  1. Ali, I understand your predicament. I'm not sure if my bloodwork would ever show Celiac, and I'm waiting to find out what genes I carry. There's quite a few of us on here who thankfully didn't rely on negative bloodwork. My advice is to wait it out. You are gluten-free now (I assume) and unless you want to make yourself sick again, eating gluten is really...
  2. It definitely is possible to become hyper sensitive to gluten after removing it from your diet. The longer I go without it, the worse it is when I come in contact with it. Just throwing ideas out, that also sounds like it could be food poisoning??? Either way, I hope you are feeling better!!
  3. I noticed that when I get glutened, I too, have a hard time with coffee. I think the reason for me is that the gluten makes my head throb and I stay naseaous for about a day or so. Whether it's the caffeine, the acid, or the combination of both, I don't know, but when the inflammatory effects of gluten are raging in my body, those things only seem to aggravate...
  4. On the outer package, just the directions for cooking it. On the inside is a small leaflet with recipes. Most of them are for the flour though, like for cookies, brownies, etc. But, I figured I would just make it according to the directions and go from there. I was more interested in it as an actual dish, not to bake with. So, I made it, let it cool, and...
  5. I've got nothing to add to the explanation. But I will say that you've helped me out a lot, especially in the beginning, so you better not go!! I'm sure if this wasn't Scott's intent, he'll take care of it. But as a PP said, your 0% warn should be reassuring.
  6. Would he settle for running a genetic test on you? Thankfully this was the option my GI came up with and my bloodwork was negative. He just really wants to know if I have Celiac or not to monitor me down the road. I told him I really didn't need a diagnosis, and I wasn't going to eat gluten to have it. So, he suggested the DNA test and that was good enough...
  7. It's the ivory grain.
  8. But what do you do with it? Other than the directions on the box. I searched the food network website and found nothing. Do any of you have suggestions with what to do with it??
  9. LOL!!! That is hilarious!! I'm glad I wasn't the only who had to figure that out.
  10. I COMPLETELY agree with you. I think that food should be your next highest bill to housing. It can single handedly control how much you go to the doctor, how you sleep, how productive you are, the list goes on. I don't buy much processed food either, but I didn't before I went gluten-free. I shop the perimeter and buy very little down the aisles. My grocery...
  11. The last time I bought puffins, they said wheat free. I got sick. If it's processed and doesn't say gluten free, definitely check the label. Even if it says gluten free, but ESPECIALLY if it doesn't. Personally, I swore off Puffins. The ones I ate had oats/oat flour in them. I'm sure they were contaminated. Sorry to rain on your day...
  12. The only brand that I have actually seen is Bob's Red Mill. There's probably others, but I am not sure. As the previous poster mentioned, the issue with oats is the contamination. However, some people with Celiac simply cannot tolerate oats; gluten-free or not.
  13. Greetings from Raleighwood!!
  14. There are some breakfast cereals that are high in fiber, but you have to read every label. I have found one made of flax that's pretty high in fiber. I've also had some made of amaranth, buckwheat and/or quinoa. I find the rice cereals do the same thing with me. The flax cereal I eat is Perky's Nutty Flax, it's kind of like a smaller version of grape nuts...
  15. I DEFINITELY have the Mittelschmerz thing. EVER since I can remember, but now that I'm more regular I started noticing it more. Yeah, there's a definite link between undiagnosed Celiac and infertility. When I told my Gi about the regulation of my cycle, he wasn't surprised at all. In fact, he said that is another reason he is suspect of Celiac in my...
  16. I'm pretty sure it was my trigger, too. I could pretty much eat whatever garbage I wanted to and be fine. After my son was born, slowly my body turned on me. He was 2 1/2 by the time I discovered what was going on. I did get a lot of, "well, you are the mother of a toddler, you're supposed to be tired... " So double that from the PP... don't accept that...

    ARCHIVED Second Gi Appt

I can see your dilemma. I went gluten-free before I even realized that I had screwed up my chances at having a positive blood test, although with my IgA, it wouldn't have mattered. They didn't run an EMA on me either, apparently it costs more and so the doc has to specify that they want it. Six months ago, I was convinced that I couldn't have Celiac, it was...
  18. Welcome to the gluten-free life!!! It's really not so bad! In fact, if you feel better, it's GREAT! Having a supportive spouse (or other family members) is really essential, I think, to being successful with adapting to your new lifestyle. My husband has been great since the beginning, and I don't have an official diagnosis. I hear other people who's families...
  19. Yeah, I think it's definitely a rebalancing. Mine was always irregular, like maybe 4 or 5 a year. They're still not totally predictable, but I have definitely noticed that things are becoming more regular. My period regulating was not something I would have ever thought would regulate, but since it has,I'm more convinced it's Celiac. In fact, it regulated...
  20. I never had any gluten free specialty foods until I figure out my problem with it. But, as a child and until now, I have never been much of a pasta person, never liked fried chicken or things that were breaded, most cakes and cookies I could eat very little of because they hurt my stomach. I never thought about it, because most of those things I was better...
  21. I am a little teary eyed! I have a 3 yr old boy and there is nothing better than the snuggles and having him trail me around the house "helping". I am so happy for you and as another poster said, you have truly changed the course of his life for the better. All by changing his diet.
  22. I find with most people it's like answering a child's question, make it as simple as possible. Because most people REALLY don't want a lengthy explanation or else they just get overwhelmed with something that they've never heard of. This weekend I was trying to explain Celiac to my MIL. She had heard of Gluten Intolerance, but didn't really have a grasp of...
  23. So I think I understand your question. Because it was how I felt. If you don't have Celiac, then you don't have to worry so much about CC and the occasional indulgence. Am I right? It's ok. I was there too. Keep in mind that there is a school of thought that gluten sensitivity or intolerance is the beginning of Celiac, which means, left unchecked, could...
  24. Then find yourself some Tinkyada rice pasta. It's delicious!

I was really happy to have found him, too. We've been pretty fortunate here, I've come across two doctors that I didn't like, but I am really happy with my GP and my new GI. I was torn too, but my GP wanted me to go and I really like her, so I went. It turned out to be a good thing. Are you gluten-free too, or just your son? Do have Celiac or think you do...
