I was going to suggest you make sure you are using iodized salt, but I see you are taking a supplement already. It is possible to get too much iodine so don't overdo it. The celiac testing that is available is not 100% accurate. There are false negatives possible on them. So, it is not impossible to have celiac even with a negative test. At 2.5 weeks your body has not really adjusted to the diet yet. Your diet has most likely changed significantly, and that means your gut flora are changing, your intestines are possibly healing and things are not settled down. So giving the dairy a pass for a while (3 months) is not a bad idea. If it helps, keep it out. -

Hi, When I used to get gassed up like the Goodyear blimp I would take Altoids peppermints. The peppermint helps to relax the stomach and get the gas out. Helps you burp basically. Onions are yummy! There are some people who have digestion problems with them though. If they don't agree with you then you shouldn't eat them.

well, going back on the diet sounds like a great idea. There is no gold star for passing the celiac tests. You don't get any benefit from it medically because there is no treatment except the gluten-free diet. Most doctors will just say go away and eat gluten-free. In England they have a cost reimbursement for gluten-free foods, but not in the USA....

Hi Katie, I agree you should cut out soy. Also cutting out dairy would be a good idea. Celiac damages the villi lining the small intestine. Those villi produce lactase, the enzyme our bodies use to digest lactose sugar in milk. So it is not unusual for celiacs to be lactose intolerant. You are in kind of a tough situation. I don't think you will really ever feel right while you are working around the flour in the pizza shop. The answer depends on your body. If you are having anaphylactic like reactions, swelling throat, irritated eyes, etc then it is an allergic (IgE) reaction. kind of late I guess. But one treat you can make fairly easy is microwave peanut brittle. You don't have to use peanuts in it at all. Right, that is the simple and easy thing to do to find out if it is bothering her. make sure you read labels becasue casein and lactose are added to many processed foods you wouldn't expect it to be in. Also vitamin pills and medicines need to be checked. -

Food for Life gluten-free bread. I hadn't eaten any bread in quite a while anad decioded to try a couple loaves. First one was fine, but the next time a I got one I got glutened right away.
