  1. _____________________ That recipe is not detailed enough for gluten free baking. She has "gluten free flour mix" but does not specify it should contain a proportional amount of xanthan or guar gum unless certain stickier type gluten free flours are used. Also, different gluten free flour mixes bake at different times, so the cupcakes should be...
  2. _______________________ Lower back pain/ache is a symptom of Ankylosing Spondylitis. It is also called spondylopathy. Or spondylo arthritis. It is called a sero negative arthritis because typically the blood inflammation markers are different than for rheumatoid. The symptoms can be confusing, but it is typlified by lower back pain, hip pain, neck...
  3. Mariposa's on Telegraph in Oakland. Lemon bars to die for. Bagels. good thing it's a bit of a drive.....
  4. Very flippant tone to that, very snotty remark about celiac disease by the writer. Immune system disease, woefully undiagnosed, effecting 1 in 100- that is a very significant part of the population that has problems with our commercial food labeling laws and commercial food handling/preparation, not to mention the hidden medical costs of not being diagnosed...
  5. Well, that would explain her porcelain complexion. I doubt it would be the best gluten free cake in history, but it may be the most expensive gluten free cake in history. In fact, unless it was baked by a gluten free experienced baker, it could be sort of a not so great tasting cake- this is not something I would want to leave to a regular baker unless...
  6. If something is baking up "dry," add some more fat or oil to it. With this 2 loaf recipe maybe go for 2 eggs instead of the 1 and a 1/2, and a little more oil. Could also add a bit of vegetable or fruit fiber such as mashed pumpkin, yam, bean, sweet potato, banana. Or substitute part of another gluten free flour/meal/seed for the rice flour, I think...
  7. I don't "officially" have it either. I had a neurologist's office tell me over the phone that I had brain lesions, had to raise a stink to get an appointment to explain such, and then had Ms. Expert Dr tell me that had nothing to do with it, even when I told her that my own strict grain free diet (at that time) was slowly eliminating many of the neurological...
  8. Hang in there. Before I went grain free, then refined it to just gluten free, I used to blotch up all the time. Two things to check- for Lyme disease, which can trigger celiac. Other allergies. I am allergic to certain grasses and hays, and if the dog rolls in the stuff and then I pet the dog, I blotch up, which I can get rid of pretty fast...
  9. Ecco Bella mascara is supposed to be gluten free. I haven't used it yet but I can vouch for the tube of ecco bella lipstick I have, that has lasted quite a while. Open Original Shared Link They also have gluten free shampoo. But I use this cheap cucumber body wash I found, that I don't react to at all, or just use bar soap or castile soap. I rinse...
  10. It could be anything in that list. You didn't list brands or ingredients. The fastest way to check is to google the words "gluten free name of the product" such as gluten free Holy Mole enchilada sauce and see what listings come up. I haven't seen many safe enchilada sauces. Was it labeled "gluten free ?" Sauces are very easy to make out...
  11. I've noticed that I absolutely cannot tolerate the cashews they put into a lot of the flavors now, so I have to really read the labels. Try going off of them and see what happens. Also, stick to one flavor until you get it figured out. Process of eliminating one ingredient, I bet.
  12. Oh, dear. Green tea, water, apples. When it's over, I just wanted to tell you that you can make something very donut like in taste, by using a small, dedicated cast iron pan, some oil, and a small gluten free quickbread recipe to which you add extra honey or sweetener. Heat oil, mix batter, pour in, cook for a bit, finish under broiler in oven...
  13. Ethnic foods are the way to go. Also, besides here, try Recipezar for gluten free recipes. Rice noodles and sauce, Rice and beans, rice and lentils, rice and curry.... lentil warning. pick over lentils carefully for stray other grains if using dry, even the supposedly gluten-free ones. All the foods that originate in the New World, such...
  14. Count your blessings and decontaminate your household. My husband voluntarily went gluten free in the house on his own after getting me several times accidentally. Only takes on kiss..... We pack a cooler or bag when we go anywhere and he was always ending up eating my stuff until I mentally reconfigured and it became "our stuff." We save enough...
  15. Was the corn product specifically marked "gluten free ?" Oh, and how do we do it ? Trial and error, and a lot of research/experimentation, but it gets easier. I find a lot of processed things marked "organic" but not "gluten free" can be problematic. Normal vegetarians eat a lot of bread and the "healthier" labeling is often designed to appeal...
  16. _________________________ Baking's easy. It's the eating that can be challenging. I keep thinking of the immortal Peg Bracken, who wrote the old, classic "I Hate to Cook Book." The chapter on leftovers says "every family needs a dog." The thing with gluten free baking, is that sometimes there will be results that are somewhat sub prime....
  17. Ditch her, you don't need "friends" like this. It would be one thing if she had agreed to, and then stuck with, the menu. But she has "control" issues. When she said "no," to the mutual shopping trip to check for ingredients, I would have cancelled at that point. And furthermore, I would have politely, but pointedly told her why. Notice that she...
  18. Bummer. I think there is a bit of a higher probability of screw up in places that normally have a menu that specializes in cooked wheat, as opposed to ethnic cuisines that are more rice oriented, like Thai, so I tend to avoid them. One of my most spectacular glutenings was at an Italian restaurant, where I did not get pasta. Aie yee yee. On the...
  19. I did my version of the SCD when I started gluten free. As long as you are flexible (in that if there is something in the SCD that bothers you, don't eat it. If there is something that is not strictly on the list, but you know you're okay with it.... go ahead) then you should do fine. I think their "illegal" list is way too restrictive and does not...
  20. ____________________________ I'm not sure, but if you gave it to Rice Guy, the way he is always experimenting, I bet he could have it figured out by tomorrow morning If you have any of the above already labeled, you could try comparing them side by side or tasting them to see what matched.
  21. Unless you were Catholic, you could offer to bring or bake the gluten free loaf next time. I've taken freshly baked other things to potlucks. They eat it anyway, and they eat it without hesitation, and I put a label on it anyway. It sort of surprised me, but when presented with the option of homemade vs. store bought people will try the homemade.
  22. Only "psychosomatic" to the pharmaceutical companies and certain pesky relatives. Yes, you can react to something in very small quantities, after being off of it for a long enough period of time that your immune system isn't constantly reacting and you haven't gotten used to that constant state of hyperreactiveness. No, it's not in your head...
  23. The easiest bread recipes are the quick breads that are leavened (risen) with baking powder or baking soda and an acidic thing such as pure apple cider vinegar, or lemon juice, which also acts as a "dough conditioner," or a substance which seems to improve the texture of the final gluten free baked good. Egg also adds some rising power to the dough. ...
  24. There is a gluten free menu for Olive Garden Open Original Shared Link while it does not have gluten-free pizza, it has pizza for the glutoneers and it has other gluten-free items and there is one located at 6367 E State St in Rockford, IL Open Original Shared Link
  25. _________________ Seems like most of us have at least one if not multiple reactions to the gluten free substitutes. I don't do well with flax- I can eat it in very small quantities but it goes thru too fast- and that sawdust like substance is in everything that is touted to be "whole grain like." Bleah. I figured this out by doing those microwave...
