ARCHIVED No Bake Cheesecake Pumpkin Pie
celiac-mommy replied to purple's topic in Gluten-Free Recipes & Cooking Tips
I think the egg white would help hold it together without changing the flavor. I made the butter mistake the 1st time I made a cheesecake crust with the Pamela's shortbread cookies-they were so buttery already, after I added the full stick of butter, it was way overboard. But if you really love the cookie crumb crust instead of a regular pie crust for pumpkin... -

ARCHIVED Constipation Still An Issue
celiac-mommy replied to Maddie's mom's topic in Parents, Friends and Loved Ones of Celiacs
Do you have a pediatrician? They should be able to order the test. IMO, when I want a test run on myself or my child, I don't beat around the bush and just suggest it, I usually don't give them much of a choice. I know my body and my kids' bodies better than the dr.s and if I think there's something wong, I don't take no for an answer-the women's intuition... -

celiac-mommy replied to purple's topic in Gluten-Free Recipes & Cooking Tips
I love cheesecake!!! I'm going to add that one to my file! I love this time of year, I am baking constantly. I made these caramel apple bars yesterday that were soooo good-but had to get them out of my house (my co-workers appreciated that ) And I was going to try this cheesecake recipe next week-gluten-free crust of course, because I'm mildly obsessed... -

ARCHIVED Reminding Teachers
celiac-mommy replied to buffettbride's topic in Parents, Friends and Loved Ones of Celiacs
If it's the 1st offense, I wouldn't be too firm about it. I would email the teacher (or however you communicate easily with them) and tactfully explain the situation that occured and ask to please be informed a few days in advance so your dd can participate, with all the kids they have, he/she probably overlooked it. If it happened again, then I would get... -

Envirokidz Gorilla Munch is: Organic corn meal, organic evaporated cane juice, sea salt. BUT, it may contain traces of nuts-depending on how nut-free you are. It's like Kix cereal, but crunchier. -
ARCHIVED Caramel Apple Bars
celiac-mommy replied to celiac-mommy's topic in Gluten-Free Recipes & Cooking Tips
You could leave out the caramel-or use a dairy free recipe for caramel. If you left out the sauce, I think it would still be great, maybe a little more crumbly. Here's what I found: Dairy free caramel sauce (I think you'd want to cook it longer than 4 min.... Ingredients: 1 -
The most time is spent with the caramel, takes about 15-20 min. stirring constantly to bring to temp. to preface-i LOVED this crust! It made a lot, held up great, I will be using this crust for cheesecakes from now on!!! Caramel Apple Bars (Adapted to be gluten-free) For the Crust: 1 cup brown sugar 1 stick butter-melted 1 teaspoon...

ARCHIVED Calling All Candy Makers!
celiac-mommy posted a topic in Gluten-Free Recipes & Cooking Tips
So, all I have is a smallish medium size stainless steel sauce pan, otherwise, I have all cast iron, which I love, but can I use it to make candy or do I need to buy a bigger "heavy" saucepan? I made caramel today and had to do it 2 batches to prevent boil over-I didn't have the guts to bring out my big cast iron pot just in case.... I'm hoping to do a... -
ARCHIVED Need Help From The Diabetics, Low-carb, Or Grain-free Ers
celiac-mommy replied to missy'smom's topic in Related Issues & Disorders
Is there a special # of carbs for the moderate low carber? I gained a few lbs this summer, as I always do And I've found if I want to lose a few, I decrease the amount of carbs significantly for 2 weeks or so and then gradually add in the good carbs--fruits, berries whole grains etc...For those first 2 weeks, I just increase my vegetables to about 3cups... -
ARCHIVED But I Love My Recipes!
celiac-mommy replied to reichhoff9's topic in Gluten-Free Recipes & Cooking Tips
I'm known here for my obsession with Pamela's pancake and baking mix. I use it for everything other than yeast breads. You can use it in pancakes, waffles, crepes, cornbread, quickbreads, muffins, cake, cupcakes, pies, pie crust, breading.......the list goes on FOREVER. In baking, I decrease the amt of fat by 1/2 to 2/3 depending on how many cups the... -

I'm sorry she wasn't more understanding. I think you were right to just stay and stick with your own food, and not to give in. Hopefully someday she will realize that this isn't about her, it's about your health and she'll be understanding and supportive. celiac-mommy replied to Mango04's topic in Gluten-Free Foods, Products, Shopping & Medications
I had an accidental discovery from ordering a wrong shade: I wanted to try the pressed powder to keep in my purse for touch-ups, wasn't sure which shade to order so I picked an olive shade trying to compliment my medium olive foundation. Thank God I tried it in my house before trying it in public because it made me look a nasty shade of death (and I see... -

ARCHIVED First Thanksgiving Gluten-free
celiac-mommy replied to Hummingbird4's topic in Coping with Celiac Disease
We usually do Thanksgiving at my MIL's. She was interested but clueless when it came to the actual prep and cooking, so I just talk to her a few weeks before, we plan out the menu, she does most of the shopping and then I basically take over the kitchen when we arrive a few days before and get to work. She's always there helping and asking questions so... -
