ARCHIVED First Time Making Cake!
Karen B. replied to isiskingdom's topic in Gluten-Free Recipes & Cooking Tips
My favorite trick with chocolate cake is to split the layers and spread them with seedless raspberry preserves or orange marmelade. Ice the outside with Cool Whip and garnish with fresh berries or orange slices that you split half way through and twist. You can give Cool Whip a different taste and texture by stirirng a tbsp of sour cream into it. It... -

I had forgotten until I saw this that I had to ditch my Pyrex baking pans when I first started baking gluten-free. The folks at Namaste tipped me off that my glass baking dish was why their cake wasn't turning out right.

ARCHIVED Favorite Pasta Brands?
Karen B. replied to Tephie's topic in Gluten-Free Recipes & Cooking Tips
I actually like the Ancient Harvest Quinoa pasta but I don't use it in a dish for anyone else because it doesn't taste like regular, standard pasta. It has it's own flavor and a lot of the people I share food with are not as adventurous. The quinoa pasta is my favorite for an Italian stir-fry (cook chicken chunks, red pepper, onion and Roma tomatos in EV... -
ARCHIVED How Do You Get Your Fiber?
Karen B. replied to Joni63's topic in Gluten-Free Foods, Products, Shopping & Medications
Grits -- I have been eating grits since I was a kid and it remains one of my favorites. I usually just follow package directions but they are creamier if slightly overcooked. Don't forget to salt them because unsalted grits are like unsalted pasta -- way bland! The longer you cook them, the creamier they get and a dollop of butter or Benecol makes them... -
ARCHIVED Special Baking Pan Recommendations
Karen B. replied to nikki8's topic in Gluten-Free Recipes & Cooking Tips
doughnut pans -- amazon .com, I searched and they have several hamburger bun pan -- most people either use a muffin top pan or a 4 inch spring form pan. I use the 4 inch springform pan when I bake buns from scratch but mostly, I just use Fast and Fresh microwave buns now (make one at a time, when you need it). Again, Amazon has them and also Williams Sonoma... -
ARCHIVED What Are Your Favorite Gluten Free Products?
Karen B. replied to momandgirls's topic in Gluten-Free Foods, Products, Shopping & Medications
Exactly what I was going to list. Maybe some Amy's frozen stuff for convenience. But Tinkyada for the pasta. -
ARCHIVED Mac And Cheese
Karen B. replied to momandgirls's topic in Gluten-Free Foods, Products, Shopping & Medications
Amy's Rice Mac & Cheese -- since I tasted it, I haven't made any box mixes. And I sometimes use it as a base for a one dish meal with Hubby (add tuna, peas and carrots for a quick tuna cassarole). -

ARCHIVED How Do You Get Your Fiber?
Karen B. replied to Joni63's topic in Gluten-Free Foods, Products, Shopping & Medications
This reminded me to mention Altiplano Gold Instant Quinoa. 5 grams of fiber per serving and the flavors are very tasty. Open Original Shared Link I like it for an easy dinner and add a handful of gluten-free trailmix or walnuts to give it some crunch. But it's a great breakfast too. I haven't tasted a flavor yet that I didn't like although I tend... -
ARCHIVED How Do You Get Your Fiber?
Karen B. replied to Joni63's topic in Gluten-Free Foods, Products, Shopping & Medications
None of the Namaste products have soy. In fact, by the time I get through reading what's not in it, I feel like asking "Okay, what did you put in the bag?" :-) All of their products say "no wheat, gluten, corn, soy, potato, dairy, casein or nuts" and I haven't tried anything yet that wasn't good. It has the following ingredients: Sweet rice flour... -
ARCHIVED How Do You Get Your Fiber?
Karen B. replied to Joni63's topic in Gluten-Free Foods, Products, Shopping & Medications
One easy ways to get extra fiber, aside from the fresh fruits and veggies I eat, is 1 tbsp Ground Flax seed stirred into vanilla yogurt, add chocolate syrup if you like. Another is to sneak shredded carrots into other things like chicken salad. Also, beans are very healthy and very high in fiber. My favorite way to get fiber is breakfast muffins I make... -
ARCHIVED Whole Foods?
Karen B. replied to Joni63's topic in Gluten-Free Foods, Products, Shopping & Medications
You can go to the Whole Foods website and find out what the store you want to visit carries before you go there. Open Original Shared Link Once you find out the brands you like, check Amazon because their prices usually beat Whole Foods. Many of the items ship free if you spend over $25 and you don't pay tax which give me a 8% discount over Whole Foods... -

Karen B. replied to Yellow Rose's topic in Gluten-Free Foods, Products, Shopping & Medications
Those are my favorite saltine substitiute. I also like Nut Thins but they are made with rice. Also, tortilla chips will sub with soup but not with peanut butter. I've been told the yellow package of all purpose Chebe makes good crackers but I haven't tried it yet. -
I haven't seen it yet but they took the swamp out??? Rats! I was looking forward to that. I know they can't include everything but I figured that would be a keeper. I scheduled the 23rd off at work yesterday and told my boss I intend to sit at home, eat bon-bons and read the new Harry Potter book. :-)

ARCHIVED Gluten Free 2 Months And Burned Out
Karen B. replied to bellabrit7's topic in Coping with Celiac Disease
Why not make homemade gooey brownies for everyone that happen to be gluten-free? I just made some for my office crew for a BD party (used Pamela's mix). Some inspired person on the board suggested topping them with chopped Reese's cups when the brownies were hot and WOW was that a hit!!! I find I feel much less restricted on my gluten-free diet when... -

Actually downtown Houston can cover a lot of ground. Is he driving downtown or walking? What area of downtown? (don't need an address but cross streets would be nice i.e. Louisiana and Walker) These may help but as always, make sure they know what issues you are dealing with. If it's a "sit down" restaurant, call ahead and talk to the chef. Stephanie...

ARCHIVED Amazon- What Would You Buy?
Karen B. replied to confusedks's topic in Gluten-Free Foods, Products, Shopping & Medications
The only time I've ever had delays in shipping from Amazon is when I use the "Super Saver Free Shipping" option on orders over $25. When you do that, they combine it all into one order and if something isn't available yet, they hold the order up until it is all ready to go. Hence, one order was held up until the book I also ordered was released 3 weeks... -

ARCHIVED Home Ec/cooking In School
Karen B. replied to Juliebove's topic in Parents, Friends and Loved Ones of Celiacs
They made girls take Home Ec back when I was in school too. guys took shop and they wouldn't let me in because they said my hair might get caught in the machinery. I offered to cut it -- still no. Finally, they did let me into drafting but I still had to take Home Ec. Now I'm glad they did. I've used much of the info they taught me and now think everyone... -
ARCHIVED Home Ec/cooking In School
Karen B. replied to Juliebove's topic in Parents, Friends and Loved Ones of Celiacs
My Home Ec classes from junior high and high school have been of great help since my Celiac diagnosis, even though they were over 30 years ago. I had gotten away from preparing a lot of my own food and if not for those eary Home Ec classes, I would have had a bigger learning curve on gluten-free cooking. If the teacher works with you, think of how valuable...
