  1. No longer true. They are made in a dedicated facility and batch tested. Bob's Red Mill has done all it can to prevent cross contamination issues. Did you use dedicated equipment? Spatulas, wooden spoons and mixers may harbor gluten.
  2. You could make a white enchilada sauce if there is some sort of sour cream substitute you can use. Sweat an onion and a couple of cloves of garlic until very soft. Add beef stock and sour cream sub and simmer. If there is no dairy/soy free sub maybe you could thicken this up and season it up a bit with cumin/mexican oregano. Hope this helps. I can never...
  3. I'm very glad to hear your friend is okay. We had a man recently pulling up to women and telling them something was wrong with their car. He told them to pull over and he would look at it. He then proceeded to damage the car so that it would no longer run and offer them a ride. He was finally arrested and he has a long criminal history of battery against...
  4. Great recipe! I used all butter as that is what I had in the house. They rolled our beautifully into many shapes. Slightly underbaking them produces a soft in the middle cookie. I'm going to make some into Milano type cookies when they cool down. I shaped some into pretzel shapes and sprinkled with coarse sugar. They look like the ones in the blue tins...
  5. I'm out of town and will be until Wednesday. The quick look I took online gave a level of 50-1000 for adult males. Values can vary slightly from lab to lab but I believe yours would fall below normal on any test. It is not low enough to be anemia but, and this is key, it is consistently on the low side of normal. Having struggled with anemia for years...
  6. Isn't that great when something like that happens? It proves to the kids they really aren't the only ones in the world who have this issue. I hope she enjoyed the cupcakes. What am I saying?! Cupcakes! YUM!
  7. "my Ferritin levels are a bit on the low side (37, normal is 41-300)" I feel like a zombie and sleep 11 hours a day at this level. In my personal experience anything that has values spread this wide can be misleading. I start to have symptoms as I drift toward the low end. If I stay towards the middle of the level I am fine. I would question this additionally...
  8. Oh yum! I miss ravioli! I'll be trying this very soon. I wonder if you could make toasted ravioli with these?
  9. AM update-- Oh yeah, emmer has gluten! I have my classic celiac face back this morning and other things I will leave unsaid. mini pity party ahead-I've got to fly my post-op husband back across the country on Wednesday with our three kids in tow. Please pray that my digestive "issues" are settled down by then. I have real difficulty coping when...
  10. "The subject of Enterolab never came up again and I had to assume from the look on his face that he did not believe in the test. That has always seemed odd to me since this is not a conventional doctor and not a doctor who would dismiss the stool test if he felt that it were valid....or if he had faith in Dr. Fine." This a really a stretch. That is quite...
  11. I was at a fantastic farmers' market. I was weak. I should have known better when she told me it "flushes" gluten from the body. I should have known better because that cr*p looks just like WHEAT! *sigh* PS--If you eat emmer and believe it to be gluten-free and experience no difficulty, I am thrilled for you. I wish I had not and won't again...
  12. Maybe I wouldn't have died. But I think I would have wound up divorced and alienated from my kids and all the people who care about me. I think I would have wound up unable to drive, walk for any distance or control my anger. I think I would have continued to wish I were dead--every stinking day. So a baked potato and plain salad is my go to meal in...
  13. But that is what she said! She said it was being done worldwide but not in the US. And, using PubMed as you suggested, it is easily shown that is a TRUE statement. Very few articles are from the US. Do you believe that research from another country affects treatment protocols in the US? Maybe if you are being treated by Dr. Peter Green or someone...
  14. I would respectfully request that you take a closer look at the country of origin for many of the these PubMed articles. I think you will find that most of the current research is not from the US. However, one of the top articles from the US deals with the "cost-containment issue" of first degree relatives coming in for testing. To me, that is very telling...
  15. It is very good with a nice crisp crust. It is pricey at $17 for a 10 inch with one topping. My seven year old cold eat the whole thing himself. It isn't reasonable for my family of five, but maybe for a single eater who wanted to eat out?
  16. Can you get someone to do it for you? It isn't hard to learn and just takes a little bravery the first time. It needs to go into a muscle. Lots of people learn to give themselves shots. I think I pay about four bucks for the b12 and $2.50 for syringes for six months with insurance. The good effect lasts longer as I start storing b12. I'm a different...
  17. I wanted to tell everyone about a store here in Tucson. It's called New Life Health Center. There are several here but the one on Broadway carries an amazing amount of gluten-free stuff. They carry every type of flour I've ever heard of and some I haven't. There is nothing like this in Tn. They carry baked goods from a place in Phoenix that is dedicated...
  18. If you read a bit more on this board you will find that, more often than not, this is not true. Many, many people get no help at all. Some folks with first degree relatives are refused testing. It happens. Enterolab offers an alternative. I had to FIRMLY INSIST my own kids be tested after my diagnosis. When the blood work can back negative, as it often...
  19. I have a non-breakfast foods kid. She eats whatever she wants--that isn't extra work! I couldn't do it, but she's eaten spaghetti and meatballs, pot roast, pizza and lots of other things for breakfast. I had to let go of what I thought was acceptable breakfast food and it has worked well for us.
  20. Persimmons are so good! We pick the wild ones here. They are very small but sweet. I replace the pumpkin puree in any recipe. Be aware though-our persimmons are very wet so I have to adjust the liquid.
  21. Sometimes you just need a creative name. We are having body parts soup tonight. Really just meatballs(eyes), gluten-free elbow macaroni (ribs) and whatever else I can think up.
  22. Not for celiac but a chronic pain issue caused by nerve damage. I'm interested in any general opinions about the it. TIA!
  23. Are they the British imports? I've found them at World Market but they are pricey. You'll have to give us some feedback on how they taste.
  24. You have my sympathies! I had terrible ALL-DAY sickness with my third. But it did go away in the fourth month. It was tough to chase little ones and feel awful. Two things that helped-a sea band and lavender. The sea band you have to get in just the right spot. The lavender I put on my pillow at night. Congratulations and best wishes!
  25. People can carry the gene and never develop celiac. You can not have the gene and have celiac because all the genes aren't identified. The kids should all be tested because there can be intestinal damage without outward symptoms. We are in the same situation. I am blood/biopsy positive celiac. My kids all had negative blood work/positive genes. Only...
