  1. I was going to suggest you make sure you are using iodized salt, but I see you are taking a supplement already. It is possible to get too much iodine so don't overdo it. Natural sea salt is not a good source of iodine, and neither is garlic salt. Another thing you might find helpful is to research goitrogens, Goitrogens are foods that inhibit the thyroid...
  2. The celiac testing that is available is not 100% accurate. There are false negatives possible on them. So, it is not impossible to have celiac even with a negative test. I had blood antibody testing but I had to wait 3 months for an appointment to be tested. And my blood tests were negatvie. But I had a huge reversal of my symptoms after going gluten...
  3. @Bartfull, Gee, sounds like SD is the place to be! Just wanted to suggest, if you want an alternative to rice cakes, try Corn Thins. They are much thinner and hold together better, and taste better IMHO. @Whiny-head or um, Mamabear272, I had my moments when starting the diet also. I think some of it is the learning curve to it. Suddenly...
  4. Lactose is a sugar, casein is a protein. The fun part is, you can have a problem with one or the other or both. Most hard cheese would be mainly protein, (casein) as the lactose is et up during the making of the cheese. So you can try eating hard cheeses and see if they are ok. You may end up being able to eat cheese with no problem, but not able to eat...
  5. Sweet potatoes and okra. Fennel too. I'd had all these before but find I like them a lot more now. And use them in cooking quite a bit.
  6. It is not unusual to have a period of adjustment to the gluten-free diet. It can seem like things are going backwards at times instead of getting better. Many of us stop dairy at first as it can cause symptoms to be worse. Some people can resume dairy after a while. It is good to keep your diet very simple at first also. Avoid processed foods and eat...
  7. At 2.5 weeks your body has not really adjusted to the diet yet. Your diet has most likely changed significantly, and that means your gut flora are changing, your intestines are possibly healing and things are not settled down. So giving the dairy a pass for a while (3 months) is not a bad idea. If it helps, keep it out.
  8. Hi, When I used to get gassed up like the Goodyear blimp I would take Altoids peppermints. The peppermint helps to relax the stomach and get the gas out. Helps you burp basically. I don't think it is good to take them all the time though. It is better to eliminate the foods from your diet that are causing the upset in the first place. You can check...
  9. Onions are yummy! There are some people who have digestion problems with them though. If they don't agree with you then you shouldn't eat them.
  10. well, going back on the diet sounds like a great idea. There is no gold star for passing the celiac tests. You don't get any benefit from it medically because there is no treatment except the gluten-free diet. Most doctors will just say go away and eat gluten-free. In England they have a cost reimbursement for gluten-free foods, but not in the USA....
  11. Hi Katie, I agree you should cut out soy. Also cutting out dairy would be a good idea. Celiac damages the villi lining the small intestine. Those villi produce lactase, the enzyme our bodies use to digest lactose sugar in milk. So it is not unusual for celiacs to be lactose intolerant. Until you are healed it would be better to avoid anything that...
  12. Hey Bryan, peanut butter - get a soy free version, usually organic or natural labels. (salad at work, balsamic vinaigrette, mixed greens, pine nuts, walnuts) - Check out salad dressings recipes online. There are some on this site and they aren't hard to make. I'd be leery of the balsamic vinegar best to check the brand before buying. tofu -...
  13. You are in kind of a tough situation. I don't think you will really ever feel right while you are working around the flour in the pizza shop. I know I got sick from sitting in a pizza place for an hour or so with some sketch buddies. I didn't eat any of course but just breathing it in did the trick. At home you should definitely get a separate cooking...
  14. Ball sportz! Stephunnie likes ball sportz! :D er, twitch that is!
  15. Mal-nutrition is common with celiac. The reason is that celiac disease can damage the villi lining the small intestine. Those villi absorb the nutrients needed to grow and maintain the body. There used to be a belief that people can only be skinny with celiac, but people can gain weight with celiac too. Gluten can also affect the brain, search on...
  16. The answer depends on your body. If you are having anaphylactic like reactions, swelling throat, irritated eyes, etc then it is an allergic (IgE) reaction. That can be deadly and needs to be strictly avoided 100%. A food intolerance is a differnet response, and can cause damage over a period of time with continued exposure, but is not usually an immediate...
  17. kind of late I guess. But one treat you can make fairly easy is microwave peanut brittle. You don't have to use peanuts in it at all. You can use dried fruit, sunflower seeds, coconut shreds, pumkpin seeds, toasted sesame seeds etc. Follow the recipe and experiment. There are lots of recipees on the web. Spread it on a sheet of wax paper to cool. ...
  18. Well, one thing you know for sure, gluten makes you very sick. Gluten intoelrance is not well studied, ad there is more unknown about it than known about it. Test for celaic are not 100% perfect either, and failing a test does not automatically mean you don't have celiac. It can just eman that you don't test well. Even the "gold standard" endoscpy can...
  19. You might want to try eliminating dairy also. I am pretty sure I have read psots about people getting migraines after eating dairy.
  20. Hi Eric, I can't say I reember chills on my scalp. But I did have muscle twitches aand spasms for no appreant reason. Celiac can cause daamge to the villi of your small intestine, and that can lead to mal-absorption of nutrients, including vitamins. That can lead to nerve damage and other non-fun stuff. Some of us take extra B-vitamins to make up for...
  21. Right, that is the simple and easy thing to do to find out if it is bothering her. make sure you read labels becasue casein and lactose are added to many processed foods you wouldn't expect it to be in. Also vitamin pills and medicines need to be checked.
  22. I got glutened not long aog and my vision got worse. It is getting back to normal now but it has been 6 weeks since the glutening. I was having a hard time focusing and reading the computer screen. I noticed that in the past also, that gluten affected my vision. I got tri-focals a couple years ago and the doc told me I would need new ones in 6 months...
  23. Food for Life gluten-free bread. I hadn't eaten any bread in quite a while anad decioded to try a couple loaves. First one was fine, but the next time a I got one I got glutened right away. So, I guess that wasn't hard to find really, just the variability of it being ok and then not ok bugs me. I'll never buy their products again.
  24. Hi Korwyn, I have wondered about stickies for the forum also. Seems like a good thing to do. I think I read once that the thinking was it would discorage new people from asking questions and getting involved. I don't know if that is true or not. I have a couple ideas though. We could edit our profiles signatures and add thread links to them...
