  1. Thanks! Asheville is a little past Charlotte, which is 3 hours from me. The doc Carla sent me is currently on (or just been released from) a 1 yr suspension to practice in NC, so his new office is just over the line in SC. There was quite an interesting article on him last year... very controversial. But yes, I would appreciate any info you have. Thanks...
  2. I went through the same thing with mine. (she was the PA actually) She looked at me like I was crazy when I said Shouldn't I be eating gluten? She said no, we just look for antibodies... I realized then that she didn't know much about celiac disease at all, and that I was pretty much on my own at that point. Sometimes it's best not to argue until you actually...
  3. I am almost certain your blood tests will come back negative. You have to be currently eating gluten to hope for an accurate result. And it would take 3-6 months at that before they may show up in a blood test. I don't have a website specifically, but there are articles on this website, or you can google celiac disease and check those websites. They all...
  4. now you're just talking crazy!!! LOL
  5. Thanks Carla for your help and for even directing me here in the first place! Especially for the doctor. I was trying to find one near here... that's ones a little far, but I would drive it if necessary. It's not the end of the world. I'll definitely keep you guys updated. There has to be an answer somewhere...
  6. Hello all Never thought I would be posting in this thread, but after a few chats with people and feeling as though I too, am at the end of my rope, I thought this might be a good place to come. I am going to the doctor next Monday, and I of course, want to be prepared. I originally thought fibormyalgia was a possibility, but my pain eases up after I...
  7. I"m a quinoa fan. Two things, and both have already been said, but just for emphasis. You MUST MUST MUST wash the quinoa before you use it. Otherwise you do get a really bitter taste. The second is to put it with something. Quinoa is high in protein, too (BTW). My favorite way to eat it is with black beans(rinsed), and chopped tomatoes. You put about a...
  8. I'm sure its something that you would have to check with each brand. I buy the Harris Teeter brand and they are safe. The ingredients are few and clearly marked. Do you have a list of things to look for in processed foods? It really helped me get through the first few months when I was unsure about a lot of things. There is one on this site, but I don't...
  9. I have only tried one brand, Namaste. The dough is a little runny, which I hear is normal for gluten-free mixes. You bake it for 10 minutes first, then take it out and add your toppings. Then bake it again to melt everything. We had it today. Now, it's no gourmet pizza, but I find it to be very enjoyable, especially since my alternatives are pretty limited...
  10. Thanks for the suggestion. I have to admit, I am borderline skeptical about it too, but something has to explain what's going on, and at this point, I am not willing to discount anything. There are many things beyond the realm of comprehension that work/don't work, happen or not. I've concluded that just because something can't be medically explained does...
  11. Well, I think I am finally getting to the bottom of why I feel like garbage most of the time. I almost always wake up with a headache because of pain in my neck, which usually goes away after I have stretched my neck out and cracked it a few times. I also wake up with back pain, all over, not just concentrated in my lower back; which when I try to lean...
  12. I have sooo been there. I have been gluten-free since Nov 07, and I am still celebrating the days I don't take an afternoon nap. It really took me until the end of January to start feeling like I had more energy, although I still get hit sometimes in the afternoon. I am 25... I thought how in the WORLD am I going to live the rest of my life this way. But...
  13. As far as dairy goes, you should probably cut it out for a while. If it's gives you D, then something's not right. Doesn't mean you can never have it again... just probably not a good idea for now. Try it again in a few months and see what happens. And for what foods are good to eat, you have to find things that don't bother you. That's kind of an individual...
  14. Sounds like you have yourself a pretty good doctor there. Hang on to him, they are hard to come by!! It's a harsh reality when it sinks in that this is for the rest of your life. But I find that, if you tell yourself you CAN'T have it, you begin to feel deprived. What has really worked for me is making a conscious decision to eliminate gluten from my...
  15. That is possible. Remember that your small intestine is something like 22 ft long, and celiac is a patchy disease. So, it is possible that the area that they biopsy is not yet affected by the disease. Most doctors will take a few biopsies from different locations, but that is something you need to discuss with him. You blood result is positive. The blood...
  16. I am so sorry to hear things aren't going well. My first suggestion is going on an elimination diet- eating only fruits, veggies and meats. No dairy or soy, especially. Those seem to be as common a culprit as gluten. The second is- if that seems too overwhelming, keep a food journal. Be totally specific about what you ate, even if it was one...
  17. Hello and welcome!! Your doctor will probably want to do a biopsy, as the combination of positive bloods and biopsy is the current diagnostic "gold standard". You should talk to him/her further at your appt about whether or not you want to have it done. As I understand, the biopsy is a painless procedure. I wish you the best at your appt.
  18. I drink aloe with lemon or lime. The taste is not so bad. I took it before I went to bed and was ready to go in the morning. I've also had success with Kombucha. It's a fermented tea that's loaded with probiotics. You can't overdo that though. A few ounces at a time throughout the day is ok, but not a whole bottle at once. I also find that I overall feel...
  19. that's about the only way I like absinthe...
  20. LOL
  21. No prob... hope it helps some folks. BTW... I LOVE your new avatar.
  22. I was a beer lover... and I have had many a skunky beer. RedBridge is not one of them. Whiskey is not a replacement for beer.
  23. yeah... most of them do. It was a sad day at my house when I found that out too... But the good news is: There are a few gluten-free beers that are pretty easily accessible. I've only had 2, so I can only give my opinion on those. Redbridge is my fav... tastes a little like Sam Adams. So, I like it. The other one was New Grist Beer, which is made from...
  24. A few weeks back there was a thread about cholesterol, and I promised I would share the results of my husbands trial of lowering his cholesterol without the use of RX drugs. 6 Weeks ago, his total cholesterol was 261 LDL 174 Triglycerides were 210 They were checked yesterday and his total is down to 228 his LDL is 161, but his triglycerides...
  25. All of those things in their natural state are gluten free. As far as the apples, I ate one a few weeks ago for breakfast and had horrible stomach pain for the morning. I thought it was the apple on an empty stomach, but after another posters suggestion and some experimenting, I realized it was because the apple was non-organic. So it wasn't gluten, but the...
