staining of the skin. Those, at least in the US it seems, aren't given very often anymore. I'm going for my sixth infusion today. The first on they tried, Venofer, made my start to itch about five minutes into it so they stopped it and gave me Benadryl. The second one has done fine. They do give me Benadryl before...

ARCHIVED Easter....
TrillumHunter replied to wendstress's topic in Gluten-Free Recipes & Cooking Tips
Search the forum for Lorka's bread. It's on Recipezaar as gluten-free flax bread. It is my go to recipe. It is soft and turns out every time. It is the most like gluten bread the first day. I imagine could bake it in muffin tins as well. It tastes great! -

ROFLOL! Big bonus! -
ARCHIVED Do You Remember "chicken In A Biscuit" Crackers?
TrillumHunter replied to Darn210's topic in Gluten-Free Recipes & Cooking Tips
Hmm, those would be tough. It's the coating that had the flavor. The crackers was sort of like captain's wafers. Maybe you could take powdered chicken stock and mix it with some oil and toss the crackers in that? Did you ever make the coated oyster crackers before gluten-free? Those always reminded me of Chicken in a Biscuit. -
ARCHIVED Schar Ladyfingers
TrillumHunter replied to kimis's topic in Gluten-Free Foods, Products, Shopping & Medications
I've never had a Schar product I didn't like! -
ARCHIVED **vent** My Loving Supportive Family. Grrrr.
TrillumHunter replied to quietmorning01's topic in Coping with Celiac Disease
There are plenty of us who went through the list of illnesses. It is frustrating, isn't it? The hardest thing for me was hearing that maybe that's just the way I was meant to be. I agree that flattened villi trump the blood work. Keep moving forward!! -
ARCHIVED Angel Food Ministries Allergen Free Box
TrillumHunter posted a topic in Gluten-Free Foods, Products, Shopping & Medications
We've now eaten a couple of the things. We've had the chicken nuggets and chicken fried steak. Okay, so this stuff is not health food!!! It's funny when you aren't accustomed to fried foods how much heavier they seem. The chicken nuggets were just like I remember fast food nuggets. Very soft, processed chicken with a mild taste. We baked them and they... -
ARCHIVED Help! Local Coffee House Wants To Offer Gluten-free Treat, Advice On What/how?
TrillumHunter replied to lyceum's topic in Gluten-Free Recipes & Cooking Tips
I wonder if they wouldn't do better with a product they could freeze and pull out as needed? I make chocolate chip cookie dough, form the cookies then freeze. You can take out two or twenty and bake them. Two can be baked in a toaster oven. They could offer fresh baked cookies easier and fresh is always better. Plus, the smell would be intoxicating... -
ARCHIVED Should I Do It Again?
TrillumHunter replied to Watercolor's topic in Coping with Celiac Disease
If you had a burn on your arm from touching the stove would you touch it again to see if you would burn again? You have positive blood work which is MORE DEFINITIVE than a reaction. There are people who never react to gluten when all the while there small intestines are being damaged. There's no promise you will react to whatever you eat. What if you don... -
ARCHIVED Anemia--macrocytic, Microcytic, Normacytic?
TrillumHunter replied to mimommy's topic in Related Issues & Disorders
Microcytic anemia would be most likely and this would indicate iron anemia. My hemotologist said the MCV is a good indicator of stored iron. So, you may have an issue with using both your dietary and stored iron because of damaged villi. Are you newly diagnosed? If so, it's best to give yourself some time to heal and then reassess your blood work. I'm... -
ARCHIVED Any German Shepherd Owners?
TrillumHunter posted a topic in Introduce Yourself / Share Stuff
I had one as a kid and I loved him to pieces. We lived in the woods and he was our constant companion. He could spot snake faster than anything. I'm looking for advice on finding a breeder and the hip issue. I won't show or breed the dog. He or she will just be for loving and hiking in the mountains. I've got three kids and I feel a bit sketchy about... -
ARCHIVED Is Biopsy Worth The Trouble At This Point?
TrillumHunter replied to WatercolorMist's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
So, you're not a diagnosed celiac? If a biopsy doesn't show celiac would you want to eat gluten again? The SCD is pretty hardcore. If you're happy and feel well on it, why change? If you had celiac before you started it, you may have healed enough that a biopsy could miss the damage. It won't cure celiac but it will allow the small bowel to heal. Sounds... -
ARCHIVED Wheat Dissoluble Gut Enzymes-when Available?
TrillumHunter replied to Candy's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
The researchers concluded that live B. lactis bacteria might achieve partial to full blockage of gliadin toxicity gluten/gliadin-induced damage in the small-intestinal mucosa of people with celiac disease, and that it merits further study concerning its potential as a dietary supplement to guard against any silent damage associated with accidental gluten... -
ARCHIVED Betty Crocker gluten-free Mixes
TrillumHunter replied to purple's topic in Gluten-Free Foods, Products, Shopping & Medications
Okay, this is weird. I dreamt last night I was sent samples of these to test out. I'm not much of a packaged mix user but looks like I'm kidding myself. My subconscious knows what I really want! Nothing like celiac dreams! -
ARCHIVED Autoimmune Disease And Histocompatibility
TrillumHunter replied to Candy's topic in Related Issues & Disorders
I think you'd better reexamine having children with anyone. No one can promise you a undamaged, disease-free child. And, if you are fortunate enough to get a child who appears to be at birth, there is no saying he won't fall off the monkey bars and become damaged. Becoming a parent means assuming the risk of another human and all their potentials, good... -
ARCHIVED 1 Week Into Celiac
TrillumHunter replied to MissingWheat's topic in Coping with Celiac Disease
Delicious N Fit is gluten free restaurant in Plano. I haven't been there but I hope to when I go home in June. I grew up in Garland. The idea of having chicken fried steak in a restaurant makes me drool. Hopefully, you live on the north side of Big D so you're not too far! -
ARCHIVED Potato Flour Question
TrillumHunter replied to ebrbetty's topic in Gluten-Free Recipes & Cooking Tips
There's another thread on this issue. Somebody said you could take instant mashed potatoes and blitz them in you food processor and voila, potato flour. It makes sense as potato FLOUR is just finely ground, dehydrated potatoes. Heck of a lot cheaper too, as most gluten-free baking calls for very small amounts of potato flour. ETA--Hi, Robin! See, you... -
ARCHIVED Potato Starch Vs. Potato Flour
TrillumHunter replied to RobinHood70's topic in Gluten-Free Recipes & Cooking Tips
Here's the recipe from the bag. Pretty basic, huh? This could really be a base for some good stuff. I bet it could even stand in for cream of "blank" soup. Basic Potato Soup This quick and easy soup comes from our Potato Flour label. INGREDIENTS: 1 Tbsp Butter or Margarine 1 cup Milk 1 to 2 Tbsp... -
ARCHIVED Potato Starch Vs. Potato Flour
TrillumHunter replied to RobinHood70's topic in Gluten-Free Recipes & Cooking Tips
You can make potato soup out of potato flour but not out of potato starch. The recipe is on the back of BRM potato flour. A couple of manufactures have started calling starch flour. GRRR. I had the disagreement with my local store about them being the same thing.
