I went to see Dr Stephen Furs in Cary. I saw one in Raleigh and I wasn't impressed with him at all. Do you eat meat or fish? A piece of chicken or some shrimp on top of the stir fry keeps it healthy and does a better job at filling you up. There are also a bunch of different grains, if you can tolerate them, that will help keep you satisfied and are high in protein, like quinoa, teff or buckwheat to name a few.

I believe you misunderstood Eric_C's posts. There are many of us here who preemptively went gluten-free, only to realize that in cutting out gluten, we diminished our chances of getting a proper diagnosis. And because of the dietary results, we found it to be unnecessary to go back to eating gluten for the purpose of a test that may or may not even be accurate... -

From what I understand, there is an antibody test. Your doc should know about it, and if your docs a homeopath, he/she would probably be agreeable to doing it for you. That would be your best bet of getting insurance to pay for it. My GI sent me for the genetic test so I didn't have to go back to eating gluten again. My GP told me that insurance won't cover it unless a GI orders it, since it's a Gi disease; so she recommended a good one for me to go to. Hopefully your GI will be agreeable to it. -

Yeah, if ONE more person told me I was just stressed...Maybe people just don't want you to have something wrong. That's the only explanation I can come up with so I'm sticking to it. -
Having been burned by a wheat free cereal and a digestive enzyme containing wheat, just look for the stuff that is clearly labeled gluten-free. And if you don't see it (especially on processed anything) just DON'T chance it. Supplements can be especially tricky.

I just posted about my doctor's visit today. The doc told me that they do believe Celiac to be hugely underdiagnosed, simply because it DOES manifest itslef in so many ways.
