Hi, It's fine to go gluten-free without positive test results. There are no tests for non-celiac gluten intolerance (NCGI) yet, so the only way to know is to trial the gluten-free diet. Since you are in a shared kitchen, you have to have separate butter, mayo, peanut butter etc from the other people. Also a separate toaster. You could start your elimination diet with beef (or chicken), peas, mushrooms (wash them), sweet potatoes, and parsley. Hi SuperS, Yes, your symptoms could be celiac disease related. You should not stop eating gluten yet though. Your doctor didn't tell you to do that did they? The usual test process is the blood antibodies first, and then an endoscopy to get biopsy samples. Hi Amber, It makes sense to look back at your test results from the original celiac disease diagnosis. But any tests you are doing now for celiac disease will automatically be negative since you have been gluten-free for a while. @HavaneseMom You are very welcome HM. There are several other threads on meal ideas, some very long and full of things to cook. Yep, gluten might be all there is too it if you were diagnosed right away and went gluten-free right then. But over time our irritated guts tend to start reacting to other foods too. It's not for sure those other food reactions...

Hmm, well, it's hard to be sick too! Yeah, the list format makes it easy to check and verify. That's why I like it. Some people have reported problems when eating Amy's meals. I gave them up years ago after I had reactions to them and haven't tried them since. Maybe they are ok now, maybe they aren't, I am not sure. But I get along just fine...

You could also try taking some Betaine HCL when you eat greasy foods. It turns into hydrocloric acid in the stomach. The digestive enzymes are a good idea too. Welcome to the forum Amanda! That sequence of tests is pretty much standard in celiac disease testing. First they test the blood for anti-bodies to gliaden, and if those are positive they do an endoscopy to look for villi blunting. Some pro-biotics have dairy in them. As you can see, there are a lot of suggestions for what could be the problem, because the reality is any food can be a problem. Some people have problems with coconut. Actually, you can become sensitized to any food. There are a few tests for intolerances, but not many. It is better to do an elimination diet, since you can't get a test for all those foods anyway. You didn't mention any tea or coffee or soda, so if you aren't drinking those it is not a problem. I think these are the corn-free vitamins Barty found. They do have 100% of the RDA for iodine, so that's good. They are very short on selenium though. But I guess you can't have everything, and trade-offs are necessary. You could always eat a Brazil nut once a week to get your selenium. They are, thankfully, corn-free. So you could get your basic iodine...

Have you checked your vitamins and meds for gluten? Also, gluten-free beers that remove the gluten (but still might have some) may be a problem. I suppose you have checked your teas and coffee or other drinks as well? If not that is possible problem area. -

Hi SK, Welcome to the forum! If you call your doctor and ask for a blood test right away, you may get an answer without having to go back on eating gluten.
