The advice to eat simply at first and cut out processed foods is good. When you are first starting out on the diet you want to give your body every chance to heal you can. Totally agree here. I was very surprised to find my sensitivity to gluten got extreme after going gluten-free for a few weeks. I think of it as my body's immune system actually got a chance to rest and go back to a somewhat normal state for a while, as compared to pre-gluten-free when it was constantly fighting off the gluten invaders every day. I take DPP-IV for gluten cc incidents. I read somewhere that it might help break down casein. But, having tried it, I think it is minimally helpful for casein. I think hard cheese also. You can also take come lactaid rand pills with the cheese and see if you still have a reaction. The Lactaid digests the lactose sugar, so it you take 3 or so Lactaid pills and eat a small amount of cheese that should be a good test. Around DC they have Lactaid milk in stores also but I don't know how much lactose is left in them... -

I agree you really should stick with the diet another month or so before doing a challenge. Are you eating whole foods or processed foods?You can lower your potential for cross contamination to gluten by using whole foods and cooking them yourself at home. You might also try going dairy free for a while, and see if that helps. And another thing is to avoid most sugar. Poorly digested foods can cause the bacteria in the gut to get kind of extra happy, and reproduce quickly. So, cutting back most sugar may reduce the amount of bacteria growth.
